Have you ever tasted fried chickpeas?! Crispy, crunchy, salty and spicy…all of my favorites together in an irresistible homemade snack. They’re beyond simple to make, and thanks to my new favorite kitchen gadget, they’re also not bad for you. Which may be a dangerous fact to share because if you’re like me, you won’t be able to stop eating them!
You probably remember me raving about my new air fryer on snapchat (username WaitingonMartha) and when I recently set out to make classic chicken wings for Super Bowl Sunday. The wings were such a hit, with none of that added guilt since the air fryer works with no oil (I know, I couldn’t believe it either).
With a focus on healthier eating at our house, I still find myself wanting that good salty crunch to snack on, and having an easy homemade snack like these spicy fried chickpeas (read: no preservatives!) is exactly what I need to satisfy the snack craving whenver it hits. That being said, I’d say making these homemade fried chickpeas was another successful run with the air fryer, though I’m still itching to delve deeper into my Air Fryer Cookbook to try more recipes soon, too. Nothing beats a cozy, hearty stew or soup once the cold sets in. After all, our Homemade Smoked Onion Soup is one of our most popular recipes of all time. But usually when people think of soup and stew, heavy (and meaty) thoughts come to mind. Not the case with this one today, friends. Alas, thanks to a little inspiration from the always dependable All Recipes, I decided to take a stab at recreating a satisfying sausage bean stew that was in fact, vegetarian.
As you know, I’m a big fan of using vegan and vegetarian alternatives when I can. And today’s recipe is a great one for my favorite vegetarian sausage (I still eat it even after recently returning to an omnivore diet). I always pick up Fieldroast’s apple sage vegan sausage because it tastes as good (if not better) than the real thing. I’ve learned that even your biggest meat eaters won’t be able to tell the difference when you sub in this great vegetarian option.
As you’ll see below, the recipe is INCREDIBLY easy. The key is simply to build the layers of flavors in this hearty stew. First, I cook the vegetarian sausage in the dutch oven (you could use a slow-cooker, but I am partial to my dutch oven) and set it aside. Next, I add olive oil to the dutch oven, sautéing the garlic and onions until golden brown. I then mix in the rest of the ingredients (Great Northern white beans, the cooked vegetarian sausage, diced carrots, jalapenos and garlic, and vegetable broth) and a hint of rosemary, and bring it all to a broil.
Like any stew or soup, my favorite part is always the garnishes. I top my sausage bean stew with green onions, cilantro and vegan sour cream…it gives it a more Mexican flair. There’s nothing I enjoy more than summer nights dining al fresco with my nearest and dearest. So when Pacific Foods asked if I’d like to team up for a little easy entertaining I gathered friends and set the table with a Mexican inspired meal.
Homemade chips, queso, spicy watermelon salad and a trio of salsas highlighting summer’s freshest flavors (peach, mango, heirloom tomato) set the stage for a build your own taco bar. A build your own taco and/or nacho bar is not only the definition of easy entertaining, but it’s always a crowd pleaser. Simply grill a protein or two, set out all of your fresh favorites (tortillas, beans, cheese, guacamole, salasa, queso, tomatoes, onions, jalepenos, etc.), and let your guests create their favorite combinations. And because Pacific Foods has great organic options such as refried black beans and queso all I needed to do was add a few extra flavors before serving.
I’m sharing my salsa con queso and homemade tortilla chips recipe below, (trust me take the time and make your own homemade tortilla chips I promise it will be worth it), and later this week I’ll show you how to create the perfect red sangria and spicy watermelon salad.
