Lately I’ve been craving pizza. But since it’s blazing hot already in Atlanta the idea of Chicago style deep dish isn’t so crave worthy. Enter the joy of Pitnerest and these little gems. Mini vegetarian pizzas from Green Kitchen Stories, and my personal favorite the potato pizza! Potato pizza is a definite, no questions asked, MUST. My favorite was from our neighborhood restaurant in Chicago called Frascas (Chicagoans if you haven’t discovered Frasca’s unlimited mimosa brunch yet I highly recommend it). I would order mine with no bacon and add fresh arugula…there’s something about fresh arugula on pizza, delish. Anyway what I’m loving about these is they’re mini, obviously, but the fresh gorgeous summer vegetables.
Get the scoop and full recipe HERE, but if you’re like me and don’t have the patience to make fresh pizza dough head on over to your local Whole Foods and they always have FRESH pizza dough you can take home. And if you’re even more like me than you’ll probably try making these in your Williams Sonoma mini pie maker. xoxo
They’re just calling my name!
