As someone who doesn’t eat breakfast often, I’ve gotta say I do love me some granola.  Of course a good granola doesn’t need to be limited to breakfast time; anytime it’s around I’ve been known to nibble at it all day.  I’ve played around with my homemade granola recipe for years, and Loves, I’ve finally nailed it.

The key, I think, is the raspberry jam.  It serves almost as the “glue”, if you will, in the granola.  As you may have learned through your own homemade granola trials, most recipes turn out to be just a big pan of crumbles.  This homemade granola recipe keeps together better, producing big chunks to enjoy.

Along with the raspberry jam, I mix in a generous pouring of coconut flakes, along with dried fig, apricot, cranberries and a few drops of cinnamon and nutmeg Vitality essential oils…and the result is simply scrumptious.  When baking, I take the “low and slow” approach; sticking my handy Staub in the oven for 30 to 40 minutes at 325 degrees.  This helps the granola bake evenly (you definitely want to avoid browning the top too much).  When it’s done, I of course sneak a helping or two while it’s warm, with a drizzle of sweet, raw honey to top it all off.  And the granola that lasts until the next day (if any) is perfect atop a little greek yogurt.  Delish!  Truly, MKR

The Best Ever Turkey Garbage Salad Recipe

An Easy, Light Meal Solution to A Fridge Full of Leftovers Post-Thanksgiving

Turkey Garbage Salad Recipe with Thanksgiving LeftoversTurkey Garbage Salad Recipe with Thanksgiving Leftovers

Ever scarfed down a Garbage Salad?  I’m sure you have; there’s nothing like a fridge full of leftovers post-holiday, with Pinterest inspiration looking bleak and no desire to get back in the kitchen anytime soon.  Well in the Rye household, we always eagerly welcome our post-Thanksgiving tradition of a Garbage Salad after we’re nice and stuffed from the day before.

In true Garbage Salad form, we literally throw all of our Thanksgiving leftovers into a salad for the perfect light meal (so we’re nice and spry for all of the Black Friday shopping!). There’s no exact recipe or formula for our Garbage Salad, but I always enjoy the hints of butternut squash and pomegranate seeds among fresh arugula (always fresh arugula), hard-boiled eggs and almond slivers.  So grab a leftover roll and top with any dressing of your choice, voila.

From the entire WOM team, I hope you and yours have a wonderful Thanksgiving…one that even requires you to pull out the stretchy pants and throw the calorie count out the window!  Truly, MKR

Vegan Pesto Heirloom Tomato Salad

Vegan pesto sauce coats crisp heirloom tomatoes, creamy avocados and freshly chopped herbs for the best ever tomato salad

Vegan Pesto Heirloom Tomato Salad Recipe, Waiting on Martha

Recently I’ve had so much fun sharing a behind-the-scenes look into my kitchen and the recipes we’re cooking up in the Rye kitchen via Snapchat (username WAITINGONMARTHA).  And per your requests, I’m bringing you my recent recipe for my Vegan Pesto Heirloom Tomato Salad.

One of my favorite parts of summertime cooking is utilizing the fresh and seasonal ingredients that make each dish a hit.  As you’ll remember, we recently nommed on an Heirloom Tomato Spaghetti Squash Lasagna a few weeks ago that was just beyond.

And the combination of this dish’s heirloom tomatoes, cucumbers, red onions, avocados, basil, cilantro, chives and vegan pesto sauce are vibrant and delicious. The crisp crunch of the tomatoes matched with the creaminess of the avocado and the mix of flavors from the fresh herbs creates the perfect bite.  And how can I forget the sauce…it’s quite possibly the best ever vegan pesto sauce.  So. Stinking. Good!  Truly, MKR
