Cinnamon crackers recipe on Waiting on Martha

Cinnamon Crackers.  If you were ever a fan of Cinnamon Toast Crunch as a kid or remember tasting cinnamon toast when you were young, these are for you.  I was always a huge fan of cinnamon toast personally.  Fresh out of the oven, the warm, toasty bread with butter, brown sugar and cinnamon sprinkled on top was absolutely divine.  Super simple, of course.  Yet so good. 

I had albeit forgotten about cinnamon toast until recently, but I was brought instantly back as I was noshing on a bowl of buttery Saltines at our country club.  See, they serve the buttered crackers as a quick appetizer while you peruse the bar menu, and let’s just say that they’ve discovered my Kryptonite.  Once I start, I just cannot stop!  Dangerous I tell you.  And it had me thinking of how I could make them EVEN better at home. 

Butter is sure enough an easy addition to these classic crackers, and the result is downright irresistible.  But add some cinnamon and sugar and you’ve got the ultimate snack.  It would be great for holiday parties, tailgates, after school treats, lunch boxes and beyond.  Find the super easy recipe below, and tell me if you’ll be whipping up some cinnamon crackers anytime soon!  Truly, MKR

Ingredients
  1. 4 sleeves of Saltine crackers
  2. 1 stick of butter, melted
  3. 3/4 cup sugar
  4. 1/2 cup cinnamon
  5. 1-2 large ziplock bags
Instructions
  1. In a small bowl mix together sugar and cinnamon, set aside.
  2. Add the saltine crackers to a large zip lock bag (if you need to split the recipe and use two zip lock bags go ahead and do so. You'll want plenty of room to mix/roll the crackers).
  3. Once crackers are in the bag(s), pour the butter over the crackers and roll the bag to coat.
  4. Once coated, add your cinnamon and sugar mixture and again roll to coat.
  5. Leave in sealed bags overnight.

Lately I’ve been on a bit of a kick with testing out the classic baking recipes.  I’ve been on a mission to try out the tried-and-true, crowd favorites and have been taking notes which recipes will truly stand the test of time.  I’ve also had fun adding my own little spin here and there.  Case in point: today’s classic chocolate cake with chocolate espresso buttercream frosting.

It all starts with your standard, irresistibly moist chocolate cake.  But then I took it up a notch with added espresso powder in both the cake AND the homemade buttercream frosting.  The result is amazing, let me tell you.  That little extra burst of espresso flavor kicks up the dark, rich nature of the ooey-gooey chocolate. 

And if you’ve been following along on Instagram, you’ll know that I have this love affair with buttercream frosting.  It’s hands-down my favorite icing, and it’s also SO much easier to make at home than I ever thought it would be.  I will never, ever buy buttercream at a store again!  I think the key with buttercream frosting is that it needs to be a very light, whipped texture.  To achieve that heavenly consistency, simply beat it with a mixer even longer than you think you should…you won’t be sorry you did.  

Also, another important thing to note is that you want to be careful when softening your butter.  You don’t want it to fully melt, as it needs to combine correctly, so stick to 8 seconds, then another 8 seconds until it’s just right.  Find the full recipe below, and tell me if you’re as obsessed with buttercream frosting as I am!!! Truly, MKR

 

Chocolate Cake with Chocolate Espresso Buttercream Frosting

For the cake
  1. 1 cup or 2 sticks unsalted butter, cut into pieces, with additional to grease pans
  2. 2 cups all-purpose flour, spooned and leveled
  3. 1½ cups granulated sugar
  4. ¾ cup unsweetened cocoa powder
  5. ½ cup dark brown sugar
  6. 1 teaspoon baking soda
  7. 1 teaspoon kosher salt
  8. 2 large eggs
  9. ½ cup sour cream
  10. 1 teaspoon pure vanilla extract
  11. 2 teaspoons espresso powder
For the frosting
  1. 1½ cups or 3 sticks butter, softened
  2. 1 cup unsweetened cocoa
  3. 5 cups confectioner’s sugar
  4. ½ cup milk
  5. 2 teaspoons vanilla extract
  6. 2 tablespoons espresso powder
For the cake
  1. Heat oven to 350º F.
  2. Butter two 8- or 9-inch round cake pans and line the bottom of each with a round of parchment paper.
  3. In a large bowl, whisk together the flour, granulated sugar, cocoa powder, brown sugar, baking soda and salt.
  4. In a small saucepan, combine the butter and 1 cup water and bring to a boil.
  5. Add to the flour mixture and, using an electric mixer, mix until combined. Beat in the eggs, one at a time, then the sour cream and vanilla.
  6. Divide the batter evenly between the prepared pans. Bake until a toothpick inserted in the center of each cake comes out clean, 35 to 45 minutes. Cool in the pans for 20 minutes, then turn out onto a rack to cool completely.
For the frosting
  1. Mix cocoa in a large bowl or bowl with stand mixer. Make sure to whisk away all clumps.
  2. Cream together the softened butter and cocoa powder until smooth.
  3. Add sugar and milk to cocoa mixture by adding 1 cup of sugar and 1 tablespoon of milk, combining and then turning mixer up to high speed for about a minute. Do this in steps until all sugar and milk are combined.
  4. Add vanilla extract and espresso powder and mix until very light and whipped in texture.
  5. After cake layers are completely cooled, spread frosting. Enjoy!

Was it just me, or was the Aperol Spritz one of the most Instagramable drinks this summer?!  I can’t tell you how many times I spotted this vibrant orange cocktail as I was scrolling through my feed.  But of course, I wasn’t too surprised; this cocktail is extremely drinkable, and extremely refreshing and a drink I’ve been drinking for years now thanks to the hubs introducing me to it.

This classic Italian cocktail is known as the “original Spritz” and offers a light, sparkling and refreshingly bittersweet taste.  It’s most commonly enjoyed as an aperitif in Italy, serving as a symbol of a lively atmosphere and an ice-breaker.  As a cocktail with Aperol, Prosecco and an accompanying lower alcohol content, it really does prove to be the ultimate summertime sip that’s versatile enough for daytime drinking to happy hour and beyond. 

Now of course, the Aperol Spritz is known as a classic for a reason.  Aperol first launched in 1919, quickly becoming one of the most beloved liqueurs in Italy.  The original recipe introduced a rich, complex taste that marries citrus notes with herbs.  Aperol’s recipe, to this day, has remained unchanged and a secret to the rest of us. 

All that being said, there’s really no surprise that mixing an Aperol Spritz has turned into a popular ritual.  Bartender and cocktail purist alike should know that this cocktail should be the same every single time: 3 parts Prosecco, 2 parts Aperol, and 1 part soda.  By tradition, it should also always be served in a balloon stemware glass, and poured ¾ to the top of the glass.  Staying true to the recipe is key and what I’ve learned is that here in the states not everyone mixing up your drink may value the original recipe the so best to remember 3, 2, 1 that way you’ll be assured to  sip the perfect spritz each and every time.

The Aperol Spritz

Ingredients
  1. 3 parts Cinzano Prosecco
  2. 2 parts Aperol
  3. 1 dash soda
  4. Ice and a slice of orange
Instructions
  1. Add ice and a slice of orange, pour in the Prosecco, the Aperol and add a dash of soda. This avoids the Aperol settling at the bottom.
