In my humble opinion, it simply wouldn’t be summer without cobbler and pie.  I’ve ALWAYS been more of a cobbler, pie, tart person than anything else when it comes to desserts.  And since so many of my favorite fruits are in season during summer, I stay close to the tried-and-true recipes centered around them this time of year.  And friends, this may be one of the easiest renditions of one of those recipes yet.  With fresh Georgia peaches, plump and sweet blackberries, crunchy pecans and homemade biscuits dropped on top…my Peach & Blackberry Cobbler tastes like summer on a plate AND it’s pretty simple to make (there’s no crust or crumble, but the homemade biscuits still give you that heavenly-doughy-carby fix). 

I like to make my Peach & Blackberry Cobbler around the middle to end of summer because that’s when the blackberries and peaches are at their prime.  As you’ll see in the recipe below, it’s really all about macerating the fruit mixture and dropping homemade biscuits on top.  The ripeness and sweetness of the fruit will determine just how much sugar you’ll need (in this case very little) to macerate them to your liking.  I find that I prefer the natural flavor of the blackberries and peaches to really shine through rather than a sugary-too sweet taste.  I always leave the skin on the peaches too; I’ve found that there’s no reason to take it off and it actually adds a more made-from-scratch feel to the dessert.  Lastly, the cinnamon and nutmeg give the blackberry, peach, pecan mixture a certain warmth that makes each and every bite more wonderful. But then of course,  to top it all off when you serve—you’ll obviously need a scoop of vanilla ice cream.  Classic!  Truly, MKR

Ingredients
  1. For filling...
  2. 3-4 pints blackberries
  3. 6-8 fresh peaches, sliced and with the skin on
  4. 1 cup pecans
  5. 1-1 1/2 cup sugar
  6. juice of 1 lemon
  7. 1 tsp cinnamon
  8. 1 tsp nutmeg
  9. pinch of salt
  10. For the biscuits...
  11. 4 CUPS SELF-RISING FLOUR (ONLY EVER WHITE LILY), PLUS MORE FOR DUSTING
  12. 1 STICK (8 TABLESPOONS) BUTTER, CUT IN SMALL CUBES, AT ROOM TEMPERATURE
  13. ½ CUP CREAM CHEESE, AT ROOM TEMPERATURE
  14. 1½ CUPS BUTTERMILK
  15. 2 TABLESPOONS MELTED BUTTER
Instructions
  1. For the biscuits...
  2. PREHEAT THE OVEN TO 500 DEGREES WITH RACK IN THE MIDDLE POSITION.
  3. PLACE 4 CUPS OF WHITE LILY FLOUR IN A LARGE BOWL.
  4. SPRINKLE BUTTER CUBES AND CREAM CHEESE ON TOP OF THE FLOUR AND USE YOUR FINGERS TO "SNAP" THROUGH IT UNTIL THE MIXTURE RESEMBLES COTTAGE CHEESE (CHUNKY WITH SOME LOOSE FLOUR).
  5. MAKE A WELL IN THE CENTER, AND POUR THE BUTTERMILK IN THE WELL.
  6. USE YOUR HANDS OR A RUBBER SPATULA TO MIX THE BUTTERMILK INTO THE FLOUR. DO NOT OVER-MIX. YOU'LL HAVE A WET AND MESSY DOUGH.
  7. SPREAD A GENEROUS AMOUNT OF FLOUR ONTO A WORK SURFACE.
  8. DUMP THE LARGE BOWL OF DOUGH ONTO THE FLOURED WORK SURFACE. FLOUR A ROLLING PIN AND SPRINKLE FLOUR ON TOP OF THE DOUGH.
  9. ROLL THE DOUGH TO ½-INCH THICKNESS. DO NOT KNEAD THE DOUGH.
  10. FLOUR A 2-INCH ROUND BISCUIT CUTTER. PRESS THE CUTTER STRAIGHT DOWN INTO THE DOUGH AND STRAIGHT BACK UP (QUICKLY!). REPEAT, FINISH CUTTING THE DOUGH INTO BISCUITS (YOU MAY NEED TO RE-ROLL OUT THE DOUGH SCRAPS TO FINISH). THE DOUGH MUST STAY WET INSIDE, BUT YOU CAN USE AS MUCH FLOUR ON THE OUTSIDE AS NECESSARY.
  11. PLACE BISCUITS INTO A CAST-IRON SKILLET OR ONTO A BAKING PAN WITH SIDES, LINED WITH PARCHMENT PAPER. THE SIDES OF THE BISCUITS SHOULD BE TOUCHING.
  12. BRUSH THE TOPS OF THE BISCUITS WITH MELTED BUTTER. PLACE IN OVEN AND REDUCE OVEN TEMP TO 450 DEGREES. BAKE 16-18 MINUTES, ROTATING THE SKILLET OR PAN ONCE.
  13. For the filling...
  14. In a large mixing bowl, macerate the blackberries, peaches and pecans with the sugar, cinnamon and nutmeg for 20-30 minutes.
  15. Preheat oven to 400 degrees. While oven is preheating and mixture is macerating, make biscuit dough (see above).
  16. Pour mixture into a large baking dish, with the lemon juice on top. Drop your biscuit dough onto the mixture in the baking dish. Bake for 20 minutes but keep an eye on it. You'll want to bake the cobbler for 20-30 minutes, depending on how you like the inside texture. You don't want your biscuits to cook more than your filling, so if that starts to happen, cover the entire dish with foil and continue to cook.
  17. Serve with vanilla ice cream.
Notes
  1. If you're going to make the homemade biscuit dough, you might as well make all of the biscuits and freeze the leftovers. But if you just want enough biscuits for this recipe, half the recipe. And if you don't feel like using fresh biscuits, you can absolutely use the store-bought biscuits and throw them on top of the cobbler.

Okay, so I admit it I originally wanted to make a Blackberry Bourbon Smash because of how beautiful it is.  While I do enjoy a sip of Bourbon every now and then, I would never call myself an actual bourbon lover.  But once I smashed and swirled up a BBS or Blackberry Bourbon Smash, I was surprised at how much  I loved it, plus it didn’t hurt that it was really fun to make.  And bonus a Blackberry Bourbon Smash is definitely one of those cocktails that appears more impressive and difficult to whip up than it actually is, which makes it perfect when entertaining guests.

While the recipe in itself is on the simpler side there are a few things to note.  First, the key to a great Blackberry Bourbon Smash is definitely the ice.  You want that perfectly shaved ice that makes you almost feel like you’re eating a snow cone. So where do you find this ice, you ask?  I’ll let you in on a secret: if you have a local Whole Foods, the seafood department will give it to you for free.  Just be sure to ask for the ice that’s NOT touching the fish! 

Another important part to this smash is the fresh, high quality blackberries.  They’re really the hero to this cocktail story, so it’s worth using high quality, organic blackberries at the height of the season. Once you snag your black berries the rest is pertty simple: muddle the blackberries with fresh mint, pour the mixture into your glass, top it with shaved ice, add bourbon, stir, garnish, and enjoy.  One quick note; if you are a regular bourbon drinker, you’ll probably opt for no simple syrup, but if you need a little something sweet to combat the bourbon, just dd simple syrup to taste.  Though I’d suggest waiting until after you stir together your blackberry mixture, bourbon and ice to see if you need the simple syrup…I actually enjoyed the drink without.  Cheers, friends!  Truly, MKR

Blackberry Bourbon Smash

Ingredients
  1. Fresh blackberries (for muddled mixture and garnish)
  2. A few leaves fresh mint, to muddle
  3. Bourbon of choice
  4. Simple syrup
  5. Fresh mint, to garnish
Instructions
  1. Muddle blackberries and a few mint leaves to get a jam-like consistency.
  2. Fill each glass with a good amount of muddled blackberry mixture. Add ice to the top of glass.
  3. Pour 2 oz. of bourbon (if you love bourbon, you don't need to add simple syrup).
  4. Stir together to see if you want to add simple syrup (if you love bourbon, you're not going to want to add simple syrup) .
  5. Garnish with a mint sprig and extra blackberries.
  6. Enjoy!
Notes
  1. You'll need 2 pints of blackberries for 4 glasses (if you're going to reserve some for garnish).

Growing up in Michigan, every summer party included a carved watermelon with balled melon.  For every birthday party, special or not-so-special occasion, my mother would cut the watermelon into that basket shape, and add in all the balled cantaloupe, watermelon, and honeydew. It was such a common theme for me that I literally grew up believing that summer tasted like a bowl of cantaloupe. In my adult years, I discovered that frozen melon balls make best ice cubes for summer drinks (genius, right?!).  So when I opened up my CSA box last week, I found fresh cantaloupe inside, and I was determined to put it to good use. 

The thing about cantaloupe is that it can be a bit boring if just left alone.  But it can also be delightful when balanced and paired well.  With this heat wave, I’m craving dishes that are easy to prepare, simple to enjoy and are just all around refreshing.  I’m trying to push myself out of my comfort zone with summer dishes too, so today I’m giving classic cantaloupe a MAJOR upgrade with a super easy (read 20 minutes or less to prepare), super fresh summer mix.  

This mozzarella prosciutto melon salad achieves that perfect balance of sweet, savory and summer.  Of course, there’s the creamy, consistency of fresh mozzarella, but then bring in the thin slices of dry-cured prosciutto, a little heat with serrano peppers, topped with fresh basil and mint from my garden…now that’s the perfect summer bite.  Enjoy! Truly, MKR

P.S. Here’s my two cents about olive oil:  I really believe you should always have at least two different olive oils in your arsenal.  One being your standard organic EVOO for everyday sauteing and cooking.  The second: a more splurge-worthy ,higher quality or infused olive oil to be used when you really want to “taste” the oil’s flavor, like in this salad’s dressing.  I’m a big fan of THIS one as well as the garlic, basil, and rosemary infused oils from Round Pond. Perfect, simple flavor in each and every bite.

Summer Melon & Mozzarella Salad with Fresh Prosciutto, Basil and Mint

Ingredients
  1. 2 12 oz. packages of fresh mozzarella balls
  2. 2 cantaloupes
  3. 1-2 serrano peppers
  4. 1-2 packages proscuitto, torn into pieces
  5. handful of basil, rough chopped
  6. handful of mint, rough chopped
  7. drizzle of salt, pepper and olive oil, to taste
Instructions
  1. Scoop cantaloupe into balls and add to large mixing bowl.
  2. Add fresh mozzarella balls to the cantaloupe balls in the bowl.
  3. Slice serrano peppers and add to salad, to taste.
  4. Roughly tear prosciutto with hands, add pieces to salad.
  5. Roughly chop fresh basil and mint, add to salad to taste.
  6. Drizzle salad with 1-2 tablespoons of olive oil and season with salt and pepper to taste. Toss salad and serve in individual bowls.
Notes
  1. The salad will be delicate, so you want to combine all of your ingredients in your mixing bowl until just combined (I mix it all with my hands).
