Okay guys, I don’t love love love salads. There, I said it.
I will definitely eat them, but if I’m torn between a big green salad and a basket of shoe-string fries and a burger, I will most always choose the latter. I have friends that just love that leafy goodness, but I can’t honestly say that I do.
So recently I got to thinking that surely there are salads out there that I would love. For one, I am absolutely obsessed with Houston’s kale salad thanks to MKR and have tried her homemade rendition to great success. And thanks to some of our favorite food blogs, I did find some other good ones. For anyone like me, hopefully you’ll find some salad inspiration with these ten salad recipes above. GRILLED ROMAINE SALAD
ANYONE THAT KNOWS ME, KNOWS I LOVE, LOVE, LOVE SUMMER CORN AND BASICALLY ANYTHING GRILLED. THIS GRILLED ROMAINE SALAD IS DEFINITELY MY TYPE OF SALAD.
NOT ONLY IS THIS SALAD UNIQUE, THE COLORS ARE ABSOLUTELY GORGEOUS. I CAN ALSO EAT ANYTHING IF GOAT CHEESE IS INVOLVED. I'LL BE TRYING THIS WATERMELON RADISH, ORANGE & GOAT CHEESE SALAD ASAP.
SO I'M NOT CRAZY ABOUT BLUE CHEESE, BUT I HAVE A FEELING IT'S PERFECTLY PAIRED WITH THE FRESH PEACHES IN THIS SALAD BY FOODNESS GRACIOUS. I TRUST GERRY COMPLETELY ON THIS ONE.
I THINK THIS IS THE BEST KALE HAS LOOKED...EVER. A SPICY CAESAR RENDITION IS RIGHT UP MY ALLEY. AND ANYTHING TASTES BETTER WITH SOME ROASTED GARLIC, AM I RIGHT?

I LOVE ALL OF THESE FLAVORS SO MUCH, SO WHEN I SAW LINDSAY (AGAIN, NEW BFF) COMBINED THEM, I KNEW I HAD TO TRY IT AT HOME STAT. A BALSAMIC WATERMELON CHICKEN SALAD IS JUST AS INTRIGUINGLY DELICIOUS AS YOU'D IMAGINE.

THE MIXTURE OF WARM SQUASH AND THE TEXTURE OF LITTLE POMEGRANATE SEEDS TOTALLY DISTRACT ME FROM THE KALE I'M EATING IN THIS ONE. DEFINITELY A MUST-TRY!
As promised, I’m sharing two recipes that definitely deserve to grace your Easter Sunday table this year: Garlic & Herb Rubbed Lamb Chops and my favorite Spinach Salad with Mandarin Oranges, Sliced Almonds and Warm Bacon Vinaigrette. They’re not only beautiful, tasty dishes that make the meal feel extra special, but they’re both incredibly easy to make too.
But I know what you’re thinking; lamb chops don’t necessarily ever sound “easy.” There’s a reason lamb chops are saved for special occasions—and restaurants—right? But I think you’ll find that the quick preparation, fresh herb seasoning and the method of broiling on high heat are all pretty much no-brainer steps! These lamb chops are wonderfully crispy and downright delectable. And at the end, you’ll be enjoying tasty, tender chops, each encrusted with an herb melody that will have you wondering why you haven’t made it sooner.
As for the salad—it’s my mother’s favorite and one I grew up looking forward to finding on the dinner table. Again, another looks harder than it is recipe, and one thats sure to impress. The salad calls for fresh baby spinach, a can of organic mandarin oranges for a sweet citrus squeeze, raw sliced almonds for a subtle crunch and a homemade warm bacon vinaigrette that I could drink by itself…ha! Recently I’ve had so much fun sharing a behind-the-scenes look into my kitchen and the recipes we’re cooking up in the Rye kitchen via Snapchat (username WAITINGONMARTHA). And per your requests, I’m bringing you my recent recipe for my Vegan Pesto Heirloom Tomato Salad.
One of my favorite parts of summertime cooking is utilizing the fresh and seasonal ingredients that make each dish a hit. As you’ll remember, we recently nommed on an Heirloom Tomato Spaghetti Squash Lasagna a few weeks ago that was just beyond.
And the combination of this dish’s heirloom tomatoes, cucumbers, red onions, avocados, basil, cilantro, chives and vegan pesto sauce are vibrant and delicious. The crisp crunch of the tomatoes matched with the creaminess of the avocado and the mix of flavors from the fresh herbs creates the perfect bite. And how can I forget the sauce…it’s quite possibly the best ever vegan pesto sauce. So. Stinking. Good! Truly, MKR
