While staring at some tired-looking pumpkins on my mantel (or does it just appear that way because Halloween has past??), I remembered our super easy, super yummy recipe for both sweet and spicy toasted pumpkin seeds, and knew I had to pull it out of the archives to share today. If you find yourself with a few pumpkins you’re tired of looking at, or simply want a recipe for a great festive snack with some pepitas, you’re in luck with this one.
MKR originally whipped up both batches while craving something with a mouth-on-fire and cinnamon-sweet effect. And while the spicy version is definitely calling my name, having both options in front of you is nothing short of addicting…something you’ll quickly come to find out. Earlier this week, we shared a cheerful brunch tablescape that’s perfect for those lazy Sunday mornings. As promised, here’s my super easy cheesy hashbrown casserole recipe, which I assure you, will be quickly devoured by all. As you’ll see below, the recipe includes a generous helping of sharp cheddar cheese, green peppers, onions, shredded potatoes, and of course, jalapeños. But remember, like any great casserole, this can be made the night before, and really allows for you throw in anything you want…so get creative with your hashbrown casserole by adding whatever else you have on hand, and enjoy sleeping in a bit longer this weekend. And while I’m always discovering new tasty bites, I can say these top ten on rotation have kept me full and happy as of late. 1. Jeni’s Splendid Ice Creams: Well, duh. There really are no words for Jeni’s ice cream, but I’ll stand behind saying that it’s just the best ice cream around. I mean the Brambleberry Crisp? So. Good.
2. Hal’s Steakhouse: While I obviously don’t eat meat, any place that starts the meal with garlic bread is amazing in my book (insert “100” emoji here). I hear from very trusted sources that this is simply the best steak one has ever had…yes, even compared to Chicago haunts. It’s an Atlanta staple and has been here forever, so you know they’re doing something right in there. You can even find Hal himself still at the bar, which just adds to the charm. Tip: order the Bone-In Filet.
