Ever scarfed down a Garbage Salad?  I’m sure you have; there’s nothing like a fridge full of leftovers post-holiday, with Pinterest inspiration looking bleak and no desire to get back in the kitchen anytime soon.  Well in the Rye household, we always eagerly welcome our post-Thanksgiving tradition of a Garbage Salad after we’re nice and stuffed from the day before.

In true Garbage Salad form, we literally throw all of our Thanksgiving leftovers into a salad for the perfect light meal (so we’re nice and spry for all of the Black Friday shopping!). There’s no exact recipe or formula for our Garbage Salad, but I always enjoy the hints of butternut squash and pomegranate seeds among fresh arugula (always fresh arugula), hard-boiled eggs and almond slivers.  So grab a leftover roll and top with any dressing of your choice, voila.

With our favorite season, comes a craving for warm, rustic flavors. We knew we could turn to our friends at Homespun to serve up fantastic fare to treat our tastebuds and celebrate this season’s greatest flavors. (Do you remember last year’s glazed sweet potatoes and wintry kale salad?!) 

For quintessential fall, roasted butternut squash always comes to mind for me.  It has that hearty, multi-dimensional effect when added to fresh greens. And while this fall salad serves as a wonderful compliment to other dishes, it can truly hold its own at the table too. It becomes a full-bodied dish as marinated butternut squash and tender, gently simmered poached pear sit atop fresh arugula, frisee and watercress.  And to finish: a sprinkle of lavender honey roasted walnuts, apricots and cranberries.  We promise the few extra steps the poaching and roasting this salad requires will be totally worth every bite.  Cheers, Kat

Vegan Pesto Heirloom Tomato Salad Recipe, Waiting on Martha

Recently I’ve had so much fun sharing a behind-the-scenes look into my kitchen and the recipes we’re cooking up in the Rye kitchen via Snapchat (username WAITINGONMARTHA).  And per your requests, I’m bringing you my recent recipe for my Vegan Pesto Heirloom Tomato Salad.

One of my favorite parts of summertime cooking is utilizing the fresh and seasonal ingredients that make each dish a hit.  As you’ll remember, we recently nommed on an Heirloom Tomato Spaghetti Squash Lasagna a few weeks ago that was just beyond. 

And the combination of this dish’s heirloom tomatoes, cucumbers, red onions, avocados, basil, cilantro, chives and vegan pesto sauce are vibrant and delicious. The crisp crunch of the tomatoes matched with the creaminess of the avocado and the mix of flavors from the fresh herbs creates the perfect bite.  And how can I forget the sauce…it’s quite possibly the best ever vegan pesto sauce.  So. Stinking. Good!  Truly, MKR
