Zoodles with Heirloom Tomatoes & Vegan Pesto Sauce

My Go-To Guilt-Free Summer Pasta
Filed Under > 30 Minute Meals

Zoodles with Vegan Pesto Sauce and Heirloom Cherry Tomatoes, recipe by @waitingonmarthaHomemade Zoodles with Cherry Tomatoes, Recipe by @waitingonmartha

If you’re sensing a pattern with my summer cooking, then you’re certainly right; I’m all about simple, easy and seasonal dishes this time of year.  And this zoodles recipe is no exception.  Ever since the team spent the afternoon with Gwyneth Paltrow’s It’s All Easy & Williams-Sonoma, I’ve been #TeamZoodles.  They really are such an easy (emphasis on EASY) and healthy alternative to your grain pasta, and beyond perfect for a summertime, or any time, meal in a pinch.

If you haven’t tried zoodles yet, let me just make a quick ten second pitch about why you’re missing out.  I’ve stated it numerous times that they’re so easy to make (just get yourself one of THESE), and obviously a lot less calories than your traditional pasta, but let’s talk taste.  The zucchini ribbons take on a deceiving likeness to linguine, but the trick is to not cook them too long.  Zoodles literally only need two minutes of sautéing…just enough to heat them through with your chosen sauce, but you need them to maintain their crunch.  The crunch is key; when you over-cook, or over-sauté zoodles, they can turn to mush (which is no good).

Now when it comes to the sauces, I really believe zoodles pair best with a lighter sauce that has tons of bold flavor; think a spicy red, garlicky olive oil, or my go-to vegan pesto (see below).  As I blogged before, I try to keep dairy out of my diet, and traditional pestos have loads of Parmesan.  But since I love pesto, I set out to create a vegan pesto that didn’t taste vegan.  And friends, I have found it!  Fresh basil, oregano, and cilantro from my garden paired with walnuts, salt, pepper, high quality olive oil and TONS of fresh garlic come together for what I think is better than the original version.  As you read through the recipe note that I prefer my pesto a bit on the chunky side, and very garlicky for that extra kick, but you can easily adjust to reach your desired consistency and taste. See for yourself, and let me know when you do!  Truly, MKR

Zoodles
  1. 5-6 Zucchinis, spiralized into zoodles
  2. 1 pint heirloom cherry tomatoes, halved
  3. vegan pesto sauce (see instructions below)
  4. Red pepper flakes, optional
  5. Salt & pepper to taste
Vegan Pesto Sauce
  1. 1 cup walnuts
  2. equal parts oregano and cilantro, but double that in basil (I like mine really garlicky so I use 5-6 fresh garlic cloves)
  3. Salt and pepper, to taste
  4. 1/2-3/4 cup olive oil
  5. 5-6 large fresh garlic cloves
Instructions
  1. For the vegan pesto sauce...
  2. Combine fresh basil, fresh oregano, fresh cilantro, walnuts, salt, pepper, 1/2 cup of olive oil and fresh garlic cloves in a mixer and blend. Keep adding olive oil to reach your desired consistency, and add salt and pepper to taste. (I like my pesto on the chunky side.)
  3. For the Zoodles...
  4. In a large saute pan, add the zoodles and pesto sauce and cook until just warm and combined (approximately 2-4 minutes). You don't want to over cook because you want to keep your zucchini noodles crisp.
  5. Top with fresh heirloom tomatoes and red pepper flakes and serve.

5 Things to Know About Healing Crystals

In Case You Were Wondering What on Earth This is All About
Filed Under > Health & Wellness

I’m not going to lie, when I first heard that people were turning to crystals for healing powers, I thought it sounded a bit loony and sacrilegious.  I first heard about them via Snapchat thanks to author Kelly Oxford‘s recent obsession with them.  My initial stream of consciousness went a little like this this: “Those crystals are kinda pretty…but I won’t ever do that hippie stuff… I don’t need any more knick-knacks around my bedroom…wait, could they help me?!”

Curiosity got the best of me, and I decided I at least wanted to learn the basics about healing crystals.  I turned to some of my favorite wellness sites (Hello Glow, The Chalkboard Mag and Well+Good) to see what this craziness was all about.  A little research quickly taught me that healing crystals are simply used tools to help you meditate and channel your focus and energy on improving something in your life.  They can be applied to your diet and nutrition, your beauty routine, your work and even your love life.  You most certainly do not pray to them (#phew), and you pick the crystals you personally feel drawn to.  While I still haven’t decided if I’m going to buy some (it may still just be too willy-nilly for me), I must admit I am intrigued by the thought of this ancient wellness practice. I may just stick to the beauty products infused with ’em for now.  Here’s a list of more than a dozen crystal-infused beauty products.

So as a COMPLETE newbie to the healing crystals game, I’ve broken it down to five basic things you should know about them in the slideshow above.  And because I’m intrigued to know more, I’d love to hear it: do you use healing crystals??  Cheers, Kat

P.S. If you know someone who would be into it, check out Little Box of Rocks; it’s a great way to gift a few healing crystals to someone based on the occasion (and GP and Cameron Diaz have both apparently endorsed the brand).

You most certainly do not pray to the crystals

Crystals have been used since ancient times to serve as a tool to quiet and train the mind in different ways. According to history, they have never taken the place of God.

I especially enjoyed how the ladies behind Energy Muse described the role that crystals play in a wellness practice. In this post they explain, "The mind is what controls us – until we are able to train ourselves, through methods like meditation, to no longer let it control us...Crystals are a tool to help you quiet your mind and bring you to this state of a connected center."

While all from the earth, different crystals can be applied to different areas and stresses in your life. Some basic crystals include: agate (helps ease anxiety and helps you detox), amethyst (promotes positive energy and relieves fatigue), carnelian (boosts creativity, courage and passion), citrine (helps focus and increases opportunity), fluorite (grounds you and protects you) and rose quartz (nurtures self-love and helps you connect deeper with others).

Sleep.  It sounds like a no brainer, but sleep really is the best way to fight eye fatigue.  Being a light sleeper I’ve got a few tricks up my sleeve for getting a few more z’s, they go something like this: silk pillow case, eye mask and most importantly my essential oils diffusing through the night.  Oh and no electronics at least 30 minutes before bed always makes shut eye come a lot easier.

I’ve tried MANY eye masks, both expensive and inexpensive, but I still keep coming back to my tried-and-true favorite SK-II. This is the best eye mask for dark circles and under-eye bags, hands down.  Everything SK-II is remarkable and yes, it’s a pretty penny, but if you do want to splurge, I’d suggest going this route.

I’ve worn this illuminator (in its lightest shade, #1) for years; it’s the final step in erasing under my eye circles and dark spots.  When buying, be sure to one color lighter than you would normally go; you need this to illuminate as well as blend.  While this has always been my go-to for years, I admit I recently tried beautycounter’s similar Touchup Skin Concealer Pen (and it may give YSL a run for its money!).

All About Eyes De-Puffing Eye Roller

Clinique, $30

Talk about a tried and true product, I’ve been using this for at least 6 years now, and I can’t imagine my morning routine without it.  Roll this on before your moisturizer, serums, oils and/or eye creams to help specifically with the puffiness.
