Classic Chicken Wings

What will I be making to watch the big game today?  Well that’s a no-brainer: classic chicken wings. And this was what got me to finally got me to pull out and use my air fryer. And Loves, I. Am. OBSESSED.

To get all sciencey on you, the air fryer “uses patented heat circulation technology to fry your favorite foods to crispy, golden brown perfection – using little or no oil.”  Can you believe it?  Because I almost couldn’t either…I mean no oil!  Since our household is committed to watching our daily calorie intake with hopes of not giving up the food we really love, it was a serious “ahhhh!” moment when we discovered the power of the air fryer.  

Whenever I’m making classic chicken wings, I simply season them with my favorite mixed bag of algean sea salt spices and pepper.  Because everyone has a personal preference on how they like their wings (hot, sweet, sweet and spicy, plain, etc.), I like to serve the seasoned wings along with various dipping sauces.  This way everyone can enjoy wings their way! 

I definitely won’t be stopping with just wings, either.  I’m thinking onion rings, potato chips, tortilla chips, fish, chicken…and doughnuts!!!  I’ve gone ahead and ordered The Air Fryer cookbook to help me with a few more ideas, which I’ll hopefully be sharing with you all once they’re taste tested and approved.  Has anyone else gone crazy over their air fryer at home? Truly, MKR

If you had pangs of wanderlust and beach-vacay-or-bust thoughts after reading about our magical trip to Caneel Bay Resort on St. John, you’re not alone. While we can’t pack our bags to go back right this minute, we decided the next best thing was to toast to plans for the next girls’ trip on the beautiful beaches on St. John with a few BBC cocktails.

While paying homage to the original with just a few WOM twists, our BBC cocktail recipe will no doubt become your new go-to tropical sip. And if you’re still wondering just what is a BBC cocktail, it stands for “Bailey’s Banana Colada” and it’d be hard to find a more perfect frozen drink when you’re beachside or poolside.  Since we can’t be either today, we’re whipping up this sweet island concoction with a little Bailey’s Irish Cream, pina colada and rum, kicking back and closing our eyes to pretend we’re still in the Caribbean. Extra sunshine points for serving them in our Shop’s pineapple tumblers! Cheers!  Truly, MKR

Today we’re celebrating Hump Day with an easy, healthy, no-guilt treat: homemade strawberry almond milk with toasted coconut.  It’s a drink/dessert/whatever you want to call it that tastes great in the mornings, though as a midday snack I think it REALLY hits the spot especially if you’re craving sweets.

If you follow on Snapchat, you’ll know that I recently grew leery of big brand almond milk after reading how there’s very little regulation to what actually goes into almond milk with most consisting of only 2% actual almonds, chemicals and even dairy (?!). So in looking for alternative routes I was happy to turn to local small-batch company Treehouse Milk for my almond milk needs; ordering (and loving) their Almond Oat and Regular.  And I even took a stab at making almond milk myself, which as it turns out, is pretty easy to make at home, plus I love feeling 100% confident in the quality of its ingredients, (The Kitchn shares a great step-by-step recipe if you’re going this route.)

To take your almond milk to the next level, I’m telling you that you need to try it with fresh strawberries and toasted coconut!  While you could really add any fruit, I just love this specific flavor combination. And because I prefer my coconut toasted for that extra crunch I simply pop the coconut into a toaster oven for literally two minutes before adding it into the smoothie. 

Depending on what time of year it is, the fresh strawberries will differ in sweetness, so after blending, try a taste and then add a little agave if it needs more sweetness. You can also added cinnamon and nutmeg for warmth, and fresh vanilla bean would create a wonderful vanilla flavor too. 

And a little tip: if you’d prefer a more strawberry milk-like texture rather skip the ice.  Truly, MKR
