Springtime Essentials with J.McLaughlin

An Easy & Stylish Look for a Picnic in the Park
Filed Under > #OOTD (Outfit of the Day)

With spring officially upon us (at least here in the South it is) I’ve packed up all my winter clothes, filled my closest with bright, sunny essentials, pulled my bicycle down from storage and shined her up so she’s ready for a ride.  In the spring before the pollen is in full effect and before it hits 100+ temperatures one of my favorite things to do with my family is pack a picnic, and go to the farmers market in the park.

Stopping by the farmers market first always allows me to pick up fresh flowers (because who can resist a bouquet of beautiful blooms, especially if they’re local?!) and all of the pastries my basket can carry!  We lay out a blanket and lie there for hours catching up on what’s transpired the week before and I usually pack a salad along with something easy to nosh on like homemade pimento cheese.  But today is not a story on packing a picnic (that is coming Monday), today I wanted to talk about those spring essentials that are filling my closet; because planning your picnic outfit is just as fun as the picnic itself.

I surprisingly love to wear a sundress if we’re picnicking; it’s effortless and easy, always breathable, fun to move in, and all around a great look.  This sleeveless dress from J.McLaughlin was calling my name from the second I scrolled by.  I love the juxtaposition of the punchy pink with the graphic snake skin pattern; it’s the perfect balance of feminine with a little edge and honestly it’s one of the most comfortable dresses I own.  Since the weather is still a bit fickle here, a light jacket on top was a must and is always a spring/summer wardrobe essential.  White denim keeps things light, and is there anything better than a bright, crisp white piece of clothing?  Plus it’s always classic design make it a no-brainer when you’re layering during these warm-and-cold days.

Anytime I’m outside in the sun, I have a hat with me; panama, wool floppy, fedora…you name it, year ’round a hat is an always essential for me.  I picked up this panama hat last year from J.McLaughlin, and I still bring it on every picnic (and vacay).  Panama hats tend to lose their shape, but not this one and trust me when I say it’s been on plenty a trip.

Last year J.McLaughlin also launched sunnies and I’m so glad they did.  I’ve opted for these classic tortoise ones, but I’ve got my eye on these blue aviators as well.  And since more is always more with accessories in my humble opinion, I snagged this gorgeous floral scarf to give my outfit that extra pop.  Plus I love how a scarf this size can double as a light throw in case there’s a chill in the air.  Lastly, how great is this basket-weave bucket bag?! If that doesn’t get you in the mood for springtime picnics, I don’t know what will!

So there you have it, spring time essentials from J.McLaughlin, (which honestly has been a constant in my life with each change of season), and a bicycle chalked full of flowers; if this doesn’t get you excited for warmer weather I don’t know what will!  Happy Friday friends!  Truly, MKR

P.S. On Monday I’ll be sharing a few tips on just how to execute a great picnic plus sharing my easy breezy recipe for homemade pimento cheese and great, portable Mason Jar salads.

The Best Sunglasses at All Price Points

17 Pairs Worth Buying Today (Because You Can Never Have Too Many)

17 Best Sungalsses at Every Price Point, Including these Celine Sunglasses

We had a taste of spring this past weekend and it was THE BEST THING EVER.  On Sunday, we picked up a bouquet from Amelia’s Flower Truck and ate some amazing vegan, dairy-free ice cream in East Nashville.  I had such a great time exploring neighborhoods I usually don’t frequent, while soaking up some Vitamin D and trading my heavy coat for a light military jacket.  The weather was great; we even turned around a few minutes after we left home to get sunglasses (never complaining about needing those!).

I have my tried-and-true shades that I’ve had for years; a pair of classic Aviators, a pair of black frames and a pair of tortoise frames.  They’re all dependable, classic and universally flattering.  I’ve learned to take care of them, and I usually have at least one pair in my hand bag for when I’m on the go.  But I’ve got to admit, every time spring rolls around, I can’t help but want a few new pairs of shades…there are just so many good ones!  I have my eyes on a Celine pair that I consider to be a “forever pair”…I’d have to take extra care of them if I fork over $250+.  But I also found a few trendier styles (like these and these) that have price tags low enough to tempt me to take a few risks and have a fun pair or two in my bag for patio season happy hours

Check out my list of top sunglasses at every price point below, and then tell me, have you invested in a “forever pair”?  Or do you stick to the ones you won’t feel bad about losing?!  I’d love to hear it in the comments below.  Happy almost-spring!  Cheers, Kat

P.S. Aside from them completing an #OOTD, sunglasses play a super important role in protecting your eyes from sun damage; they filter light and they protect your eyes from the damaging UV rays. This will help decrease the risk of cataracts, macular degeneration and skin cancer someday…so put the shades on! xo

The “snow leopard tortoise” color is unique and eye-catching, ensuring that you’ll be the coolest girl in the pack.

Mryte 61mm Sunglasses

Chloe, $310

Shop Now >

When did Chloe ever do anything subtle?!  These oversized sunglasses (61mm!) completely nail the eclectic-retro-boho-babe vibe.  They’re not cheap, so I’d say go this route if you’ve worn your similar $16 Urban Outfitters pair into the festival ground.

Cajun Inspired Jambalaya Nachos with Kielbasa, Rice, Peppers & Pickled Okra

An Irresistible Take on Layered Nachos
Filed Under > Appetizers & Sides

Blog-Jambalaya-Nachos

Last week I shared my must-try One Pot Cajun Jambalaya, which I hope you’ve had a chance to try.  The recipe left me for an itch for more jambalaya, and I began to brainstorm a few ways I could make it happen.  By now you know about my love for great layered nachos (I take the art of layering very, very seriously as you can see in my vegetarian queso nachos, vegetarian breakfast nachos, and sweet potato nachos), so you won’t be surprised with what’s on the lineup today.

Friends, today I give you my Cajun Inspired Jambalaya Nachos.  Here I stacked layers of tortilla chips with savory Kielbasa sausage, white rice, green and red peppers, and of course ooey-gooey Monterey Jack and mild cheddar cheese.  To top it all off (and I’m quite proud of this addition), I included spicy pickled okra wheels in place of traditional jalapenos.

The beauty of this recipe, of course like all of my nachos, is in the layering and by cooking each relative ingredient separately before layering. Check out the step-by-step tutorial in the recipe below, and tell me if you’re going to be enjoying these anytime soon!  Truly, MKR

Jambalaya Nachos

Prep Time: 45 minutes

Cook Time: 5 minutes

Serving Size: 4-6

Ingredients

  • 1/2 lb. of shrimp, peeled & deveined
  • 1 large chicken breast, cooked & shredded shredded
  • 1 package sausage or turkey kielbasa, sliced
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 small diced tomatoes
  • 1-2 cups vegetable stock (with ratio to liquid for the rice)
  • 3-4 cups of cheese (I used a mix of Monterrey Jack and Mild Cheddar)
  • Tortilla chips
  • Pickled spicy okra, diced and set aside for garnish

Instructions

  1. Sautee the shrimp and kielbasa separately, each with Slap Yo Mama or Old Bay Seasoning. Once cooked, set aside.
  2. To cook the rice, use half of the diced tomatoes along with the rest vegetable stock (to make the ratio of liquid:rice). This will keep the rice from getting soupy or soggy on the nachos.
  3. Spread the tortilla chips evenly on the pan. Layer first with spoonfulls of rice, 1/2 of your peppers, and cheese.
  4. Next layer the cooked kielbasa, shrimp and chicken and then add remaining cheese, spread evenly.
  5. Broil or bake until the cheese melts (less than 5 minutes).
  6. Remove the nachos from the oven and garnish with the rest of your red and green peppers and hot pickled okra.
