If you follow along on Instagram you may have recently seen that I checked off a major, major bucket list item.  I became a vintner (wine maker).   I packed my bags and flew to La Crema Winery in Sonoma California and worked harvest for four glorious days.  And I’m talking I WORKED harvest.  

My days looked a little something like this; 6:00 am handpicking grapes in the vineyard.  This was what I called the magic hour.  The vineyard is covered in that Russian River fog, a chill is in the air, and there’s a quiet over everything.  Watching the fog break and the sun rise over a sea of vines is nothing short of spectacular.  Let’s just say it was a view I don’t think I would ever tire of.  After my time in the vineyard I’d move to the sorting area where I’d remove all of the stems, leaves, and other debris by hand.  I couldn’t stay here too long as the bees are attracted to the grape sugars and I’m deathly allergic to bees.  1:00 pm quick lunch break then into the cellars where sampling, fermentation, punch downs (the floating cap of skins and seeds are “punched down” into the juice three times daily to extract color and tannins), and barreling happens.  Elizabeth (head wine maker) and her team sample the juice numerous times throughout the day (little glass sample bottles pictured above) to check how the wines are coming along.  I can’t clearly explain all of the how’s as this is where science takes center stage and I’ve never been known for my strength in science.  But basically the wine makers are testing and tasting to find the perfect blend of acidity and sweetness and also measuring the brix (sugar) levels.  7:00 pm clean, clean, and more cleaning because a safe and clean workplace is a happy workplace.  8:00 pm eat something, enjoy a glass of wine and fall into bed.  

Wine making is no joke, at the heart of it all wine making is farming and it takes a village.  From the harvest workers to the wine makers and everything in between having experienced it all first hand I enjoy every glass I pour even more so now having been on the other side of things.  While not everyone can experience being a vintner first hand La Crema has created a Virtual Vintner program which you’ve heard me talk about  HERE.  Essentially Virtual Vintner allows everyone an intimate, hands on look to wine making.  Readers get to follow Elizabeth and her dream team during harvest and consumers even had the opportunity to vote and create a Fall 2015 released wine.  And while voting is closed on that part of the journey they have just launched a Sensory Contest to see how closely you’ve been following along.

Homemade Pistachio Pudding

If you’re a last minute person like me then you’re probably still scrambling for Easter dessert ideas.  Might I suggest homemade pistachio pudding from our Easter table?  Creamy pudding mixed with the texture and flavor of pistachios is simple perfection.  Not to mention there is nothing easier to make than homemade pudding.  I used Joy The Baker’s recipe below which needs no adaption what so ever.  Enjoy!  truly, MKR

Ingredients
  1. Pistachio Paste
  2. 1/2 cup salted pistachio nuts
  3. 1/3 cup granulated sugar
  4. 2 tablespoons water
  5. Pudding
  6. 2 cups whole milk
  7. 2 large egg yolks
  8. 1/3 cup granulated sugar
  9. 2 tablespoons cornstarch
  10. pinch of salt
  11. 1 teaspoon pure vanilla extract
  12. 2 tablespoons unsalted butter, softened
  13. 1/2 cup pistachio nuts, chopped
Instructions
  1. Pistachio Paste
  2. Place pistachios in the bowl of a food processor.
  3. Pulse until the nuts are in small bits.
  4. Add the sugar and water, and blend until relatively smooth.
  5. Pudding
  6. Spoon Pistachio Paste into a medium saucepan.
  7. Add the milk and whisk over medium heat.
  8. Heat milk and pistachio until steamy and hot.
  9. While milk is heating, whisk together granulated sugar, egg yolks, cornstarch and pinch of salt. Mixture will be thick. Keep whisking until it’s smooth.
  10. Pour about 1/2 cup of the steaming pistachio milk into the sugar and egg mixture. Whisk together. Add another half cup of hot milk and whisk to incorporate. Return the milky egg mixture into the saucepan over medium heat.
  11. Heat pudding mixture over medium heat until thick and bubbly. Whisk almost constantly.
  12. Boil for 1 minute, or until thickened.
  13. Remove from heat and stir in butter and vanilla extract, until butter is melted.
  14. Pass cooked pudding through a fine mesh strainer set over a medium bowl.
  15. Spoon into small ramekins, place plastic wrap over the individual puddings (so the plastic touches the top of the pudding), and refrigerate for at least 4 hours, or overnight.
  16. Garnish with chopped pistachios.
  17. **Pudding will last, covered in the refrigerator, for up to 4 days.

When throwing our annual Holiday party, the Mr. only has one request.  White Russians.  Or rather a Caucasian as he and all his cronies (I’m talking to you Gaines) call it because they’re obsessed with The Big Lebowski.  But when I received a little package from Smirnoff containing their newest gem, Cinna-Sugar Twist Vodka, I decided to kick the standard up a notch and created a Sugar n’ Spice White Russian.  A combination of sugary spice and cinnamon which reminds me of all things wintery and warm.

Though our Sugar n’ Spice White Russian is sure to be a hit with the ladies it might be a tad on the sweet side for the gents.  My suggestion is to set up a White Russian DIY Station.  Display the necessary ingredients on the bar (or even on a side table close to the bar) and let your guest decide how sweet they want their Russian.  Cheers Loves!  truly, MKR 

DIY White Russian Station:
  • Vodka
  • Cinnamon & Sugar Smirnoff Vodka
  • Kahlua
  • 1/2 and 1/2
  • Ice
  • Cinnamon Sticks or Cinnamon Spice
  • Spoons or Stir Sticks
  • Straws
  • Rocks Glasses (I used our Dwell Studio malachite ones above)

Sugar n' Spice White Russian

Ingredients
  1. 1 oz. Smirnoff Cinna-Sugar Twist
  2. .5 oz. Kahlua or any coffee flavored liqueur
  3. .5 oz Half and Half
  4. Cinnamon Sticks or Cinnamon Spice to garnish
Instructions
  1. Add Vodka, Kahlua, and Half and Half in ice filled shaker.
  2. Shake, shake, shake.
  3. Pour over ice, garnish with cinnamon and enjoy.
