This summer, I’m pledging to think outside of the box when menu planning. And though I’m not a vegetarian, I’ll be setting aside at least one day a week to omit the meat, like #MeatlessMonday. But whether you’re vegetarian or not, you may agree that it’s easy to fall into a rut with the same old recipes of sautéed or steamed vegetables. With farmers markets in full swing across the nation, there’s no excuse for that, and there’s no better time than now to eat fresh and seasonally. So today I rounded up nine vegetarian recipes that are healthy, seasonal and definitely not boring, all of which are inspiring me to get a little creative in the kitchen this summer. Here’s a challenge for you, if you have time. I’m diabetic, with A-Fib and stage 3 kidney disease. I should be eating lots of veggies, but I can’t find any that taste good. Although I love nuts of any kind, they are not kind to the kidneys. If you have any ideas, I would surely appreciate your help.
