When packing for a picnic, I always try to keep the menu seasonal and simple.  By sticking with foods that are easy to transport and that require minimal utensils, you’ll serve a spread that is inviting and also low-key. My recipe for fresh grilled corn salad is truly a no-brainer and always a hit when serving at the perfect picnic.  The combination of grilled corn, fresh cherry tomatoes and fresh herbs (with a little kick of course) just screams summer!  Truly, MKR

Grilled Corn Salad

Ingredients
  1. 6-8 cups grilled corn (cooled to room temperature)
  2. 1 small pint cherry tomatoes
  3. 1 onion sliced
  4. 1 green pepper sliced
  5. 1 jalepeno diced
  6. 2-5 sprigs of basil chopped
  7. 2-5 sprigs of cilantro chopped
  8. olive oil
  9. salt & pepper to taste
Instructions
  1. In a large bowl combine all of the ingredients above and serve room temperature or chilled.
Notes
  1. While you can serve this right away I prefer allowing it to marinate overnight allowing the flavors to really work together.

When choosing a menu to withstand the summer time temperatures I always like to begin with a refreshing, and preferably cool, first course.  My spicy watermelon salad is the perfect blend of sweet and spice, plus it highlights one of summer’s biggest stars. Ingredients
  1. 5 cups watermelon balled or cut into cubes
  2. 3 English Cucumbers sliced
  3. 1 Jalepeno deveined and chopped
  4. 1 Jalepeno deveined and sliced for garnish (optional)
  5. 1/2 cup red onions finely diced
  6. 1 cup fresh lime juice
  7. 1 garlic clove, minced
  8. 2 tablespoons brown sugar
  9. 1 teaspoon kosher salt
  10. 1/2 cup fresh cilantro leaves chopped, plus additional for garnish
  11. 1/2 cup crumbled cotija, feta, or goat cheese
Instructions
  1. In a small bowl add red onion, brown sugar, lime juice, diced jalapeno, garlic, and salt stirring to combine.
  2. In a large bowl mix together the cucumber, watermelon, and red onion.
  3. Pour the dressing on top of the salad, garnish with cilantro, cheese and additional jalapenos if you like it HOT.

Carrying On Holiday Traditions with Vietri

Choosing the perfect holiday pattern to grow year over year

Growing up during the holidays, one of the things I remember most is my mother setting the table on Christmas Eve. Dressed up in her Christmas best, she would carefully remove each piece of Christmas China from the cabinet placing it all around the table in preparation for the big day.

Every plate was rimmed in gold with a hand painted Christmas tree and holiday snow scene at the center.  And I would watch her with anticipation, knowing that tomorrow, we’d all gather around the table and for one day eat off the fanciest plates I had ever seen.  Yes I had an obsession with table settings even back then.

Year after year we’d gift my mother new pieces to add to her collection, a collection that still graces her China cabinet today. As I grew older, and adopted my own holiday traditions I knew this was one I wanted to keep.  But choosing a collection; which pattern, which brand…seemed daunting.  How do you choose?
