We’re celebrating Cinco de Mayo the best way we know how, with a classic margarita.  Combining top shelf tequila, fresh squeezed lime juice and just a splash of orange juice our margarita recipe is the epitome of natural and refreshing.  So grab your  pals, break out the chips and guacamole (recipe HERE) and mariachi the night away.  truly, MKR

Ingredients
  1. 1 1/2 oz. tequila (100% agave a must, preferably a silver tequila)
  2. 1 1/2 oz. fresh squeezed lime juice + a slice for garnish
  3. Splash fresh squeezed orange juice
  4. Splash of agave (optional)
  5. Salt (optional)
  6. Cilantro for garnish
Instructions
  1. Add tequila, lime juice, and ice to cocktail shaker. Shake.
  2. With your lime run a slice around the rim of the glass and dip into salt and twist immediately. Fill glass with ice and pour margarita mixture.
  3. Add a splash of orange juice and agave to taste.
  4. Garnish with lime and cilantro.
  5. Enjoy!

Best Ever Guacamole Recipe

On Wells Street in Chicago sits one of my favorite Mexican restaurants, Adobo Grill.  It was here, about a decade or so ago, that I was introduced to table side guacamole.  Ever since that life changing moment (I know dramatic, but seriously) I have been perfecting my own guacamole recipe and I finally feel its ready to share with the world.  And just in time for Cinco de Mayo.  TGIF Loves!  truly, MKR

Ingredients
  1. 2 softened avocados, halved
  2. 1/2 a white onion chopped
  3. 1 small tomato chopped
  4. 1 jalapeno chopped
  5. 1 garlic clove
  6. 1 lime, halfed
  7. 10 sprigs of cilantro chopped
  8. pinch of salt
  9. pinch of garlic salt
  10. pinch of cayenne pepper
  11. Tortilla Chips for dipping
Instructions
  1. In a molcajete grate 1/2 clove of garlic and the juice of 1/2 a lime, rub thoroughly over covering the bottom of the molcajete.
  2. Add 1 avocado, and half of the onion, tomato, jalapeno, and cilantro mix with molcajete stone. You want the consistency to be chunky rather than creamy.
  3. Repeat with the remaining ingredients and mix.
  4. Juice 1/2 lime over mixture, add salt, garlic salt, and cayenne to taste. Mix one last time and enjoy.

I’ve always adored The Derby.  It may be because it falls on my birthday.  Or it may be because it’s a day that celebrates extra large hats, pastels, and dainty lace gloves.  Or it may be because I get to sip a mint julep while celebrating my birthday and wearing an extra large hat and dainty lace gloves.  Yep, thats it.  And this year for The Derby, I bet big and created three different ways to enjoy this festive libation.  The classic julep, a strawberry mint julep and a tangerine julep complete with fruit filled ice molds, (simply buy THESE and freeze the juice with a tad bit of puree the night before).  So Loves grab your hat, pick your horse and happy Derby!   truly, MKR

Ingredients
  1. 2.5 oz. Kentucky bourbon whiskey
  2. 1-2 sugar cubes
  3. 2-4 tsp. water
  4. 2-4 sprigs fresh mint leaves and stems
  5. 1/2 cup freshly squeezed tangerine juice
  6. Tangerine peel
  7. Crushed ice
  8. Mint Julep Cup(s)
Instructions
  1. Muddle sugar cubes in water in a mint julep cup.
  2. Fill with ice, bourbon and a few splashes of tangerine juice
  3. Top with more ice and garnish with a mint sprig and slice of tangerine
