One of my favorite Christmas traditions has, and will always be, Christmas morning pancakes.  We all gather around the table after presents have been ripped open, still in our pajamas with mimosas in hand.  It’s a moment I revel in and look forward to every year.  So when Krusteaz reached out to discuss being a part of the Krusteaz Gluten Free Blogger Bake Off and pancakes were an option, I jumped at the opportunity.  

I don’t eat gluten free products often.  I find them to mostly taste a bit like cardboard.  So imagine my surprise when I found myself devouring this entire stack with the family.  I of course doctored the pancakes up with chopped pecans, fresh blueberries and soaked them in butter and maple syrup.  And I mean it doesn’t get any cuter than this polar bear maple syrup or the gingerbread man!! But I mean this when I say it, I really couldn’t get over that they were gluten free!  And as if the pancakes weren’t proof enough Krusteaz sent over their brownie mix and it too was fantastic.  Consider me a believer Krusteaz

Blueberry Pecan Gluten Free Pancake Mix

Ingredients
  1. 1 box of Krusteaz Gluten Free Pancake Mix
  2. 1 1/2 cups fresh blueberries, plus more for garnish
  3. 1 cup roughly chopped pecans
  4. 2 eggs
  5. 2/3 cup milk
  6. 2 cups water
  7. maple syrup
Instructions
  1. Heat griddle or pan to 375 degrees and spray with non stick spray, or butter.
  2. In a large mixing bowl combine Krusteaz Gluten Free mix, 2 cups water, 2/3 cup milk, and 2 eggs. Whisk, but don't over mix (batter should be a tad lumpy).
  3. Fold in 1 1/2 cup fresh blueberries and 1/2 cup chopped pecans.
  4. Pour batter onto griddle, and cook each side 2-3 minutes or until golden brown.
  5. Remove from griddle and garnish with chopped pecans, additional blueberries, and maple syrup

You last heard me talk about the love I have for my Nespresso VertuoLine here, but during this time of year that my Nespresso machine gets used more than anything else in my house.  For the obvious early morning rise and caffinate of course, but also Nespresso is perfect for the after dinner coffee.  Why is that (other than the obvious reason) you ask?  Because Nespresso has the ability to make everyone happy.  Decaf for the mother in law, no problem.  Black for dad, easy.  Espresso for the Mr., sure.  Half calf with extra chocolate sauce for mom, coming right up.  Nespresso VertuoLine allows everyone to have exactly what they want with the touch of a button and the hostess can just sit back and relax instead of catering to everyone’s need for something different.

So this year instead of storing and making ten different kinds of coffee use that time and create a coffee toppings bar like I did.  All you need is a few different types of Nespresso capsules, marshmallows, toffee or peppermint swizzle sticks, a gingerbread house or two, and toppings like whip cream, chocolate sauce, and peppermint flakes.  Oh and don’t forget the Baileys!  Nothing goes better with Nespresso’s Vanizio than homemade whip cream, chocolate sauce, and a pour or two of Baileys.  Cheers!  Truly, MKR

So I’ve been on a bit of a bender.  Like a sugar, carb, wine, exercise-whats-that? bender.  And while I kind of live for those type of moments (don’t judge) I always know whats on the other side of that throw-caution-to-the-wind attitude.  Detox.

 Truthfully, I’m a juicer.  I have been before it was “cool.”  I’m one of those equal part french fries and wheat grass kind of gal.  But when I tip the scales too far into the fried side of things I know what will get me back on track…my Vitamix and Hurom juicer (you can even do wheat grass in it).  Well that and no processed sugar, no gluten, and no dairy for two weeks.  And while it may sound miserable to some, by day three I promise you’ll feel amazing.  Like 10 years younger, my skin looks ridiculous amazing.  

Now I don’t just juice.  Typically I juice until dinner for a few days or juice for breakfast and dinner but have a healthy lunch.  Just enough to cleanse and get me back on track and remind my body that “hey, I love being healthy.”  So my Loves the next two weeks I’ll be focusing a lot on healthy habits.  Don’t worry the cocktails and sugary treats will back in no time, but for now I wanted to share the three juices that are on my current rotation, all from the new book Juice It!  And I’d love to know, what are some of your healthy habits?  truly, MKR
