Last week while Ms. Clark was out gallivanting all around South Africa I had the pleasure of taking over her blog, Lark & Linen, for the day to share my Peppermint Chocolate Chip Cookie recipe. And while these cookies aren’t really new-year-new-healthy-you approved I think you’ll agree they’re worth the splurge.  I mean SO worth the splurge.  Happy Monday Loves!  truly, MKR

Ingredients
  1. 2 1/4 cups all-purpose flour
  2. 1 teaspoon baking soda
  3. 1 teaspoon salt
  4. 1 cup (2 sticks) butter, softened
  5. 3/4 cup granulated sugar
  6. 3/4 cup packed brown sugar
  7. 1 teaspoon vanilla extract
  8. 1/2 teaspoon peppermint extract
  9. 2 large eggs
  10. 2 1/2 (or 3 if you like your cookies real gooey) cups Ghirardelli semi sweet chocolate chips
  11. 1 box of Trader Joe's "Candy Cane Joe Joe's"
  12. **If Peppermints not your thing simply leave the extract out and use traditional Oreo Cookies**
Instructions
  1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper of Silpat mats
  2. Combine flour, baking soda and salt, lightly mixing. Set aside.
  3. Beat softened butter, brown sugar, and sugar until fully combined and creamy. While beating on low add vanilla, peppermint, and eggs.
  4. Gradually beat in flour mixture. Once combined add chocolate chips.
  5. Take 1 Trade Joe's Jo Jo and with an ice cream scoop scoop out 2 scoops of cookie dough 6. and make a sandwich with the Jo Jo in the middle. Press lightly and work the cookie dough all around the Jo Jo so it encases the cookie completely. Smooth out the dough in your hands so the entire cookie forms the shape of a hockey puck, but slightly smaller. Place on cookie sheet and repeat.
  6. Bake cookies for 10-14 minutes, or until they slightly brown on the bottom and top. **Remember your cookie will continue to bake a minute or so after you take them out of the oven so don't overcook them!**
  7. Let cool for 15 minutes on a cookie rack and enjoy.

Homemade Fried Chickpeas recipe via Waiting on Martha

Have you ever tasted fried chickpeas?! Crispy, crunchy, salty and spicy…all of my favorites together in an irresistible homemade snack. They’re beyond simple to make, and thanks to my new favorite kitchen gadget, they’re also not bad for you. Which may be a dangerous fact to share because if you’re like me, you won’t be able to stop eating them! 

You probably remember me raving about my new air fryer on snapchat (username WaitingonMartha) and when I recently set out to make classic chicken wings for Super Bowl Sunday.  The wings were such a hit, with none of that added guilt since the air fryer works with no oil (I know, I couldn’t believe it either). 

With a focus on healthier eating at our house, I still find myself wanting that good salty crunch to snack on, and having an easy homemade snack like these spicy fried chickpeas (read: no preservatives!) is exactly what I need to satisfy the snack craving whenver it hits.  That being said, I’d say making these homemade fried chickpeas was another successful run with the air fryer, though I’m still itching to delve deeper into my Air Fryer Cookbook to try more recipes soon, too.  Tell me friends, are any of you as hooked on this magical kitchen gadget as I am??  Truly, MKR

When menu planning for a day like Mother’s Day, I often go back and forth about what to serve that’s just as tasty as it is beautiful.  And there’s one thing I know for sure: I’m serving this Grilled Georgia Peach Salad again this year (and all summer long).  While Mama K and I shot our Mother’s Day brunch inspiration with J.McLaughlin, we were the most excited about devouring this salad, along with all the cheese, once the shoot was wrapped! 

Fitting of any Georgia gal, I love pretty much peach-anything, and grilled peaches take that love to a whole new level, let me tell you. There’s something about the way the juicy fruit softens, sweetens and turns golden brown, exploding with the taste of summer in each bite. Grilling the peaches gives the fruit a new dimension to its sweetness, and paired with tangy fig balsamic, bitter arugula, herbed goat cheese, sweet snap peas and candied pecans…it’s just all a little unreal and has me excited about salads again.

And of course you know (or at least if you follow along) how I always talk about texture with my dishes, and this grilled peach salad hits the mark. The tender grilled peaches + fresh pop of snap peas + crunch of the candied pecans makes for one wonderful bite every time.  Tell me, have you fired up the grill this season yet?!  Truly, MKR
