On a recent trip to Mexico, the Mr. and I fell in love with a little cocktail called The Paloma.  The Paloma combines tequila with the tart and fresh flavors of grapefruit and lime to create the most refreshing of libations.  A typical Paloma recipe is topped with a lime or grapefruit wedge, but I really love adding a slice or two of jalepenos for some heat.  Or try a fresh sprig of thyme or mint to cool it down.  Either way you shake it, or top it, I guarantee this Paloma recipe will quickly become a new five o’clock favorite.  Truly, MKR

  1. 2 oz. Reposado Tequilla
  2. 1/2 oz. fresh lime juice
  3. 2 oz. fresh grapefruit juice
  4. a pinch of salt (or a salted glass rim)
  5. agave syrup to taste (optional)
  6. Ice
  7. Garnish; lime, mint leaves, thyme, or jalapenos if you like some heat
Instructions
  1. In a shaker filled with ice mix tequila, grapefruit juice, and lime.
  2. Shake, shake, shake.
  3. Pour over ice, add a pinch of salt, and garnish.
  4. Add agave if you feel it's not sweet enough.

Yesterday’s fun cocktail cove with Lilly for Target called for the perfect bite.  And there’s nothing I love more than a recipe that combines salty and sweet flavors, while also incorporating a little sugar and spice.  This Black Bean, Serrano and Pineapple salsa does just that.  The tart, citric pineapple perfectly combines with the heat of the serrano peppers and the smooth texture of black beans.  The freshness of each flavor packs a punch, making it the perfect go-to for a hot summer day, and you can even prep all of the ingredients the night before.  After mixing up a batch, I really couldn’t stop myself from eating it all…and I’d go so far as to say it’s my new absolute favorite salsa!  Truly, MKR

Ingredients
  1. 1 large pineapple, diced
  2. 1 can of black beans, rinsed
  3. 1 serrano pepper de-seeded and thinly sliced
  4. 1/2 red onion diced
  5. 1/2 cup fresh lime juice
  6. 1/4 fresh chopped cilantro
  7. salt to taste
Instructions
  1. Combine all of the ingredients in a large bowl and gently mix. Add additional lime juice and salt to taste.

As you may have noticed I’m on a cocktail kick as of late.  Now just to be clear no cocktail will ever replace my love of wine, but sometimes I you just want a great martini.  So the amazing people at Smirnoff sent me their ridiculously good Lemon Sorbet Light Vodka and I decided to muddle a little lavender and voila…my new favorite Lemon Lavender Martini was born.  I shared this goodness on Crave Local yesterday, but in case you missed it, here’s the oh-so-easy recipe.  Cheers!  truly, MKR

Ingredients
  1. 2 oz. Smirnoff Sorbet Light Lemon Vodka
  2. 1 oz. lavender syrup (or 1-2 drops lavender bitters with simple syrup or agave to taste)
  3. 1/2 oz. fresh squeezed lemon juice
  4. Lavender stems for garnish
Instructions
  1. Combine all ingredients in a shaker over ice. Shake, shake, shake.
  2. Pour into a martini glass.
  3. Garnish with lavender stems and enjoy.
  4. *To pump up the lavender factor, muddle 1-2 stems in the shaker before adding the ingredients.
