It’s All Easy’s Zuni Sheet Pan Chicken & Zucchini Cacio E Pepe

Two Must-Try Weeknight Recipes from Gwyneth Paltrow's New Cookbook

It's All Easy Zuni Sheet Pan Chicken and Zucchini Noodles recipeZucchini Cacio e Pepe recipe from It's All EasyIt's All Easy pan roasted chicken recipeIt's All Easy cookbook recipes

Two weeks ago, the team was eagerly taking notes and happily trying recipes from GP’s newest (and quite possibly most gorgeous) cookbook, It’s All Easy, in the Williams-Sonoma test kitchen. On the menu? The Zuni Sheet Pan Chicken and Zucchini Cacio e Pepe.

The entire cookbook is written for the super-busy home cook (I’ll raise my hand to that!).  And it was easy to see the book’s dedication to fresh, rich, simple flavors in the sampling of recipes we experienced.  Both dishes were equally dinner party-worthy, equally easy, and extremely approachable using easy ingredients from the pantry and grocery store.

The Zuni Sheet Pan Chicken was inspired by San Francisco’s Zuni Cafe (at the top of my list for the next visit!) and its world famous roasted chicken dish.  GP put her own spin on it to become a go-to weeknight meal with roasted garlic, lemons, anchovies, and giant pieces of french bread that caramelize with the juices of the pan and quite possibly make up my favorite crunchy, gooey bite. I was so impressed that this one-pan/one-sheet dish can be finished in under an hour (which is pretty rare in my kitchen when roasting such a large bird), and being made in only one dish it makes cleanup sooo much easier. The beauty of this recipe too is it’s truly a complete meal; a tender roast chicken atop crispy, toasted bread and a bed of fresh, seasonal greens.  I followed the recipe to a tee, adding just a bit more garlic and bread, because in my world you can never get enough garlic and bread.  Ever.

The second recipe we learned while in the WS test kitchen was GP’s Zucchini Cacio E Pepe. It’s almost not even fair to call this a recipe because it’s so, so easy.  If you haven’t used or thought of using a spiralizer, this recipe alone is reason to take the plunge.  Beautifully simple, yet classic made in under 15 minutes which means it can be made in a pinch, any night of the week. Think of it as your new favorite summer pasta dish; healthy with its zucchini noodles and light with a dusting of salt, pepper and Parmesan cheese.  One great tip we learned during the class; when spiralizing make sure to spin about four times and tear the noodles.  If you spiralize the entire zucchini in one go you’ll have one giant zoodle making it more difficult to eat.

Next up for me I plan to make GP’s black bean soup and taquitos, but I’d love to know if you’ve checked out the book and what successes you’ve had with the recipes?  Truly, MKR

P.S. Hop over to yesterday’s post to read about our team’s recent cookbook club experience at Williams-Sonoma and enter to win your own copy of It’s All Easy and GP’s favorite tool, the spiralizer. xo

My Journey With Young Living Essential Oils

Essential Oils on Waiting on Martha

After spending almost two years personally using and seeing first hand just how Young Living Essential Oils can truly transform your life for the better I thought I’d put all of the questions I receive on a daily basis into one page that everyone can use as a general resource, and keep coming back to as you progress on your own journey to a healthier, non-toxic, natural lifestyle.  I’ll, of course, keep adding to the page as the questions keep rolling in, so please keep checking back.

While I really believe in you reading through all of the Q&A below, I do acknowledge there’s a lot of information to follow. So if you know you want to sign up for Young Living skip to almost the bottom of this page to read about the sign up process, or just click HERE to fast forward!

Now let’s get started with the questions shall we?

one of my many bowls of essential oils.

How did you learn about essential oils? For me, it was a pretty natural progression. Back when I lived in Chicago I took a serious interest in creating a “green” household.  What does that mean? It means I spent time educating myself and taking the time to learn what really was lurking in all of my household cleaners, detergents, candles, etc. I was of course horrified by the results, and quickly switched out all of my cleaning products and detergents to non-toxic ones.

In just doing that one little thing, my allergies and skin ailments quickly cleared up and it was like I was breathing new air.  This change was what actually led me to Young Living Essential Oils.  I, unlike most, actually got started with Young Living by their Thieves Cleaning Set. I loved the Thieves so much, I quickly added in the Young Living Essential Oils, their makeup, supplements, and pretty much everything else.

All Natural Cleaning Solutions to Try Today, @waitingonmartha

some of my favorite Thieves Cleaning Products

But before I tried Young Living I, like many, tried going the organic oils you get off of Amazon or at certain grocery stores before diving into Young Living.  I thought if it’s organic, then it’s fine.  Well, it only took one misstep there to learn a huge lesson. One night I was adding those organic oils to a bath and they literally burned my skin. Like literally burned it to the point of severe. I quickly found out that organic can still mean hidden toxin and chemicals.  Not YL. If it says lavender, that’s all it is.  Sustainably farmed lavender pressed into oil.  No fillers, no “organic toxins” just the plant, flower or seed.

A great example of this is for a 5ml bottle of YL Rose oil it takes 22 pounds of rose petals.  22 pounds! But you can trust that when you’re dabbing that rose oil on your skin or mixing it with water to create rose water that all that is in it is actual rose petals. That’s the peace of mind I have with Young Living, and you can’t put a price on piece of mind!

What do I use oils for? For just about everything!! Whether you are looking for oils to help you sleep, for natural immune system support, for energy, for focus, for relaxation, for your kids, for natural alternatives to cleaning products, the list is endless, there is an oil for that!! And you will learn along the way. Young Living even has a Pet line that Addison absolutely adores! Plus as I stated above, I use Young Living’s entire cleaning line and many of their supplements.

My favorite YL products are as follows:

For Diffusing: Christmas Spirit, Peace & Calming, Valor, Purification, Orange + Peppermint + Cinnamon Bark, Abundance, cedarwood

For a Bit of Energy (direct roll-on to my skin or to diffuse): Stress Away, RC, Citrus Fresh, Orange, Lemon, Peppermint

For Anxiety & Relaxation (direct roll-on to my skin): Lavender, Vetiver, Cedarwood

For a Clean Home: Thieves, Purification, Lemon, Tea Tree

For Clear Skin: Copabia, Frankincense, Tea Tree, Botswalla Cream

For Immunity: Breathe Again Roll On, Rosemary, Oregeno, Clove, Cinnamon, Orange, Lemon

Supplements: Vitamin C Every Morning, Ningxa, Super Greens, Thieves Cough Drops (these are the BEST ever)

For the House: Thieve Laundry Detergent, Thieves Dish Soap, Thieves Foaming Hand Soap (probably my favorite household product), Thieves Dishwasher Detergent, Thieves Counter Spray, Purifcation to remove smells

Personal Care: Thieves Toothpaste, Thieves Mouthwash, Hubs Loves their Minty Shave Gel, Mineral Veil, Sunscreen, Insect Repellent, Thieves wipes (carry these in my bag), Thieves, Mountain Springs Deodorant, Panaway for aches, Peppermint for my head

Additional Favorites: All of their chapsticks (grapefruit, peppermint, lavender), Bath Bombs, Shower Bombs, Makeup Brushes, Lavender Seedlings Linen Spray, their entire pet line!

More of my favorite household & personal care products.  I live for the Foaming Hand Soap. Not kidding!

Why Young Living? YL has an unmatched Seed to Seal process to guarantee the purity & potency of every oil. Trust me, I started with no-name, less expensive “organic” oils, and I had a terrible incident where they actually burned my skin while in a bath.  That has NEVER happened with Young Living, as I can completely trust their process. Each batch of oils is rigorously tested in-house for therapeutic viability & they are so confident in their products that you can actually visit the farms & participate in the harvest/distillation process. What you’re buying elsewhere could be marketing 100% pure when in fact companies are only required to put 5% of the actual essential oil to be labeled that way.

Another reason I love Young Living is the community I knew I was investing in. I am a person who needs accountability and speaking to the team above me gave me perspective knowing I’d have people making sure I’d use my oils, making the lifestyle change I was desiring. Plus no other oil brand has as many non-oil products.  While I don’t always need additional oils each month, I always need my household cleaning products, makeup, or personal care.

my own DIY roller ball blend (palo santo + orange + cedarwood + lavender)

What’ the difference between the Essential Oils and the Vitality Oils?  The Vitality line is edible.  I use the Vitality line to season food, olive oils, and of course my coffee and tea! You can also diffuse your Vitality Oils, but just know that they are safe to digest as well!

Young Livings Vitality Line is completely edible! This is a DIY flavored olive oil I created.

If I’m signing up as a wholesale distributor, do I have to sell oils?
Absolutely not! Signing up as a wholesale member/distributor is simply to enjoy the 24% discount – you’re not required to sell anything. You order your Premium Starter Kit (either in oils, cleaning products, or makeup), order additional oils and product as you run out or want to try them, no strings attached!

What about becoming a retail member? I’m going to go with a hard no on becoming a retail member.  You want to become a wholesale distributor member as you’ll then always receive the 24% discount on everything, earn points for future purchases, received free monthly oils, and most importantly be invited to our private Facebook communities where you’ll be able to really learn and understand how best to use essential oil. Being a retail member gets you none of this, plus you’ll always have to pay full price.

Okay, if I sign up am I obligated to make monthly oil purchase?  NO.

But, if it’s a membership, what’s the monthly cost after I purchase the Premium Starter Kit?
There isn’t one! All that is required to obtain the 24% discount on your oils is to purchase at least $50 during a 12 month calendar year. That’s it! There really is no catch to that and it’s as simple as buying Thieves and Lavender. Two oils I use daily and I recommend all households to have. Combating sickness and keeping you grounded? Check and check!

Do I have to start selling Young Living essential oils?
As stated above the answer is NO! But if you’re as passionate about the oils and Young Living as much as I am, and want to consider selling I’d love to talk to you about it.  Email any questions about joining to me at mandy@waitingonmartha.com.  But again, you never have to sell a single oil if you don’t want to.  When making any purchases you will, however, get a personal referral link and I always appreciate any referrals that come my way!

Okay, I’m ready, how do I sign up?

Ordering works like most any other site you shop from online with one main difference; you must choose between becoming a Wholesale Member or Retail Member. As discussed above, you really do NOT want to be retail as there are zero benefits.  So first click HERE and pick member.  Remember, YOU DO NOT HAVE TO SELL OILS OR PURCHASE MONTHLY OILS AS A MEMBER. By signing up as a member you’ll choose a Premium Starter Kit of your choice for more than 50% off plus a FREE diffuser of your choice, and will get 24% off retail prices on every oil and any other Young Living product forever! When signing up you’ll be received a product bundle that retails for about $350 but you’ll only be spending roughly $160 + tax and shipping.  For my PSK I did choose the Aria diffuser because it’s beautiful and much cheaper when pairing it with the Premium Starter Kit but I also have the Home and Dewdrop design diffusers and love them!

What’s in the Premium Starter Kit (PSK)?

You can become a member with the purchase of any PSK (oils, makeup, or Thieves cleaning). When I first signed up I purchased BOTH the oils and thieves cleaning because it was such a great deal that I’d never get again, and I knew I’d use every single thing.

The most popular PSK however, is of course the oils.  The Oily PSK will include 11 bottles of oils :: Lavender 5-ml, Peppermint Vitality 5-ml, Lemon Vitality 5-ml, Copaiba Vitality 5-ml, Frankincense 5-ml, Thieves Vitality 5-ml, Citrus Fresh 5-ml, Raven 5-ml, DiGize Vitality 5-ml, PanAway 5-ml and Stress Away 5-ml. It also comes with a FREE Dewdrop diffuser, but if you want to invest a bit more, the Aria is my pick.

You’ll also receive a roller fitment which I like to use on Stress Away and throw in my purse to have with me all the time, Thieves Household Cleaner 1-oz sample, 10 “Love It? Share it!” sample business cards, 10 “Love it? Share It!” sample oil bottles which are great for gifting, 2 Ningxia Red 2-oz. samples, Young Living Product Guide and Product Price List, Essential Oil Magazine and Member Resources.

In addition to what Young Living includes, you’ll be investing into a community and team of other people on their journey through wellness. I’ll personally connect with you via email welcoming you to Essential Oils and send over some information I think is vital to utilize your oils. You’ll be invited to our team’s private Facebook groups that include knowledge, resources, classes to learn more about oils and the best support and encouragement from everyone there!

Signing up, one more time…

  1. Visit this site, and pick member
  2. Make sure my sponsor number is showing #10611174. This is super important, as you won’t get access to all of the great group benefits if you do not have me as your sponsor/enroller.
  3. Click continue, a picture should pop up confirming me as your enroller. Click continue.
  4. Next choose the Premium Starter Kit of your choice (you can choose more than one, when I signed up I chose BOTH the Thieves Cleaning Kit and Dew Drop Oils Kit because it was such a great deal)
  5. Check the Essential Rewards box (read more about essential rewards below)
  6. Add any additional products (check out my list above, but I highly suggest adding the package of fitments so you can make every oil a roller, Breathe Again Roller Blend, Christmas Spirit which I use all year round, Eucalyptus, and Thieves Foaming Hand Soap)
  7. Choose your method of shipping and complete your check out.
  8. I’ll then be notified and you’ll receive an email from me with lots og information and invitations to our private Facebook group and email list.

Why join Essential Rewards?

Essential Rewards is one of my favorite perks of being a member.  Each month I receive points for free products plus 3-4 free oils when simply re-ordering.  But you DO NOT have to join ER, and if you do you can cancel at any time with NO penalty!

  • save with reduced flat-rate shipping
  • change your order monthly to your desired needs
  • schedule your ship date monthly
  • cancel at any time
  • earn extra monthly promotions through Young Living – like free oils and other products!
  • earn point to redeem for free products
    • month 1-3 earn 10% back in point, months 4-24 earn 20% back, and months 25+ earn 25% back in points to redeem for free product
  • earn free oils at months 3, 6 9, and 12 month markers as a thank you for your loyalty!

And that’s it! You’re now on your way to becoming as obsessed as I am. Here’s another page that simply breaks down the check out process a bit more, but if you have any additional questions, just email me: mandy@waitingonmartha.com. And if you have any questions about doing Young Living as a business let’s chat about it further! And make sure you’re following along on Instagram where I share all things essential oils, green beauty, and everyday favorites. Truly, MKR

The Classic Mint Julep Recipe Three Different Ways

A new spin on a classic recipe

mint julep

I’ve always adored The Derby.  It may be because it falls on my birthday.  Or it may be because it’s a day that celebrates extra large hats, pastels, and dainty lace gloves.  Or it may be because I get to sip a mint julep while celebrating my birthday and wearing an extra large hat and dainty lace gloves.  Yep, thats it.  And this year for The Derby, I bet big and created three different ways to enjoy this festive libation.  The classic julep, a strawberry mint julep and a tangerine julep complete with fruit filled ice molds, (simply buy THESE and freeze the juice with a tad bit of puree the night before).  So Loves grab your hat, pick your horse and happy Derby!   truly, MKR
