As you’ll remember, I recently welcomed the season and celebrated a local Georgia flavor with Williams Sonoma and my Creamed Vidalia Onion Bake.  And today I’m reveling in another local flavor, Georga peaches. 

Similar to the vidalia onion bake, this peach tart recipe is incredibly easy to make, and you just can’t beat the mixture of these simple, yet rich flavors.  The sweet peach plays perfectly with the tangy flavor of goat cheese, warm cinnamon, subtle crunch of pistachio and the sticky-sweet honey drizzle on top.  And since I’m big on texture and getting that perfect crispy bite, I take my time when thinly slicing the peaches ensuring the peaches will bake evenly while still maintaining a heavenly-thin crisp crust.

So voila, a oohy-gooey-crispy-peachy treat.  The perfect recipe to reval and enjoy your love of peaches far beyond the summer season.  But be forewarned: these little slices disappear faster than you expect. Enjoy!  Truly, MKR

Peach & Goat Cheese Tart with Honey Drizzle & Crushed Pistachios

Ingredients
  1. 3-4 peaches, skin on thinly sliced
  2. 1 tablespoon cinnamon
  3. 1/4 cup honey
  4. 2 cups crumbled goat cheese
  5. 1/8 cup crushed pistachios
  6. For the crust...
  7. 2 1/2 cups all-purpose flour
  8. 1/4 teaspoon kosher salt
  9. 1/4 cup vegetable shortening, cold
  10. 8 tablespoons butter, cold and cubed
  11. 1/4 cup ice water
Instructions
  1. For the crust...
  2. In a large mixing bowl, sift together the flour and salt. Add the shortening and break it up with your hands or pastry cutter to coat it all up with the flour. Add the cold butter cubes and work it into the flour until the mixture is crumble.
  3. Add the ice water, a little at a time, until the mixture comes together forming a dough. Bring the dough together into a ball and divide the dough in half and flatten it into a disk shape. Wrap each with saran wrap and refrigerate for 60 minutes minimum, 24 hours maximum.
  4. Preheat oven to 350 degrees.
  5. In a large mixing bowl combine peach slices, cinnamon, and half the honey and softly mix to combine. Set aside.
  6. On a floured surface combine the disks and roll out to make a rectangle tart 1/2" thick and place on a piece of parchment paper on a cookie sheet or pan.
  7. Crumble goat cheese on the dough and line peaches on top of the cheese in a row.
  8. Bake until crust is golden brown approximately 35-45 minutes. Remove from oven and drizzle with remaining honey. Let cool to room temperature, sprinkle with pistachios and serve.

When menu planning for a day like Mother’s Day, I often go back and forth about what to serve that’s just as tasty as it is beautiful.  And there’s one thing I know for sure: I’m serving this Grilled Georgia Peach Salad again this year (and all summer long).  While Mama K and I shot our Mother’s Day brunch inspiration with J.McLaughlin, we were the most excited about devouring this salad, along with all the cheese, once the shoot was wrapped! 

Fitting of any Georgia gal, I love pretty much peach-anything, and grilled peaches take that love to a whole new level, let me tell you. There’s something about the way the juicy fruit softens, sweetens and turns golden brown, exploding with the taste of summer in each bite. Grilling the peaches gives the fruit a new dimension to its sweetness, and paired with tangy fig balsamic, bitter arugula, herbed goat cheese, sweet snap peas and candied pecans…it’s just all a little unreal and has me excited about salads again.

And of course you know (or at least if you follow along) how I always talk about texture with my dishes, and this grilled peach salad hits the mark. The tender grilled peaches + fresh pop of snap peas + crunch of the candied pecans makes for one wonderful bite every time.  Tell me, have you fired up the grill this season yet?!  Truly, MKR

Today’s dinner (and MAJOR giveaway) is not only an ode to the traditional, yet vibrant flavors of Spain, it’s a celebration of the Spanish laid-back approach to dining.  Let’s just say they know how to sit back, pour a glass or two of wine, nibble on some tapas and savor really great food.  And since I’m a big fan of all of those things, I decided it was due time I payed homage to the beautiful Iberian peninsula with a casual dinner spread and Spanish inspired menu. 

I tried my hand at two Spanish staples: a seafood paella and hearty spinach with chickpeas.  Both dishes I’ve enjoyed at restaurants for years, but have been nervous about recreating at home.  So to say I was thrilled and just a tad surprised at how simple they actually were to prepare is an understatement.  I’ll be sharing the recipes for my Seafood Paella and Espinacas con Garbanzos (Spinach & Chickpeas) tomorrow, but I’d be amiss to leave you hanging about the cheese plate.

I knew I had to have a cheese plate when planning this Spanish themed dinner, but I wanted to avoid what seems to be the current cheese plate trend of the “bigger-the-better.”  Yes, we all love cheese and all that accompanies it, but unless you’re throwing a full blown party, when entertaining for 10 guests or less, keep it on the small and simple.  The cheese plate is just something to nosh on before the main event.  You don’t want it to be so complex and filling because it runs the risk of taking away from the meal itself. 

So with that being said, I kept it simple with two Spanish cheeses (Manchego & Mahon), roasted red peppers, a mix of Spanish olives, marcona almonds, two different marmalades and two Spanish meats (Jamon Serrano & Salami).  I arranged it all on this Le Creuset Tray, which is part of a 2-piece casserole dish and tray.  The tray serves as the top of the casserole dish, so you can use them separately or together…genius!  

Speaking of Le Creuset, how wonderful is this cool Caribbean blue?!  I love Le Creuset, that’s all there is to it.  Cast-iron kitchenware is just one of those things you’ll have forever, and Le Creuset is my absolute favorite brand when it comes down to it.  When I saw this collection, I knew I had to have it.  I mean, by now you know my love affair with all things blue and white! See, when it comes to blue, I don’t discriminate.  I’ve found that all blues truly go together, and I knew this bold, island-blue would be the perfect pop to my table for nights like this.  Paired with a mix of other tabletop favorites, the Caribbean dinnerware collection infuses a welcoming, bright feel to any table…something I’ll be looking to do all year ’round.  Truly, MKR
