10 Salad Recipes for People Who Don’t Love Salads

Okay guys, I don’t love love love salads. There, I said it.

I will definitely eat them, but if I’m torn between a big green salad and a basket of shoe-string fries and a burger, I will most always choose the latter.  I have friends that just love that leafy goodness, but I can’t honestly say that I do.

So recently I got to thinking that surely there are salads out there that I would love. For one, I am absolutely obsessed with Houston’s kale salad thanks to MKR and have tried her homemade rendition to great success.  And thanks to some of our favorite food blogs, I did find some other good ones. For anyone like me, hopefully you’ll find some salad inspiration with these ten salad recipes above. There’s hope out there!  Cheers, Kat

P.S. And if eating salads is a prerequisite for owning any of this collection, I’m going to have to start.

Mussels: Two Ways

A Roasted Tomato, White Wine Garlic Sauce and Coconut, Cilantro & Serrano Pepper Blend
Filed Under > Everyday Dinner

How to cook mussels 2 ways via Waiting on Martha Mussels recipe via Waiting on Martha Mussels: 2 Ways via Waiting on Martha Roasted Tomato & White Wine Garlic MusselsCoconut, Cilantro & Serrano Mussels via Waiting on Martha #recipe

Pour me a glass of vino with a dozen white wine mussels and crispy shoestring fries and you have one happy lady. This accompaniment has always been a favorite of mine, and I knew it was high time to get to work in the kitchen to put my own twist on these delicious little mollusks.

The best thing about mussels is the fact that you really can’t get them wrong.  But I’ll admit, I was a bit apprehensive about trying my hand at them at home for some reason.  To my delight, cooking mussels is actually super easy because they serve as the perfect vessel to carry any flavor you’re craving. Really, all you need is a soupy broth and tons of crusty bread to soak it all up, and your dish will be a success.  Promise.

As you saw a peek last night on Instagram, I brought together some of my favorite flavor combinations to create my two new favorite ways to cook mussels. The first recipe has roasted tomatoes soaking in a white wine sauce with garlic, basil and shallots.  White wine mussels will always be a favorite, and this blend hits the spot. And our second rendition is just as tasty; a creamy coconut milk and butter sauce with cilantro and serrano pepper and hint of lime. The creaminess proves to be the perfect counter to the spice of the pepper, and the result is just divine.  Truly, MKR

How To: Succulent Arrangements

succulent arrangements#DIY succulent arrangementsSucculent arrangements make the perfect giftDIY succulent arrangementsDIY succulents

The next time you need a hostess gift rather than showing up with the same bouquet of tulips why not hand your host succulent arrangements you created yourself?  Succulents are one of the most interesting and beautiful plants, plus they’re practically impossible to kill.  And their recent popularity have made finding them easier than ever.  I purchased mine at my local Home Depot store.  All you need are some terracotta pots (or these guys or this if you’re feeling fancy), some rocky soil, and a few different types of succulents.  Voila you have a unique gift ready to make someone’s day.  Below I’ve included my recipe for succulent success below plus a few helpful tips to get your arranging on and I highly suggest this book.  Happy almost weekend Loves!  truly, MKR

P.S.  These would make a lovely Mother’s Day gift!

How To: Succulent Arrangements

Ingredients
  1. Succulents of all different shapes and sizes
  2. Soil; gritty, sandy, and rocky soil only.
  3. Pots; any type of pot or container will work as long as there is a drainage hole.
Instructions
  1. Fill your pots 3/4 full with soil
  2. Remove succulents gently from containers tapping off access dirt. Arrange the succulents however you see fit.
  3. Add additional soil and gently pat around the arranged succulents.
  4. Water lightly (see below for watering instructions)
Notes
  1. Sunlight. You want your succulents to have sun, but not all day sun which is surprising as these plants are known as dessert plants. Things to look for; yellowing of color can mean too much sun or overwatering, but leaning towards the light source can mean not enough.
  2. Water. During the warmer months succulents go through their growing phase and should be watered once a week. Don't drown your arrangement with a cup of water, pour a little and wait until the dirt has completely absorbed the water, then repeat 1-2 times. When it cools down succulents enter their dormant phase and need much less water.
  3. Re-potting. Though it may not look like it succulents are growing and should be repotted once a year.
