Raspberry & Blackberry Goat Cheese Crostini recipe on Waiting on Martha Berry Goat Cheese Crostini recipe on Waiting on Martha

I have this love affair with toast.  There’s just something about the crisp crunch and delectable mix of toppings that gets me every time.  And crostini is just a fancy way to call it.  So like nachos—because you know how much I love nachos by now—the possibilities for your toasts and your crostinis are truly endless.  Today, without further adieu, I proudly give you a sure-hit Memorial Day appetizer: my Raspberry & Blackberry Goat Cheese Crostini recipe.

With spring’s bounty of fresh berries, this is the perfect dish that fools your guests into thinking it’s a lot fancier than it is.  To create the berry “shmear”, simply put your berries in a bowl, lightly smash some of them with the back of the spoon.  You’ll want some full berries for presentation sake when serving, but you’ll also want the smashed juice as part of the shmear.  I love mixing in the gourmet herb goat cheese from the store, but you can of course blend your own fresh herbs in goat cheese too.

In order, you’ll be happier if you spread the herb goat cheese first, then the berry “shmear”.  Next, top with the whole berries, and lastly garnish with your chopped mint.  You’ll toast on a cookie sheet in the oven until they’re golden brown.  These crostinis toast fast, so you’ll need to watch them closely so they don’t burn.  Voila!  Take those beauties out of the oven and serve on a marble board to hungry guests.

It’s simple.  It’s elegant.  And it’s downright irresistible when served up on a bright, sunny summer day!  We’re sharing this recipe as part of Shipt‘s Memorial Day virtual potluck, so be sure to check out the rest of the menu!  Truly, MKR

Waiting On Martha’s Pimento Cheese Dip

If you’re a regular reader of my blog you know I live my life as a vegan 90% of the time.  The other 15% I haven’t quite mastered because of my love of a few foods like great cheese and certain desserts.  Pimento cheese is a perfect example of my 10% indulgence.  But like a true 85%-of-the-time-vegan I make mine with Vegenaise.

Let’s take a quick pause here to talk about VegenaiseVegenaise is a vegan alternative to mayo, and I love it.  It is one of those rare finds that tastes exactly like the real thing, but has way less calories (though this recipe is not for anyone looking for a low calorie snack).  Try it, you’ll become obsessed.  I’ve already got everyone in my family hooked on it.  P.S. I’ve only ever gotten the purple label Vegenaise which is the one made with grapeseed oil, not sure about the other flavors.

And back to the cheese…pimento cheese is truly a southern addiction and beyond easy to make.  It’s perfect as a spread, on burgers, veggie burgers, and if you really want to try something good get some texas toast, a panini press and make a grilled cheese.  Oh My Goodness.

Anyway, hope you enjoy the recipe, and if you’re a first time Vegenaise taster let me know your thoughts.  xoxo

Waiting On Matha’s Pimento Cheese Dip

1 Block of organic cheddar

1 Block of organic pepper jack

1/2 Jar of pimentos (the small jar)

1/2-3/4 cup of Vegenaise (purple lid, Grapeseed oil flavor)

Cayenne pepper (optional)

  1. Shred/Grate all of the cheese and combine in a bowl.  Add 1/2 jar of pimentos including the liquid they are in, 1/2 cup of Vegenaise, cayenne pepper to taste.  Stir.  If it’s still to dry add additional Vegenaise.  The consistency is a personal preference, the Vegenaise should bind everything together, but shouldn’t break the ingredients down.
  2. Refrigerate for 30 minutes and serve.

**To make a smooth pimento cheese spread simply place everything in a food processor and blend.**

How to Build the Ultimate Cheese Platter

The Perfect Cheese Platter Proves There Really Are No Rules, But Here's Great Inspiration For Creating Your Own

This has to be one of my favorite shoots from the archives…an abundant cheese platter with all of the cheeses, fruits, vegetables, meats, spreads, breads and nuts one could EVER want, am I right? As a major grazer, I could opt for a cheese platter over some of the most appetizing entrees almost every chance I get, so this cheese platter inspiration has a special place in my heart.

As shared in the original post, MKR spells out what makes up the ultimate cheese platter, but she explains that there really are no rules. Creating a cheese platter is a great opportunity to try new flavors, mix old favorites and expand your knowledge in the tapas department. While there are no rules, it can also be a bit intimidating standing in front of the deli window, so MKR shares her tips for selecting a good variety of cheese and charcuterie (like include a variety of cheese textures: soft, firm, hard and blue…but always one “safe option”!), as well as a few favorite picks of her own (roasted tomatoes and grilled asparagus are always a hit).

Will you be serving a cheese platter at your Super Bowl party? What are your go-to’s on your board?  Cheers, Kat
