What’s the quintessential warm weather cocktail to me?  That’s easy; a classic Gin and Tonic. It’s light, refreshing and beyond easy to make. It’s also the perfect batch cocktail to serve, which is always a plus in my book when entertaining.  And I don’t know about you, but a classic G&T holds very fond memories for me as my first true “adult” beverage getting me through the majority of the good and bad that accompanied my twenties.

Known as “the breezier cousin” of a cocktail like a Manhattan, the Gin and Tonic is a sophisticated, yet simple sip.  I find that a lot of other “sophisticated” cocktails end up being more work than they’re worth, but that’s not the case with this libation. But the secret to making a crisp Gin and Tonic at home that tastes as good as any you’d order at a bar: properly chilled glasses and plenty of ice. It’s crucial to keep this cocktail cool for best sipping results. 

For a classic Gin and Tonic, I stick to Seagram’s Tonic Water.  BUT if I’m looking to add another flavor to mine, I’ll simply use Elderflower Tonic Syrup for a wonderfully bold floral addition. Also, word to the wise: lime can quickly overpower the gin in this cocktail, so be easy with the garnish.  Lemon can offer a more subtle flavor, but it’s really all up to your preference when enjoying your Gin and Tonic.  If you’re feeling extra creative, consider adding coriander, peppercorn or a sprig of rosemary or mint for another dimension. Tell me, how do you like your Gin and Tonic?  Cheers, friends!  Truly, MKR

Ingredients
  1. 2 ounces Gin
  2. 4 ounces Tonic Water
  3. 1 tablespoon fresh squeezed lime juice
  4. 1-2 lime wedges for garnish
Instructions
  1. In a chilled rocks glass add gin, tonic water and fresh lime juice and gently stir until just combined. Top glass off with ice and garnish with lime wedges.

Today’s recipe is an elevated take on every chocolate lover’s dream (Mama K are you listening).  Smooth, velvety chocolate cake shares the spotlight with one of my personal favorites, fresh raspberry.  Add in a boozy component of raspberry liqueur in this decidedly delightful dessert from Chef Jason of Homespun

To most (and I’ll raise my hand), dreams of baking a homemade chocolate cake seems like a whole lot of effort.  So you’ll be pleased to find most of this cake’s ingredients already in your pantry at home, minus a little raspberry liqueur and fresh raspberries. Yes, working with a springform pan takes a little practice, but once you get the hang of that, the whole baking process is quite enjoyable (and even therapeutic I think).  And more than enjoyable, the end result is incredibly worth it: a homemade chocolate cake with raspberry sauce that’s rich, moist and beyond decadent.  And the raspberry sauce is so incredibly simple to make, which tempts me to find other recipes to include it in!  Cheers, Kat

Today, Chef Jason from Homespun, brings us another one of his delectable dishes: Pan Roasted Halibut and Coconut Braised Cabbage with Citrus Pistachio Relish.  A mouthful to say, yes, but it was also one of the tastiest mouthfuls I’ve had the pleasure of trying in awhile. I’m big on getting the perfect “bite” of everything on the plate (…you know, a forkful of ALL the flavors!) and the combinations on this dish definitely did not disappoint.

The light, fresh halibut is masterfully paired with the tender, braised cabbage. I’m such a fan of anything subtly flavored with coconut, and the cabbage is braised to perfection with it here.  And I’ve never met a relish (or any kind of chutney for that matter) that I didn’t like.  So I was delighted to snag a bit of the relish here, with its vibrant citrus notes and the subtle, nutty flavor of the pistachio. You probably remember I’ve posted my ode to all things pistachio, and this recipe deserves an immediate spot on the top of that list. Cheers, Kat
