Homemade meatball bake, a cozy fall and winter recipe on waitingonmartha.comHomemade meatball bake recipe on Waiting on Martha

I don’t know about you, but with football back on the big screen and our recent cold snap due to Irma I’ve been dreaming about nothing but flavorful, fall cozy dishes.  And when I think of cozy my mind immediately goes to any sort of meat and pasta bake.  But I also wanted a dish that was a breeze to make and a little less heavy.  Enter my turkey and mushroom meatball bake full of fresh garlic, basil, and warm rustic bead for dipping.  Is your mouth watering yet?

The trick to this dish, and really most one pot dishes is building of flavors.  Think sautéing garlic, browning meatballs, adding a rich marinara sauce, and topping that of with fresh mozzerella and basil.  Those flavors all in one skillet; you can’t ask for anything bolder, richer and more satisfying.  Oh wait you can, once you dip that warm rustic bread in to soak up all of that cheesy, tomato-y goodness…now we’re talking!

Another reason I love this dish is how easy it is to make.  You can make the meatballs by hand the night before, and pro tip…when I’m making this dish I’ll make double or triple the meatballs and freeze them for future use. As long as they’re wrapped well to prevent freezer burn meatballs should last in the freezer for at least 6 months.

Also, on the easy train is the sauce.  I love a great homemade sauce as much as the next person, but in a dish like this where there are so many other bold flavors a high quality jar of marinara will completely suffice.

I knew, honestly before it finished simmering, that this recipe would be a winner.  Great for tailgates, Saturdays at home, potluck dinners and just any old night of the week, these skillet turkey meatballs promise to satisfy everyone in the room.  It’s cheesy, packed with flavors, and a wonderful consistency that ensures the perfect bite in every bite.

Find the full recipe below, and tell me if you’re feeling the one-pan skillet meatball bake this fall!  Truly, MKR

Ingredients
  1. 2 pounds organic ground turkey
  2. 1 cup white mushrooms finely chopped
  3. 4 cloves of garlic finely diced
  4. 1 egg
  5. 1/2-1 cup Itallian bread crumbs
  6. 1 tsp. salt
  7. 1 tsp. pepper
  8. 1 tsp. garlic salt
  9. 2 tablespoons worcestershier sauce
  10. 2 containers of fresh sliced mozzarella
  11. 2 jars of marinara sauce, your choice of flavor
  12. Fresh basil for garnish
  13. 1 loaf of crusty bread (sourdough, french, whatever you'd like)
For the meatballs
  1. In a large bowl add the first 9 ingredients and mix until well combined.  You may need to add additional bread crumbs to create the right consistency.  You want the mixture to be wet, but able to hold together.
  2. Begin rolling your meatballs and set aside on a pan.  You don't want them to be too big as you want them to easily fit on to your bread; about one inch.
For the bake
  1. Preheat the oven to 400 degrees.
  2. Bring a large cast iron skillet to medium coated with non stick spray to medium high heat.  Add your meatballs and cook until almost done turning the meatballs over to brown on all sides.  Approximately 5-7 minutes.
  3. Add marinara to your skillet and layer with mozzarella.  Very carefully transfer to oven and bake until cheese is fully melted.  Approximately 7-10 minutes.
  4. Remove, garnish with fresh basil and enjoy!

Cinnamon Saltine Crackers

An irresistible and easy snack you must try
Filed Under > Food

Cinnamon crackers recipe on Waiting on Martha

Cinnamon Crackers.  If you were ever a fan of Cinnamon Toast Crunch as a kid or remember tasting cinnamon toast when you were young, these are for you.  I was always a huge fan of cinnamon toast personally.  Fresh out of the oven, the warm, toasty bread with butter, brown sugar and cinnamon sprinkled on top was absolutely divine.  Super simple, of course.  Yet so good.

I had albeit forgotten about cinnamon toast until recently, but I was brought instantly back as I was noshing on a bowl of buttery Saltines at our country club.  See, they serve the buttered crackers as a quick appetizer while you peruse the bar menu, and let’s just say that they’ve discovered my Kryptonite.  Once I start, I just cannot stop!  Dangerous I tell you.  And it had me thinking of how I could make them EVEN better at home.

Butter is sure enough an easy addition to these classic crackers, and the result is downright irresistible.  But add some cinnamon and sugar and you’ve got the ultimate snack.  It would be great for holiday parties, tailgates, after school treats, lunch boxes and beyond.  Find the super easy recipe below, and tell me if you’ll be whipping up some cinnamon crackers anytime soon!  Truly, MKR

A Weekend Getaway to Asheville with Buick

An Idyllic Long Weekend Getaway to the Mountains

You know I love a good getaway.  But with the blog, the shoppe and everything that comes with them plus a growing staff, I usually don’t find enough time for a proper escape.  And I’m not just talking about a little R&R; I’m talking about a trip full of relaxation AND the leisurely exploring the sights and to-do’s.  So when Buick recently invited me on a weekend road trip to Asheville, the hubs and I packed the Lacrosse and away we went.

There’s something so freeing about getting in a car and hitting the open road.  Especially when that road is full of mountains and gorgeous scenery.  The glory in a trip like this is not only in reaching the destination but in the journey itself!  And the great thing about Asheville is that it’s truly an easy road trip from Atlanta, clocking in just under four hours.  Which was made even easier because of our Buick Lacrosse, which proved to be the perfect road trip friendly sedan offering plenty of room for my 3+ suitcases, picnic basket, blankets, pile of hats and whatever Anthony decided to bring.  Yes I’m aware I’m an overpacker.

In heading to Asheville I highly suggest adding in extra time for the drive itself.  The route is full of must-stops; think cool mountain towns, really great antique shops, and of course Goats on the Roof.  The name says it all;  there are literally adorable goats on the roof you can hang with and feed.  The possibilities for stops are virtually endless though, especially while passing through Greenville, too.  Greenville always tempts me to pop into Grits & Groceries for some good ole comfort food, or even crowd favorite Caviar & Bananas for a gourmet snack.

I was so grateful that we gave ourselves plenty of time to pull over and stop along the way.  And by the time we reached Asheville, I was officially in OOO-mode.  I had only been to Asheville once before; last time I didn’t get the time to explore at all.  Instead I was checking into the Omni Grove Park Inn for some serious unplugging time.  So with this visit, I was eager to really take in all that I could, and that meant I had my list of suggestions via Instagram from you all with me!

We stayed, again, at the Omni, which served as a great “home base” for all of our to-do’s.  And I think one of my favorite things during the whole trip was actually driving along the Blueridge Parkway; we packed a picnic, stopping off at the lookouts along the way, and reveling in the views and the picture-perfect weather.  We literally couldn’t have asked for better weather for the long weekend, I’m telling you.  It was sunny and mild during the day, and a brisk chill to the air at night.  #swoon

We also visited the Biltmore, which was seriously mind-blowing.  I knew it would be impressive, but it was truly gorgeous and awe-inspiring.  The landscaping, the gardens, the biking paths, the sunflower field…the 11-mile long estate and all 8,000 acres is the epitome of grandeur and it’s maintained in the most tasteful way.  After experiencing it for myself, I realized that you really need an entire day to explore it all.  It’s breathtaking.

The Admiral, for dinner, was a much-mentioned recommendation, and it did not disappoint!  The vibes were great, and the food was even better.  We also hit up Wicked Weed, a beloved brewery where the hubs fell in love with sour beers.

On our last day, we went downtown and enjoyed seeing the farmers market and a local art show.  I feel like we ate, and ate, and ate, we made our way to Battery Park Book Exchange & Champagne Bar.  This was worth all the hype; inside there are thousands of books for perusing while you sip on wine or Champagne. I mean all of my favorite things!  And finally, we made it to the Beach Boys concert at the Biltmore.  Which, if you’ve been to the estate, you’ll be able to imagine just how magical this was.  Overlooking the insanely beautiful grounds and mountains, along with a view of the sunset…it was something special.

Asheville, you were a dream.  It was time much-needed, and an escape that was easy, enjoyable, and one that’ll have us back again soon.  We found ourselves actually spending a lot of time in the car on this trip, but the car itself was just as beautiful as the scenery.  I’ve never enjoyed sipping on coffee and cruising along the parkway as much as I did this weekend.  And a place like Asheville offers sights around every bend and corner.  A big thank you to Buick for helping to make this idyllic long weekend getaway a reality!  Truly, MKR
