Aperol Spritz

Celebrate the End of Summer with This Refreshing and Vibrant Italian Sip

The Aperol, an Italian spritz recipe | Waiting on MarthaAperol spritz recipe | Waiting on Martha

The Aperol Spritz, have you heard of it?  It’s becoming quite the cult obsession.  My husband is obsessed with it and I hear it mentioned more often than any other drink of late. The day I was actually shooting this recipe, I had the Food Network on and spotted two different chefs concocting their own special version of this drink!

But for good reason.  Just as vibrant in taste as appearance, this Aperol Italian spritz recipe is considered the perfect summertime sip; it’s light and refreshing, while it marries crisp notes of citrus and herbs. The alcohol content is typically lower in this cocktail, making it a great  option for all to toast these last warm nights as summer slips away.

Though the classic Aperol doesn’t call for it, I like to add a sprig of thyme to this Italian spritz recipe for that extra hint of freshness.  I always like to incorporate fresh herbs from the garden to take any libation (or any recipe, for that matter) to the next level.  I also just learned the other day that Thyme was once placed under pillows in ancient Europe to help with sleep and ward off nightmares…the more you know!  Cin Cin loves! Truly, MKR

Creamed Vidalia Onion Bake With Homemade Bread Crumbs

Local to Georgia, vidalia onions are the star of this creamy, crunchy casserole

Vidalia onions are local to Georgia, and I try to buy, cook and eat local whenever possible, as you know.  Unlike its brothers, the yellow, red and white onion, vidalias lack the sharp, astringent taste of other onions, and in turn taste sweet.  While I don’t discriminate against any onions (I adore them all), I will say you can find me grilling vidalias on the big green egg with just olive oil, salt and pepper quite often.  So when I had the opportunity to team up with Williams-Sonoma and whip up something local to my great state of Georgia, I immediately thought vidalias.

So with summer beginning to sing its last sweet song, I knew I wanted to try a recipe that eases a summertime flavor into fall.  My answer: a recipe for Creamed Vidalia Onion Bake with Homemade Herb Bread Crumbs.  Sweet vidalias and shallots combine with creamy mushrooms and warm cinnamon, to then be topped with crispy herb breadcrumbs to create the perfect bite. Sweet + salty, soft but with a crunch.

This dish completely stands on it’s own, but it would also be the perfect accompaniment for grilled steak, roast chicken or Thanksgiving dinner.  Imagine a little bit of this, a bit of stuffing, and a bit of turkey all on one fork…divine!  (Is it too early to talk Turkey??)

Be sure to tune in for my Williams-Sonoma Instagram takeover this Friday; I’ll be celebrating its store opening at Ponce City Market here in Atlanta all weekend long!  I’ll also be at the store all day Friday, so come say hi and join in the (yummy) festivities.  Can’t be there in person, I’m periscoping from the store at 12:00 est on Friday so make sure you join us at least virtually!  Truly, MKR

Vegan Pesto Heirloom Tomato Salad

Vegan pesto sauce coats crisp heirloom tomatoes, creamy avocados and freshly chopped herbs for the best ever tomato salad

Vegan Pesto Heirloom Tomato Salad Recipe, Waiting on Martha

Recently I’ve had so much fun sharing a behind-the-scenes look into my kitchen and the recipes we’re cooking up in the Rye kitchen via Snapchat (username WAITINGONMARTHA).  And per your requests, I’m bringing you my recent recipe for my Vegan Pesto Heirloom Tomato Salad.

One of my favorite parts of summertime cooking is utilizing the fresh and seasonal ingredients that make each dish a hit.  As you’ll remember, we recently nommed on an Heirloom Tomato Spaghetti Squash Lasagna a few weeks ago that was just beyond.

And the combination of this dish’s heirloom tomatoes, cucumbers, red onions, avocados, basil, cilantro, chives and vegan pesto sauce are vibrant and delicious. The crisp crunch of the tomatoes matched with the creaminess of the avocado and the mix of flavors from the fresh herbs creates the perfect bite.  And how can I forget the sauce…it’s quite possibly the best ever vegan pesto sauce.  So. Stinking. Good!  Truly, MKR
