TGI-Almost Friday!  I’m toasting the upcoming weekend with this chest-warming cocktail we lovingly refer to as our “Hotty Toddy.” A classic Hot Toddy drink can be made with bourbon, whiskey or rum.  But I’ll be honest with you; I simply cannot do bourbon with a Hot Toddy the way I can do it with my Spiced Orange & Rosemary Bourbon.  It’s just so MUCH in each gulp that I gladly trade it for spiced rum here.  And fresh lemon juice, a drizzle of honey and hot water come together with the rum to give your tastebuds a little embrace with each and every sip. 

My spin on the Hot Toddy is just as tasty as it is gorgeous.  Simply garnish with thinly sliced lemon, cinnamon sticks and star anise.  The result is a wonderfully vibrant, warm cocktail that is sure to impress your guests.  And if you’re not up for entertaining, rumor has it that a Hot Toddy can even cure a cold…just sayin’.  Cheers!  Truly, MKR

Today’s recipe is one of my favorite savory dishes to serve at brunch as it packs quite the flavorful punch, and well, heat like this is sure to wake anyone up!  Its name is fitting; Spicy Eggs in Hell includes poached eggs in a fiery tomato sauce with serrano peppers, onion, garlic and mozzarella cheese.  As a vegetarian, I don’t plan on sacrificing flavor in a dish like this, so I add vegetarian “sausage,” and the result is magnificent (and nobody is ever the wiser).  Lastly, I garnish with fresh basil from the herb garden, and toast french bread…because toast is ALWAYS a good idea. 

This savory skillet masterpiece is not only super simple to make, it’s even easier to serve.  While so many brunch dishes require a bit of time planning, you don’t need to worry about this one getting cold as every gathers around the table.  Just keep your Spicy Eggs in Hell simmering in the cast-iron skillet, and enjoy! Truly, MKR

Have you ever tasted fried chickpeas?! Crispy, crunchy, salty and spicy…all of my favorites together in an irresistible homemade snack. They’re beyond simple to make, and thanks to my new favorite kitchen gadget, they’re also not bad for you. Which may be a dangerous fact to share because if you’re like me, you won’t be able to stop eating them! 

You probably remember me raving about my new air fryer on snapchat (username WaitingonMartha) and when I recently set out to make classic chicken wings for Super Bowl Sunday.  The wings were such a hit, with none of that added guilt since the air fryer works with no oil (I know, I couldn’t believe it either). 

With a focus on healthier eating at our house, I still find myself wanting that good salty crunch to snack on, and having an easy homemade snack like these spicy fried chickpeas (read: no preservatives!) is exactly what I need to satisfy the snack craving whenver it hits.  That being said, I’d say making these homemade fried chickpeas was another successful run with the air fryer, though I’m still itching to delve deeper into my Air Fryer Cookbook to try more recipes soon, too.  Tell me friends, are any of you as hooked on this magical kitchen gadget as I am??  Truly, MKR
