An Easy, At Home Asian Dinner With Grilled Asian Vegetables

I’m here to tell you that an at-home Asian meal is 1,000x better than takeout.  (And I love my takeout.)  I’m sure that comes to you as no surprise, though, since homemade is almost always better.  But if you’re reluctant like I was until recently about tackling a great homemade Asian dinner, this entire week is for you.  I’m always trying to expand my horizons in the kitchen, and I immediately knew it was time to try my hand at my favorite type of takeout, Asian.  And I’m not going to lie, I was especially inspired  after peeking at this amazing dinnerware collection.

Sure over the years I’ve tried my hand at at-home asian.  A stir fry vegetable dish here, some spicy shrimp dishes there, and I’ve definitely picked up a few tricks of the trade and favorite sauces along the way.  When in doubt go Kung Pao.  But for this spread, I wanted to push outside my comfort zone with some favorite restaurant dishes I’ve never tried tackling.  For me that meant homemade vegetarian ramen, spicy vegan lettuce wraps (served on the perfect platter) and a lemongrass gin fizz cocktail with mint.  

The vegetarian ramen recipe proved to be probably the simplest dish EVER to make…it’s really just noodles and broth with a whole lot of flavor. The spicy vegan lettuce wraps seriously can rival my beloved order from P.F. Changs, and the lemongrass mint cocktail is as refreshing as it is beautiful (especially in these festive gold tumbler glasses). 

After making this feast, I’m convinced that takeout truly pales in comparison.  I’ll be sharing a recipe each day, and starting today with my simple Asian-style grilled vegetables. Though I’ve got to be honest, I’m not sure there’s a need for an actual recipe, that’s how easy they are.  All you need is a little toasted sesame oil, sesame seeds, and my favorite indoor grilling pans which are, side-note, a kitchen must for me.  When I don’t want to brave the weather or take the time to heat up the grill, these pans are the solution.  Anyway, let’s get our noodle on!  Truly, MKR

You know those nights when you want to eat something super easy, but don’t want to sacrifice taste? Those nights tend to creep up at the end of the week in the Rye household, when we’re winding down from the results of Sunday’s meal prep.  But do not fret, I’ve perfected a simple, healthy and fresh broccoli salad recipe that always hits the spot.

No cooking or roasting is needed here; the raw broccoli and cauliflower retain their fresh-from-the-earth flavor (all pre-chopped if you caught this post).  A sprinkle of unsalted peanuts, because by now you know I always need that crunch!  You can use red or green onions , and I usually prefer the latter when making this broccoli salad at home.  And dried cranberries give the salad a subtle sweetness, while offering an additional texture to each perfect bite. Lastly, an incredibly easy dressing ties it all together: red wine vinegar, Veganaise (or sub in mayonaise or miracle whip, whatever works) and a pinch of organic sugar

This easy broccoli salad can be prepared in less than 15 minutes, and it serves as a great fresh side that’s anything but boring. And just an FYI…it tastes even better the next day.  Enjoy!  Truly, MKR

There’s no denying that the platter of maple-bourbon glazed, smoked Easter ham will be a guaranteed hit of your Easter gathering.   But for me (someone who doesn’t actually eat meat) my favorite part of a meal is always the side dishes.  And with Easter side dishes like a vibrant, fresh sweet pea and herb salad plus classic deviled eggs on the most perfect bunny platter, how could one resist?

I’ve always considered sweet peas to be an unsung hero.  Besides the fact that they may be the easiest ingredient to prepare, and look absolutely amazing on my Country Estate dinnerware, they always offer a wonderfully sweet “pop” that I just love (you know I’m huge on texture).  In this particular “no cook” salad peas are the primary focus with additional ingredients that are fresh and incredibly simple. Topped with shaved radishes for a subtle crunch, pea shoots, fresh mint and basil for added layers of interest and flavor, as well as thin shavings of parmesan cheese.  Some recipes call for red onion or sweet onion, but I’ve found that I prefer the less overpowering flavor of radish for the zing, while relying on the fresh mint to play up the sweet peas’ sweetness. 

With the smoked ham and seasonal salad covered, no proper Easter tablescape can be without classic deviled eggs. I’ve played around with recipes for years, trying variations of mayonnaise, vinegar, mustard and paprik. While I always enjoy a funky play on a favorite dish like this with spices and seasonings, I knew I wanted to keep things classic this year.  I think the best part of this year’s batch is all due to the dusting of paprika and sprinkle of green onions atop the creamy, tangy (and vegan) filling. Oh, I could eat about a dozen.  Enjoy!  Truly, MKR
