Fresh summer corn side dish, Waiting On Martha

Summer tabletops that look like this make seasonal eating easy (emphasis on the EASY).  And for those of you following along on Snapchat (username Waiting On Martha), you’ll know I’m trying to eat cleaner and put the focus back on fresh, in season, local ingredients.  This focus on eating “clean” has in turn also highlighted my love of simple ingredients and flavors.  Case in point: grilled fresh vegetables from the garden seasoned simply with a little oil, salt and pepper.

First up: shishito peppers.  If you haven’t tried these, stop what you’re doing and go out and find some at your nearest Asian grocery market (if you’re in Atlanta you can find them at the Buford Farmers Market).  They’re a milder pepper, but be warned about 1 in 5 will be on the spicy side so be prepared for a little game of pepper roulette. You can of course grill them, though I usually throw them into a sautee pan or even a wok.  They are SO simple to make; simply drizzle organic olive oil and a dash of salt and pepper to taste.  You’ll cook them until they char and start to shrivel up about 5-7 minutes and then just eat ’em up.

Second: grilled okra.  I’m a firm believer that okra is one of the south’s best fruits of the earth (click here for Southern Living’s 10 best okra recipes to see for yourself).   I’ve eaten them all sorts of ways, but I really might prefer simple and grilled above all else!  All you need to do is halve them and put them on skewer sticks, drizzle with organic olive oil, salt, pepper and a dash of cayenne. Grill for about 10 minutes (or until charred) and pop the entire thing in your mouth!  I’ve found that grilling them as such will also take the slime out of them entirely.

Lastly, my corn salad is quite possibly the biggest crowd pleaser of them all.  It can be served cold, warm, room temperature…your call.  I’ve enjoyed it as a salsa, as a salad and straight out of the sautee pan too.  All you’ll do: dump the fresh corn kernels (stripped easily from the cob with one of these) or frozen corn if you must to a sautee pan with (plenty of) un slated butter and salt.  When in doubt, add more butter.  To serve, simply add chopped green onions, fresh cilantro and give it a quick stir…you don’t want any of these ingredients to get mushy so definitely save them until garnish at the end.  It is seriously so easy, so fresh and SO tasty.  Enjoy!  Truly, MKR

Homemade Coleslaw, Potato Salad, Macaroni Salad & Skillet Baked Beans

Everyone's Favorite Sides for a Great BBQ
Filed Under > Appetizers & Sides

Homemade coleslaw, potato salad, macaroni salad and skillet baked beans recipe for Memorial Day BBQ party Skillet baked beans and homemade coleslaw recipe

It isn’t a true barbecue without all of the traditional sides, everyone knows that.  And this year I kicked it up a notch with my take on homemade coleslaw, potato salad, macaroni salad and last but not least, skillet baked beans. And you know the funny thing about all of these side salads (besides the beans of course)?  They all use the same main ingredients: Veganiese/mayo, mustard and sugar.  Easy breezy.

We kicked off our barbecue week on Monday with the best ever grilled veggie burgers and peppercorn crusted beef burgers (which are to-die-for, if I do say so myself…well okay, I’m taking the Mr.’s word for it on the beef burgers). And yesterday, we shared a few of our top must-haves for anyone hosting the barbecue this Memorial Day weekend.  But today may be my favorite of all simply because I could live off of sides alone, and a barbecue always has THE BEST sides.

The thing about all of these side salads is it’s really all about how you like it, and you can adjust the recipes accordingly to make them creamier/spicier/soupier/etc. truly making each one your own. For example I like my coleslaw like KFC‘s…(#noshame) nice and dressing loaded and my potato salad more on the mustardy side.

And lastly, the only side that doesn’t include copious amounts of mayo…my skillet baked beans.  They’re just as divine as they sound.  There’s something about the sweet BBQ flavor alongside the tangy side salads that’s just second to none.  This year, I chose the the cast-iron skillet over the Big Green Egg rather than the oven, and being a vegetarian, I actually smoked the bacon and put it on the side for guests to add if they prefer.  I also changed up my recipe a bit this year by adding green peppers and onions, which I hadn’t done before.  But after reading and taste testing a few different recipes, I decided it was a great addition to an already winning recipe.

Stay tuned as we round out our barbecue week here on the blog, just in time for all of your Memorial Day party dreams!  Truly, MKR

Best Ever Grilled Veggie Burger & Peppercorn Crusted Beef Burger

My spin on the All-American classic, just in time for Memorial Day Weekend
Filed Under > Everyday Dinner

Memorial Day food ideas & recipes, Waiting on Martha The Best Ever Grilled Veggie Burger & Peppercorn Beef Burgers recipes, Waiting On Martha

If you follow me on Snapchat (username WAITINGONMARTHA) it will come as no surprise to you that I’m a firm believer that everything tastes better cooked, grilled or smoked (preferably on the Big Green Egg) over an open flame. EVERYTHING.  And while I’m a pescatarian, I don’t let you meat eaters have all of the fun when it comes to barbecues.  Over the years, I’ve perfected my go-to recipe for the best ever grilled veggie burger…and let’s just say that it could tempt even the biggest carnivores at your Memorial Day party.

The problem with veggie burgers, if you’ve ever had them, is they tend to fall into two categories: bland tasting and stiff as cardboard, or an un-grillable mushy-like consistency that is neither appetizing or easy to grill.  So, I’ve made it my mission to perfect a grillable, tasty, veggie burger that will give any beef burger a run for it’s money.  And after numerous trial and errors, I believe I have finally figured it out.  With a combination of black beans, cauliflower rice, grilled onions, panko breadcrumbs and a plethora of sauces and spices, this may just be the best veggie burger recipe out there, if I do say myself.  Of course I couldn’t forget all of you carnivores, so along with my veggie burger, I’ve included my ultimate peppercorn crusted beef burger recipe below.  Both recipes masterfully satisfy that burger craving (because those exist, especially on a long weekend), and I’m telling you that it’s quite hard to believe they’re homemade.

All week, and just in time for the long weekend, join us as we usher in the start of grilling season and celebrate the art of the barbecue.  It doesn’t stop after today’s drool-worthy burgers, we’ll be keeping it going with what I like to consider the Top 10 Memorial Day Party Essentials, all of the beloved sides every barbecue needs (think homemade coleslaw, macaroni salad & more), a great Memorial Day party outfit and last but not least, root beer floats (which you can most definitely make boozy!).  Tell me friends, what are you most looking forward to grilling this season?  Truly, MKR
