Sweet Potato Au Gratin

Our Thanksgiving feast continues with my number one favorite, no competition side dish…sweet potato au gratin.  Truth be told I’ve never met a potato I don’t like.  Ever.  And this, well this takes the cake.  By combining both sweet and russet potatoes and loading it up with garlic and two kinds of cheese….well let’s just say I hope you brought your stretch pants!  Enjoy.  truly, MKR

Ingredients
  1. 1 cup heavy cream
  2. 1 cup half & half cream
  3. 4 cloves of garlic minced
  4. 1 1/2 pounds sweet potatoes, peeled and sliced
  5. 1 1/2 russet potatoes, peeled and sliced
  6. 1 tablespoon fresh thyme chopped
  7. 1 tablespoon kosher salt
  8. 1 teaspoon black pepper
  9. 2 cups shredded Gruyere cheese
  10. 2 cups shredded cheddar cheese
Instructions
  1. Preheat the oven to 400 degrees.
  2. In a small pot bring cream, 1/2 and 1/2 and garlic just to a simmer and set aside.
  3. Butter a casserole dish or gratin dish and set aside.
  4. Stir the cooling cream occasionally to help prevent skin from forming.
  5. Start building your layers. Spread the sweet potatoes out in a single layer, sprinkle with salt, pepper, thyme and cheese. Continue building layers, alternating sweet and russet potatoes until your casserole dish is filled.
  6. Stir the garlic and cream sauce once more then pour it over your potatoes, trying to distribute the cream as evenly as possible. Sprinkle cheese over the top, setting aside 1/4 cup of both the cheddar and Gruyere.
  7. Cover the dish with foil and bake in the middle of the oven for 50 minutes. Remove the foil and sprinkle with the remaining cheese and bake an additional 20 minutes or until the top is lightly browned and the potatoes are tender when pierced with a sharp knife.
  8. Remove from the oven and let cool for 20 minutes before serving. **If you are using a deeper casserole dish you'll have to extend cooking time**

If you follow me on Snapchat (username WAITINGONMARTHA) it will come as no surprise to you that I’m a firm believer that everything tastes better cooked, grilled or smoked (preferably on the Big Green Egg) over an open flame. EVERYTHING.  And while I’m a pescatarian, I don’t let you meat eaters have all of the fun when it comes to barbecues.  Over the years, I’ve perfected my go-to recipe for the best ever grilled veggie burger…and let’s just say that it could tempt even the biggest carnivores at your Memorial Day party. 

The problem with veggie burgers, if you’ve ever had them, is they tend to fall into two categories: bland tasting and stiff as cardboard, or an un-grillable mushy-like consistency that is neither appetizing or easy to grill.  So, I’ve made it my mission to perfect a grillable, tasty, veggie burger that will give any beef burger a run for it’s money.  And after numerous trial and errors, I believe I have finally figured it out.  With a combination of black beans, cauliflower rice, grilled onions, panko breadcrumbs and a plethora of sauces and spices, this may just be the best veggie burger recipe out there, if I do say myself.  Of course I couldn’t forget all of you carnivores, so along with my veggie burger, I’ve included my ultimate peppercorn crusted beef burger recipe below.  Both recipes masterfully satisfy that burger craving (because those exist, especially on a long weekend), and I’m telling you that it’s quite hard to believe they’re homemade.

All week, and just in time for the long weekend, join us as we usher in the start of grilling season and celebrate the art of the barbecue.  It doesn’t stop after today’s drool-worthy burgers, we’ll be keeping it going with what I like to consider the Top 10 Memorial Day Party Essentials, all of the beloved sides every barbecue needs (think homemade coleslaw, macaroni salad & more), a great Memorial Day party outfit and last but not least, root beer floats (which you can most definitely make boozy!).  Tell me friends, what are you most looking forward to grilling this season?  Truly, MKR

How to put together a Halloween Candy Board

A spooky and fun take on just what you can put on a "cheese" board

There are a lot of food and entertaining trends I CAN’T get behind, boards for everything is not one of them.

Collecting your classic cheese and charcuterie boards in all different shapes and sizes has become as popular as collecting matchbooks or blue and white chinoiserie pieces. Not only do these boards look gorgeous placed around your kitchen, but they’re extremely practical. Practical yes for your classic cheese plate obviously, but if you’re not thinking outside of the cheese board it’s time to start. And what better way than loading one with all the Halloween treats your stomach can handle for a Halloween Candy Board.

Crafting a Halloween Candy Board is truly easier than it looks. Personally, I like to start from the center and work my way out. Mix up colors and types of treats like chocolate pumpkins, cupcakes (I just added eyeballs to store bought cupcakes), homemade mallows, and cookies. For those local, Pum’s Sweets made these gorgeous mini sugar cookies!

Always include a bowl, or rather three if you’re doing more than one as odds always work better in this case. My pumpkin bowl is filled with a classic Autumn Mixture of mine, recipe coming on Friday! And if you feel like making your own bark I highly suggest this easy bark of mine. I make it every year!

Aesthetically make sure you’re angling treats all different directions so it doesn’t look like your Halloween Candy Board is tilting or moving in one specific direction. And try to make everything flow together so you have very few spaces or gaps showing. Lastly, have fun and don’t take it too seriously.

One more thought. I love a good grazing board as much as the next person, but based on everything that’s going on grazing is a no-no. To help make your Halloween Candy Board more socially distanced friendly grab plenty of inexpensive tongs and make sure everyone has their own that way they can pile the treats on their plate and simply place the tongs in a “dirty” bucket once they’re done for the evening. And grab some Halloween themed goodie bags so guests can take a few goodies home with them.
