I don’t know how we’re at week 6 of the One Room Challenge, time seems to have literally flown.  Looking back I also don’t know how I was able to actually pull this all off, and while the room isn’t 100% complete (which you’ll read about below) I must say I couldn’t be happier with how everything has turned out.  

If you remember when deciding to remodel my office the two most important things where to lighten up the space and make it more functional for myself and my growing team.  I kept the oh-so popular Thibaut Tanzania wallpaper, my giant silver chandy, and horned sconces, but everything else went out the door.  To lighten up the space I got rid of all the black and brought in modern crisp whites and warm maple woods which not only made the space immediately feel light and bright, but also much bigger which is always a plus.  Staying true to Martha’s signature colors I anchored the room with pops of orange, mango and all shades of blue plus metallic accents of gold and silver.  I mixed it all up with modern and traditional pieces giving it a more collected and eclectic feel.

When it came to functionality my old space only had one very large desk and because I can have anywhere from 1-3 team members with me on any given day I knew I wanted to add a table.  I’ve adored the Knoll table for years and now I had the perfect opportunity to add it to my arsenal, but the Knoll is made to order and wouldn’t make my tight turnaround.  However, I wanted to show the space finished so I subbed in an Ikea table while I patiently await the Knoll.  An Oomph Tini Table provides a catch all for keys, phones, and any personal affects plus its the perfect table for cocktails.  And the traditional jute rug balances out the modern touches and brings warmth to the stark white and clear acrylic ghost chairs, plus it defines the space allowing this area to not get lost in the room itself.   

I moved my Blu Dot Strut desk directly in front of the window because while the enormous silver chandy is gorgeous it doesn’t put out a lot of light so the more natural light I can utilize the better.  I also chose to face away from the window enabling me to converse with my team rather than have my back to everyone the entire day.  For my desktop I wanted to keep it clutter free so because the Blu Dot Strut doesn’t have drawers I added a rolling file cabinet from Ikea plus a second Oomph Tini Table which houses a few desk necessities.  I laid a sheepskin rug underneath allowing my feet to have a soft and cozy place to rest, plus it provides the perfect spot for Addison to cuddle up on.  Lastly, my custom drapes I agonized over for weeks turned out to be the centerpiece of the room.  Going forward I don’t think I’ll ever do a drape without a pop of color (preferably a velvet color) again!

The Modloft Pearl Bookcase, while beautiful, needed to fulfill its purpose as an actual shelf which is why you’ll find Shop products, styling props, and art sprinkled amongst my personal items.  The Pearl is also home to my latest, and quite possibly current favorite, Marshall Stanmore Speaker (worth every penny my friends).  On a side note another Pearl bookcase is on its way so the entire wall will be shelving, and when she arrives I plan on sharing a step-by-step #shelfie styling story so stay tuned (say that five times fast).  

Lastly, I replaced my black book shelves with two maple consoles from Ikea that have doors allowing me to store Shop products without feeling like a hoarder.  Instead of styling the consoles I chose to leave them simple and clean, but flanked the sides with two media towers to house my never ending book collection.

Well I think that about sums it all up, though I’m sure I’m forgetting something…oh yeah, what do you think of my new space?!  Truly, MKR

If you follow me on Snapchat (username WAITINGONMARTHA) it will come as no surprise to you that I’m a firm believer that everything tastes better cooked, grilled or smoked (preferably on the Big Green Egg) over an open flame. EVERYTHING.  And while I’m a pescatarian, I don’t let you meat eaters have all of the fun when it comes to barbecues.  Over the years, I’ve perfected my go-to recipe for the best ever grilled veggie burger…and let’s just say that it could tempt even the biggest carnivores at your Memorial Day party. 

The problem with veggie burgers, if you’ve ever had them, is they tend to fall into two categories: bland tasting and stiff as cardboard, or an un-grillable mushy-like consistency that is neither appetizing or easy to grill.  So, I’ve made it my mission to perfect a grillable, tasty, veggie burger that will give any beef burger a run for it’s money.  And after numerous trial and errors, I believe I have finally figured it out.  With a combination of black beans, cauliflower rice, grilled onions, panko breadcrumbs and a plethora of sauces and spices, this may just be the best veggie burger recipe out there, if I do say myself.  Of course I couldn’t forget all of you carnivores, so along with my veggie burger, I’ve included my ultimate peppercorn crusted beef burger recipe below.  Both recipes masterfully satisfy that burger craving (because those exist, especially on a long weekend), and I’m telling you that it’s quite hard to believe they’re homemade.

If you didn’t catch yesterday’s post let me catch you up.  We kicked off our Monday by hosting a vibrant Spanish themed dinner (and a MAJOR giveaway) with two of my favorites, Le Creuset and Williams-Sonoma.  And today, as promised, I’m sharing the recipes for my Easy Seafood Paella and Espinacas con Garbanzos. 

So first, a little backstory: I love seafood paella. And I’ve wanted to take a stab at making my own for awhile now, but truthfully I’ve been a bit intimidated to try and tackle it at home.  Though some recipes slightly vary, I’ve always enjoyed it as a traditional rice dish with fresh mussels, little neck clams and shrimp, simmering in a fiery bath of spices and seasonings (think cayenne, saffron, smoked paprika and more).  It’s really no surprise that people from all over consider this traditional Spanish dish an elevated comfort food, and it’s dramatic one-pot presentation makes it a true show stopper.

To my delight, making my own seafood paella was so much easier than I had imagined. What I thought would be a painstakingly long process, turned into an under-30-minute (or just about) meal!  I mean I was shocked.  You will spend that active time simmering, blending and boiling, but you’ll find that the level and depth of flavors you’ll achieve is well worth the time spent over the paella pan.

Next up (which can serve as a first course to the seafood paella or by itself as a tapa) is the traditional Spanish side dish: Espinacas con Garbanzos, which translates to “spinach with chickpeas.” Sounds simple enough, but this spinach and chickpea Moorish-style stew is a comforting, filling dish that’s typically served hot and has a smoky, hearty flavor. This, like the seafood paella, is an under-30-minute dish, so it’s a great option when you’re hoping to kick up your weeknight routine or impress (without all the fuss) at your next dinner party.  Truly, MKR

Ingredients
  1. 3 Tbs. olive oil
  2. 1 yellow onion, chopped
  3. 1 red bell pepper, seeded and chopped
  4. 5 garlic cloves, minced
  5. 2 cups Spanish paella rice
  6. 1 cup peas
  7. 1 tsp. saffron threads
  8. 1/2 tsp. cayenne pepper
  9. 1/2 tsp. smoked paprika
  10. 3 cups vegetable broth
  11. 1 lb. shrimp, shelled & deveined
  12. 1 lb. little neck clams, scrubbed
  13. 1 lb. mussels, scrubbed and debearded
  14. salt & pepper to taste
  15. Cilantro, chopped for garnish (optional)
  16. Limes, for garnish (optional)
Instructions
  1. In a large paella pan or sauté pan over medium-high heat, warm the olive oil. Add onion, pepper and garlic and cook, stirring occasionally, until lightly browned, 3 to 4 minutes. Season with salt and pepper.
  2. Add the rice, saffron, cayenne & smoked paprika and cook, stirring, until the grains are well coated, about 2 minutes. Pour in the broth slowly and stir in 1 tsp. salt. Bring to a boil, then reduce the heat to low, cover and cook until the rice has absorbed nearly all of the liquid, about 10 minutes.
  3. When the rice has absorbed nearly all of the liquid, press the clams, shrimp and mussels, into the rice and top with the peas. Cover and cook until the shrimp are opaque and the clams have opened, about 5 minutes. Discard any unopened clams and mussels and serve immediately with cilantro and lime garnish (optional).

  1. When preparing your seafood discard any mussels or clams that will not stay shut to the touch before cooking.

Ingredients
  1. 2 cans of chickpeas, drained & rinsed
  2. 1 large bag fresh spinach, washed
  3. 1/4 cup blanched unsalted Marcona almonds, rough chopped
  4. 1 can fire roasted tomatoes
  5. 2 tablespoons tomato paste
  6. 1 cup tomato sauce
  7. 6 garlic cloves, chopped
  8. 1 small yellow onion, chopped
  9. Extra virgin olive oil
  10. 2 Tablespoons Sherry vinegar (or red wine vinegar if sherry vinegar is hard to come by)
  11. 1 teaspoon ground cumin
  12. 1/2 teaspoon cayenne pepper
  13. 1/2 teaspoon smoked paprika
  14. Salt & pepper to taste
Instructions
  1. Coat a large saucepan over medium-high heat warm olive oil and add garlic, onion, cumin, cayenne and black pepper sautéing until translucent, 3-4 minutes. Add almonds and lightly toast.
  2. Transfer the ingredients to a blender/food processor and add the sherry vinegar. Blend the ingredients together until you have a thick paste. Return the paste to the saucepan and add your garbanzo beans, tomatoes, tomato sauce and paste. Stir gently until the chickpeas are fully coated by the sauce.
  3. Add the spinach and stir until spinach is wilted and everything is evenly incorporated.
  4. Season with salt and pepper and serve.
