Ramen was always an easy, go-to dish of mine.  Yes, I’m talking about the instant, college dorm room kind.  But recently as I set out to cook an at home Asian dinner, homemade Spicy Vegetarian Ramen happened.  And friends, it is sooo good. 

Now let me stop you before you panic about how complicated it must be to make your own Spicy Vegetarian Ramen at home.  This is simply a recipe to elevate a tried-and-true favorite, and it takes maybe five minutes to make.  You can, of course, find fresh ramen noodles at a local Asian market, but you can just as easily use the dried ramen noodles (they still work great!).  Here, I’ve used the dried noodles simply for convenience and you would never be able to tell the difference.

Since these ramen noodles are flavorless, you can mix literally anything you want into the base of the dish, which for me consists of garlic, organic vegetable broth and toasted sesame oil. (Note: Sesame oil is one of the quickest ways to infuse an Asian flavor that we all know and love into a dish, and I’ve found that the Toasted version is my favorite).  For the accompaniments of my ramen, I included grilled bok choy (made so easy on one of these guys) and fresh cilantro, and since you know I love to pack a punch with extra heat whenever I can, I added Sriracha and tons of fresh peppers…jalapeños, serranos and Thai chili peppers. And you can never forget about the garnish!  I squeeze a bit of fresh lime juice and maybe additional Sriracha if I’m feeling extra dangerous.  Tell me friends, how do you like your ramen?  Did you, too, have an obsession with the instant stuff way back when?!  Truly, MKR

Christmas Morning Boozy Gingerbread Pancakes

Ah, Christmas morning.  I don’t know about you, but this gloriously lazy morning is one I wait for all year ’round; gifts litter the living room floor, bows and wrapping paper are strewn all over the place, holiday coffee is brewing in the kitchen and my absolute favorite part: boozy gingerbread pancakes are ready to devour.

We’ve been eating Christmas morning pancakes for as long as I can remember.  All of my Christmas memories when I was young involved a stack of warm, fluffy pancakes before settling into the usual Christmas Day coma.  It’s a cherished tradition that I’ve taken on at our house when Mom and Dad come to us now.  

Since I don’t want to over-exert myself in the kitchen on Christmas morning (let’s be real, I just want to get cozy!), I stick to my tried and true Christmas morning pancake recipe, but each year I amp them up a bit with a different flavor combo.  This year, gingerbread pancakes with chopped pecans my new favorite festive booze: Jackson Morgan’s Brown Sugar & Cinnamon cream liqueur.  I promise you this combo is a match made in heaven, but you can always have a little fun with your own renditions; these pancakes would be great with whipped cream and a sprinkle of cinnamon or nutmeg, too! Oh, and did I mention the Jackson Morgan Cream taste fantastic in your coffee as well!

Boozy Gingerbread Pancakes with Chopped Pecans

Ingredients
  1. 1 1/2 cups all-purpose flour
  2. 1 teaspoon baking powder
  3. 1/4 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 1/2 teaspoon ground dried ginger
  6. 1/4 teaspoon ground nutmeg
  7. 1 teaspoon ground cinnamon
  8. 1 egg
  9. 1 teaspoon vanilla extract
  10. 1/4 cup molasses
  11. 1 1/2 cups water
  12. 1 1/2 cup chopped pecans
  13. 1-2 cups Jackson Morgan Brown Sugar & Cinnamon Liqueur (for serving)
  14. Butter & maple syrup for serving
Instructions
  1. Whisk the flour, baking powder, baking soda, nutmeg, salt, ginger, cinnamon, and 1 cup of the chopped pecans in a bowl; set aside.
  2. Beat the egg in a separate mixing bowl with the vanilla and molasses until smooth. Whisk in the water until completely incorporated.
  3. Stir the flour mixture into the molasses mixture until just combined -- a few lumps are okay.
  4. Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
  5. Serve warm and top with Jackson Morgan Brown Sugar & Cinnamon Liqueur, butter, maple syrup, & chopped pecans

Have you ever tasted fried chickpeas?! Crispy, crunchy, salty and spicy…all of my favorites together in an irresistible homemade snack. They’re beyond simple to make, and thanks to my new favorite kitchen gadget, they’re also not bad for you. Which may be a dangerous fact to share because if you’re like me, you won’t be able to stop eating them! 

You probably remember me raving about my new air fryer on snapchat (username WaitingonMartha) and when I recently set out to make classic chicken wings for Super Bowl Sunday.  The wings were such a hit, with none of that added guilt since the air fryer works with no oil (I know, I couldn’t believe it either). 

With a focus on healthier eating at our house, I still find myself wanting that good salty crunch to snack on, and having an easy homemade snack like these spicy fried chickpeas (read: no preservatives!) is exactly what I need to satisfy the snack craving whenver it hits.  That being said, I’d say making these homemade fried chickpeas was another successful run with the air fryer, though I’m still itching to delve deeper into my Air Fryer Cookbook to try more recipes soon, too.  Tell me friends, are any of you as hooked on this magical kitchen gadget as I am??  Truly, MKR
