If you’re like us, you’ve still got holiday-brain this week.  So instead of fighting the productivity slump, we’re embracing it with a mouth-watering cocktail recipe today.  My hot buttered rum cider will warm you from the inside out, I tell you!  Now you’ve just got to count the hours until 5 o’clock to try it at home. 

Hot, buttered rum cider.  I knew from the second I heard the words together that it would be a truly decadent sip.   And since making it, I’ve decided that a glass of this is my new favorite fight to the winter blues; it’s warm, bright and creamy and it goes down really easy (almost too easy).  I’ve professed my love for boozy apple cider before, and this one has the added bonus of creamy butter and brown sugar, along with a sprinkle of salt, a squeeze of fresh lemon and a pinch of cinnamon that rounds out the rich flavors. It’s quite simply perfectly balanced. 

See the full recipe before, but all you’ll need to do is bring apple cider to a simmer and stir in unsalted butter, brown sugar, cinnamon, nutmeg, cloves and salt.  And to serve, simply pour the warm, buttered cider into individual glasses, and top each with dark rum and a squeeze of fresh lemon for that needed acidity.  Garnish with cinnamon stick to serve.  Cheers, friends!  Truly, MKR

Hot Buttered Rum Cider

Ingredients
  1. 6 cups high quality apple cider (not juice, cider)
  2. 1 stick unsalted butter
  3. 1/4 cup dark brown sugar
  4. 1 teaspoons ground cinnamon
  5. 1 teaspoon ground nutmeg
  6. 1/4 teaspoon ground cloves
  7. 1/4 teaspoon ground allspice
  8. 2 cups dark Rum
  9. Juice of half a lemon
  10. Cinnamon sticks for garnish
  11. salt to taste
Instructions
  1. In a medium pot bring the apple cider to a boil over medium/high heat then immediately turn the heat on low and allow the mixture to simmer.
  2. Stir in butter, brown sugar, cinnamon, nutmeg, allspice, cloves and a pinch of salt. Continue to stir until the butter is melted and the sugar is dissolved. If the sugar isn't dissolving, whisk the mixture.
  3. Remove the mixture from the heat and add in rum and the juice of half a lemon.
  4. Ladle the hot rum buttered cider into mugs and garnish with a cinnamon stick.

In true holiday form, we’re kicking off this Monday with a festive, cheers-worthy cocktail: our Orange, Pomegranate & Rosemary Gin Punch.  I’ve been on a bit of a gin kick lately, and I think it’s safe to say that this beautiful batch drink is my current favorite way to toast to the season. 

You’ll quickly see how this cocktail recipe became my wintry go-to when you experience the aromatic rosemary paired with the sweet-sour mixture of gin and fresh orange.  It’s warm, spicy, yet fresh.  The pomegranate seeds provide a fun, juicy pop (which very well may be my favorite part of the drink) and thanks to a bottle of champagne (or prosecco), the consistency is both light and bubbly.  

And like our holiday sangria recipe, it’s just as gorgeous as it tastes.  The rich, deep red of the pomegranate seeds, the vibrant orange and fresh green that the rosemary sprigs provide all combine for an inviting glass, and altogether look stunning in a crystal punch bowl.  Cin, cin friends!  Truly, MKR

Orange, Pomegranate & Rosemary Gin Punch

Ingredients
  1. 1 bottle champagne or proseco
  2. 8 ounces pomegranate juice
  3. 4 ounces gin
  4. 8 ounces orange juice
  5. 4-6 oranges, thinly sliced
  6. 1 cup pomegranate seeds
  7. 4-6 sprigs of rosemary plus more for garnish
Instructions
  1. Combine all ingredients together in a punch bowl, lightly stir. Add ice to a low ball glass or punch bowl and pour over ice to serve.

You know I’m all about capturing that warm and cozy feeling that comes with the season.  So the second I heard “red wine hot chocolate” breathed in the same sentence, I knew I had to try it.  I mean red wine and chocolate, it’s a no-brainer perfect pairing.  And is it just me, or is this the year for crazy inventive cocktail; remember the rose slushy and our boozy apple cider slushies?!  

Anyway, back to our Red Wine Hot Chocolate.  Of course, you really just had me at “wine” (find my top 12 under $30), but you also had my curiosity piqued with the thought of mixing any kind of vino with ooey-gooey dark chocolate and marshmallows.  So with that, I got down to business and began taste-testing, and quickly found out just how much of an indulgence this seasonal cocktail was. 

See, naturally, red wine hot chocolate is rich.  So this isn’t the kind of cocktail recipe to pull out for a batch drink at your holiday party.  It is, however, an exemplary dessert drink.  Or a get-cozy-in-front-of-a-fire-and-read-a-book drink.  Plus a bonus: it smells absolutely heavenly when you’re making it.

With my recipe, I kept it simple by using a full-bodied, flavorful cabernet sauvignon (high price point Silver Oak low price point Ravenswood Vintner’s Blend) …save your favorite pinot noir for dinner tonight. The only other ingredients you’ll need: milk, dark chocolate chips or flakes, and marshmallows of course.  It’s seriously that simple to whip up.  Find the full recipe below, but tell me: will you be cozying up with a mug of red wine hot chocolate this season?!  Truly, MKR

Ingredients
  1. 1½ cups milk
  2. ⅓ cup dark chocolate chips
  3. 1 cup red wine (stick to a Cabernet Sauvignon)
Instructions
  1. Combine the milk and dark chocolate chips in a saucepan over medium heat. Keep stirring until melted...it will be thick and creamy.
  2. Add 1 cup red wine, and continue to stir.
  3. Serve immediately, garnish with marshmallows and enjoy!
