I’m wrapping up my Christmas Day brunch with my savory Spinach & Goat Cheese Quiche. Or maybe it’s a tart? Whatever you call it doesn’t matter, just know it’s beyond delicious and honestly quite easy to make. And don’t forget only a few more days to enter our VIETRI holiday giveaway (below)! 1 pre made pie crust (or homemade...whatever floats your boat)
2 large bunches of fresh spinach (if you must you can use 1 package of frozen, but it's not quite the same)
3 cloves of fresh garlic minced
1/2 onion finely chopped
2 cups of shredded cheese (mozzarella/cheddar mixed)
1 cup of crumbled goat cheese
1 cup milk (or rice milk if you're not doing dairy)
salt/pepper to taste
1 tsp. olive oil
Instructions
Preheat oven to 375F.
Place crust in a tart or shallow pie dish, fork bottom and place pie beads on crust so it doesn't bubble. Bake crust for 20-30 minutes. Remove and set aside.
In a sauté pan add 1 tsp of olive oil let heat, add onions and garlic. Saute for 3-5 minutes or until onions are translucent. Begin to add spinach and cook until it just begins to soften 2-3 minutes. **You want the spinach to be softened but not wilted by the heat**
In a large bowl add eggs, milk, shredded cheese, and goat cheese. Stir in spinach, onion and garlic mixture. Add salt and pepper, stir together.
Add entire mixture to your tart pan and cook for 45-50 minutes or until the top starts to just brown. If crust begins to burn cover with pie covers or tin foil.
Let cool for 5-10 minutes and enjoy!

Today is a happy day. Why you ask? Well from beside it being another day where I get to wake up and be with all of you, today is especially happy because it’s the day before I leave for Bachelor Gulch. That’s right. Tomorrow I’ll be swishing down the ski hill, drinking hot toddys, and disconnecting from the world. I. CANNOT. WAIT.
But before I can enjoy happy hour on the mountain I have a few last minute boxes to check off my list. Namely, packing. Packing for a ski trip is always tough as there’s so much gear I need to take and since I’m an over-packer in general I always end up with about 3 checked bags. Though truth be told I’ve learned to embrace my over-packing spirit and just roll with it. So my Loves, here is what you’ll find in 1 of my 3 suitcases. truly, MKR
My new favorite Harding Lane throwback ski hat. So cozy and warm, plus I love the old school vibe. I’m VERY casual on the hill.
Red’s sunnies. Bold and fun, plus polarized which is a necessity for spring skiing.
Bobbi Brown beach body oil. Yes it’s called beach body oil, but it’s the most amazing for dry skin. Plus I love the smell of beach and suntan lotion no matter what the weather.
Buddha necklace, because I need a little sparkle and shine.
Over the past two weeks we’ve had the pleasure of sharing the recipes from our Woodland Wonderland Dinner with Rue Magazine, (a fruit filled ice ring, roasted sweet potatoes, wintery kale salad, braised short ribs, and sweet potato creme brûlée). But like all good things, our dinner must come to an end. And what better way to end than with a roasted cauliflower side dish to put all other side dishes to shame. Homespun Atlanta’s roasted cauliflower side dish with apples, cranberries, and sage. A spot on seasonal dish that as delicious as it is easy to make.
