The perfect sized sweet treat, this mini blueberry pie recipe deserves a spot at your next summer soiree or picnic in the park.  I’ve shared my love for hand pies before (a peach rendition and strawberry rendition), and I always consider them my go-to for an easy, delicious dessert.

So with blueberry season in full swing, I’ll be celebrating one of my favorite summer flavors. These blueberry hand pies with lemon blueberry glaze include a fresh blueberry purée and that homemade, buttery crust that you just can’t beat. And since the lemon blueberry glaze is so sweet, there’s very little sugar in the actual hand pies (my cue for enjoying more than a few). 

The hand pie recipe is super simple, but there’s one key thing to remember: keep the crust thin to avoid overpowering the filling’s flavor.  You want a good crust-to-filling ratio after all.  Tell me, will you be enjoying this delightful summer dessert soon?  Truly, MKR

Ingredients
  1. FOR THE DOUGH
  2. 5 CUPS ALL-PURPOSE FLOUR (SPOONED AND LEVELED), PLUS MORE FOR ROLLING DOUGH
  3. 2 TEASPOONS SALT
  4. 2 TEASPOONS SUGAR
  5. 4 STICKS COLD UNSALTED BUTTER, CUT INTO PIECES
  6. 8 TABLESPOONS ICE WATER, PLUS 4 MORE, IF NEEDED
  7. ROUND COOKIE CUTTER
  8. FOR THE FILLING
  9. 3-4 CUPS BLUEBERRIES
  10. 1/4-1/2 CUP SUGAR
  11. 1 TABLESPOON CINNAMON
  12. 1 TABLESPOON FRESH LEMON JUICE
  13. FOR THE GLAZE
  14. 2 cups confectioners' sugar
  15. 4 tablespoons fresh lemon juice
  16. 4 tablespoons fresh blueberry juice
Instructions
  1. FOR THE CRUST...
  2. IN A FOOD PROCESSOR, PULSE FLOUR, SALT, AND SUGAR SEVERAL TIMES TO COMBINE. ADD BUTTER. PULSE UNTIL MIXTURE RESEMBLES COARSE MEAL, WITH JUST A FEW PEA-SIZE PIECES REMAINING.
  3. SPRINKLE WITH 8 TABLESPOONS ICE WATER. PULSE UNTIL DOUGH IS CRUMBLY BUT HOLDS TOGETHER WHEN SQUEEZED WITH FINGERS (IF NEEDED, ADD UP TO 4 TABLESPOONS MORE ICE WATER, 1 TABLESPOON AT A TIME). DO NOT OVERPROCESS.
  4. TURN DOUGH OUT ONTO A WORK SURFACE; FORM DOUGH INTO TWO DISKS. WRAP TIGHTLY IN PLASTIC, AND REFRIGERATE UNTIL FIRM, AT LEAST 1 HOUR.
  5. ABOUT 15 MINUTES BEFORE THE DOUGH IS READY TO BE REMOVED FROM THE REFRIGERATOR PRE HEAT OVEN TO 350 DEGREES.
  6. FOR THE FILLING...
  7. PLACE BLUEBERRIES, SUGAR, LEMON, AND CINNAMON IN A LARGE BOWL AND LET MACERATE FOR APPROXIMATELY ONE HOUR. MASH A BIT OF THE BLUEBERRIES SO YOU BEGIN TO BREAK THEM DOWN AND ALLOW FOR JUICE.
  8. UNWRAP YOUR PIE DOUGH; PLACE ON A LARGE PIECE OF FLOURED WAXED PAPER OR SURFACE. ROLL DOUGH INTO TWO 14-INCH ROUNDS. USING YOUR ROUND COOKIE CUTTER CUT OUT ROUNDS AND PLACE HALF OF THEM ON TO A LINED COOKIE SHEET.
  9. SCOOP APPROXIMATELY 2 TABLESPOONS OF BLUEBERRY MIXTURE AND PLACE ON TO CUT PIE DOUGH. PLACE ANOTHER PIECE OF PIE DOUGH ON TOP CREATING A COMPLETE HAND PIE AND GENTLY PRESS DOWN THE SIDES.
  10. USING A FORK MOVE AROUND THE BORDER AND PRESS DOWN TO CREATE A CREASE AND SEAL YOUR PIES. REPEAT UNTIL THERE ARE NO MORE ROUNDS LEFT.
  11. Make sure to reserve a few tablespoons of blueberry juice for your glaze!
  12. BAKE 18-20 MINUTES OR UNTIL PIES TURN A GOLDEN BROWN.
  13. LET COOL 5-10 MINUTES BEFORE ICING.
  14. FOR THE GLAZE...
  15. Place confectioners' sugar, lemon and blueberry juice in a medium bowl and whisk until smooth. Glaze should be thick, yet pourable keep adding more sugar or liquid to achieve desired consistency.

Okay, so I admit it I originally wanted to make a Blackberry Bourbon Smash because of how beautiful it is.  While I do enjoy a sip of Bourbon every now and then, I would never call myself an actual bourbon lover.  But once I smashed and swirled up a BBS or Blackberry Bourbon Smash, I was surprised at how much  I loved it, plus it didn’t hurt that it was really fun to make.  And bonus a Blackberry Bourbon Smash is definitely one of those cocktails that appears more impressive and difficult to whip up than it actually is, which makes it perfect when entertaining guests.

While the recipe in itself is on the simpler side there are a few things to note.  First, the key to a great Blackberry Bourbon Smash is definitely the ice.  You want that perfectly shaved ice that makes you almost feel like you’re eating a snow cone. So where do you find this ice, you ask?  I’ll let you in on a secret: if you have a local Whole Foods, the seafood department will give it to you for free.  Just be sure to ask for the ice that’s NOT touching the fish! 

Another important part to this smash is the fresh, high quality blackberries.  They’re really the hero to this cocktail story, so it’s worth using high quality, organic blackberries at the height of the season. Once you snag your black berries the rest is pertty simple: muddle the blackberries with fresh mint, pour the mixture into your glass, top it with shaved ice, add bourbon, stir, garnish, and enjoy.  One quick note; if you are a regular bourbon drinker, you’ll probably opt for no simple syrup, but if you need a little something sweet to combat the bourbon, just dd simple syrup to taste.  Though I’d suggest waiting until after you stir together your blackberry mixture, bourbon and ice to see if you need the simple syrup…I actually enjoyed the drink without.  Cheers, friends!  Truly, MKR

Blackberry Bourbon Smash

Ingredients
  1. Fresh blackberries (for muddled mixture and garnish)
  2. A few leaves fresh mint, to muddle
  3. Bourbon of choice
  4. Simple syrup
  5. Fresh mint, to garnish
Instructions
  1. Muddle blackberries and a few mint leaves to get a jam-like consistency.
  2. Fill each glass with a good amount of muddled blackberry mixture. Add ice to the top of glass.
  3. Pour 2 oz. of bourbon (if you love bourbon, you don't need to add simple syrup).
  4. Stir together to see if you want to add simple syrup (if you love bourbon, you're not going to want to add simple syrup) .
  5. Garnish with a mint sprig and extra blackberries.
  6. Enjoy!

  1. You'll need 2 pints of blackberries for 4 glasses (if you're going to reserve some for garnish).

Super Simple Cocoa & Fruit Parfaits

I’ve been noshing on Nourish Snacks for some time now, specifically their super spicy snacks.  But when I spied they had came out with a chocolate line, well I of course had to satisfy that sweet tooth of mine and give them a try.

Like all Nourish Snacks, each package of chocolatey goodness is under 200 calories, made with no GMO’s—actually, no artificial anything—and is gluten- and dairy-free. 

Since fruit parfaits are super simple to make, and fall on the healthier side of the fence, they are a constant in my household.  And because I’m constantly running from one thing to the next, I love using Nourish’s Cocoa Loco bites and making these cocoa fruit parfaits in a mason jar ahead of time so I can just grab and go.  What’s your grab and go meal?  Truly, MKR

Ingredients
  1. Yogurt (vanilla, plain, or whatever flavor you prefer)
  2. Strawberries
  3. Blueberries
  4. Bananas
  5. Cherries
  6. Nourish Cocoa Loco
Instructions
  1. In a glass or mason jar add a layer of Nourish Cocoa Loco snacks followed by a layer of yogurt, a layer of desired fruits, and an additional layer of yogurt. Top with fruit and Nourish Cocoa Loco.

*Takeaway Tip:  To ensure a smooth parfait I pour the yogurt into a disposable piping bag (used typically for icing) and pipe it evenly into each container.  Don’t have a piping bag, use a Ziploc bag and just create an opening by snipping the corner with scissors.
