You must be living under a rock if you haven’t heard about Nashville’s beloved hot chicken.  As I’m told by our own Nashvillian Kat, WOM’s Editorial Director, you cannot visit the city without getting a taste of this ultra hot chicken, and you can find different variations with a cult-like following around town at restaurants and food trucks alike.  It’s safe to say that it’s a Nashville specialty that’s quickly spreading around the entire South, too.  We’re even getting our very own Hattie B’s in Atlanta in 2018! 

What does Nashville Hot Chicken taste like?!  Heaven.  Nashville hot chicken is fried chicken, breaded and completely coated with cayenne and other spices.  It’s clasically served with white bread and pickles, as it’s sure to make your nose run and heart beat quicken…it’s that hot.  But it’s not like buffalo hot, or sriracha its a totally different hot.  

By now you know that  love getting creative with my nachos—some with sweet potatoes, some with jambalaya and some even for breakfast.  And these hot chicken-inspired nachos with pickles and purple cabbage slaw may be my favorite variation yet!  

Here, I was inspired to take the winning combination of flavors and put my own little spin on them by turning them into nacho form.  This is not the full fledged Nashville hot chicken as it’s not fried and breaded because I felt that with the chips the breading would be overkill, but it definitely hits the spot with the hot-and-cool-and-crunchy effect.

Nashville Hot Chicken Inspired Nachos

Ingredients
  1. 4 6oz chicken breast halves
  2. 1 cup Alabama White Sauce
  3. 1 cup Hot Buffalo Sauce
  4. 2 cups monterey jack cheese
  5. Tortilla chips
For the Dry Rub
  1. 2 1/2 tablespoons paprika
  2. 2 tablespoons garlic powder
  3. 1 tablespoon salt
  4. 1 tablespoon onion powder
  5. 1 tablespoon dried thyme
  6. 1 tablespoon ground cayenne pepper
  7. 1 tablespoon ground black pepper
  8. 1/2 head purple cabbage, cut into slices
Instructions
  1. Preheat oven to 450 degrees
  2. Mix together the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper.
  3. Place chicken breasts in a plastic bag with seasoning mixture for at least 20 minutes to marinate.
  4. Heat a large skillet over medium-high heat with cooking spray or oil.
  5. Add chicken to skillet, sprinkling with salt.
  6. Sauté 6 minutes on each side or until done.
  7. Brush buffalo sauce over chicken. Set aside.
  8. Pull apart chicken into strips or preferred pieces.
  9. While chicken is cooling, arrange tortilla chips onto sheet pan evenly.
  10. Add a layer of chicken, cheese, pickles, cabbage, and bake until cheese is melted. Remove and top with Alabama white sauce and serve.

My top 10 kitchen essentials from Williams-Sonoma

It will come to no surprise to you that spending time in the kitchen is one of my favorite things to do.  As you may remember, I vowed to return to making more homemade weeknight meals at home in the new year… and more time around the table has been glorious.  I’ve recently become obsessed with a few new tools and gadgets, and I knew it was due time to share my top kitchen essentials from Williams-Sonoma with all of you!  Truly, MKR

No. One.  Philips Air Fryer.  You heard me talk about the air fryer last week, but I really cannot stop singing its praises.  As a quick reminder in case you missed our chicken wing story, this super high tech, but ultra user friendly air fryer calls for little to no oil and still fries up all of your favorites perfectly.  I’ve made wings, fish, potato chips, and next up onion rings!

No. Two.  Any and all Schott Zwiesel stemware.  In my book, Schott Zwiesel is the creme de la creme when it comes to my preferred wine carrying vessel.  I’m particularly fond of these pretties.

No. Three.  Fortessa flatware.  While I love all of Fortessa’s gorgeous flatware, my heart belongs to the Lucca and Royal Pacific setting.  The bamboo is classic and gold flatware, always adds just the right touch of “special occasion” to any meal. 

No. Four.  Mini Classic Croissants.  Ever since being introduced to these via an Oprah’s favorite things, I’ve never not had them in my freezer.  Buttery, rich, and bite size…there really are no words.

No. Five.  KitchenAid Pro Mixer.  Probably my most used kitchen item, and worth every penny.  I do not bake, mix, or make anything without my KitchenAid Pro.  And p.s. you’ll have it FOREVER.

No. Six.  Silpat Mats.  Scratch the above statement; Silpat mats are hands down my most used kitchen item.  They keep your pans and cookie sheets perfectly clean, eliminate the use of a non-stick spray, and they even come in mini toaster oven and microwave size.  I have six, that’s how serious I am about Silpat.

No. Seven.  Fortessa’s Restaurant Collection.  Clean lines and bright white allowing the food to be the star, Fortessa’s restaurant collection can transition from every day to formal dining.

No. Eight.  Chili Lime Rub.  This pick is on behalf of the Mr.; no joke he stock piles this rub.  If he’s grilling then this is his secret meat weapon.

No. Nine.  PL8 Professional Chopper.  I was so impressed by this little guy, I snapchatted it the other day (one more reason to follow on Snapchat so you don’t miss out on all my favorite finds…username WAITINGONMARTHA).  Anyway, the PL8 professional chopper chops up anything and deposits the perfectly cut pieces into a dish below.  I made tacos the other night and was able to using the PL8 was able to chop up 2 onions, 3 jalapenos, 1 tomato, 1 green pepper, and numerous garlic cloves in less then 5 minutes!

No. Ten.  Rubber Spatulas.  It may not be flashy, but rubber spatulas are my go-to kitchen utensil, and Williams-Sonoma’s are of the highest quality, so you won’t need to constantly replace them.

Well, guys, by now you’ve realized how much of beauty buffs we are.  In fact, we were starting to run out of names to call these roundups!  Ha!  So say hello to our new series, The Beauty Breakdown.  In this series, we’ll be sharing our current favorite beauty and self care finds, and any and all products that we’ve recently tried that are worth talking about. 

First up, I HAD to get my hands on a Hanacure face mask after seeing the crazy photos of everyone wearing them, looking 2348234 years old.  And I was really impressed with W3LL PEOPLE for its completely nontoxic line of makeup.  I’m so thrilled that makeup is starting to offer benefits of skincare, with clean ingredients that make us look great AND nourish the skin while they’re at it.  

On this list, also, is Osmia Organics, a brand that’s new to me but worthy of the much coveted counter space on my vanity.  Think luxurious, velvety textures with subtle and irresistible scents.  They make self care easy!

Like everyone else, I had seen the ads for this miracle mask and I couldn’t help but be intrigued.  This multi-action treatment mask promises to dramatically transform the appearance and texture of the skin.  It works to remove the impurities from your skin, helping it look more firm and lifted, smoother and evenly toned. 

I was completely shocked to find out that the mask ingredients list was a lot “cleaner” than I expected.  It’s formulated without sulfates, parabens, phthalates, and it’s hypoallergenic and not tested on animals. 

My verdict?  I’ve got to admit that the tightening was really intense after applying.  I mean it was TIGHT.  But I thoroughly enjoyed the feeling, too, and I noticed my pores appeared smaller afterwards.

Oil pulling is an ancient practice that is receiving recent interest thanks to its key role in oral hygiene.  I especially love this brand because it’s the only 100% raw, alkaline coconut oil in the world.  It’s been cold-processed, and kept under 100 degrees Fahrenheit, making it truly raw.  Most coconut oils can have up to 20% fillers according to the current FDA regulations; this one is 100% pure. 

If you’re just starting out with oil pulling, try to swish the oil around inside your mouth for about 5 minutes, then work your way all the way up to 20 minutes.  It’s the cleanest your mouth will ever feel!
