Valentine’s Day.  A celebration of love.  A celebration of  chocolates and sweet nothings.  And here a celebration of pie.  Or rather rustic heart-shaped strawberry hand pies. Not only are these the most precious hand pies ever, but you can pretty much fill them with anything your heart desires.  Strawberries, cherries, chocolate, heck you could even make them savory if the mood strikes.  Happy count down to Valentine’s Day Loves!  truly, MKR

Ingredients
  1. FOR THE DOUGH
  2. 2 1/2 cups all-purpose flour (spooned and leveled), plus more for rolling dough
  3. 1 teaspoon salt
  4. 1 teaspoon sugar
  5. 16 tablespoons (2 sticks) cold unsalted butter, cut into pieces
  6. 4 tablespoons ice water, plus 4 more, if needed
  7. FOR THE FILLING
  8. 1 Quart of strawberries
  9. 3-4 tablespoons sugar
  10. heart shaped cookie cutter
  11. FOR THE EGG WASH
  12. 1 egg
  13. 2-3 tablespoons of water
Instructions
  1. In a food processor, pulse flour, salt, and sugar several times to combine. Add butter. Pulse until mixture resembles coarse meal, with just a few pea-size pieces remaining.
  2. Sprinkle with 4 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed with fingers (if needed, add up to 4 tablespoons more ice water, 1 tablespoon at a time). Do not overprocess.
  3. Turn dough out onto a work surface; form dough into two 3/4-inch-thick disk. Wrap tightly in plastic, and refrigerate until firm, at least 1 hour.
  4. About 15 minutes before the dough is ready to be removed from the refrigerator pre heat oven to 400 degrees.
  5. Wash and hull strawberries cutting them into quarters and placing into a mixing bowl. Add 2-3 tablespoons of sugar depending on the natural sweetness of your strawberries and mash the mixture to a consistency where you still have some larger chunks of strawberry. Set aside.
  6. unwrap dough; place on a large piece of floured waxed paper or floured surface. Roll dough to two a 14-inch round. Using your heart shaped cookie cutter cut out hearts and place half of them on to a lined cookie sheet.
  7. Scoop approximately 1 tablespoon of strawberry mixture and place on to heart. Place another piece of heart dough on top creating a pie and gently press down the sides. Then take a fork and moving all around the border of the heart gently press down to create the crease and seal your pies. Repeat until there are no more hearts left.
  8. Beat egg and 2 tablespoons of water in a bowl, and brush each pie completely with the mixture. Sprinkle sugar on top of each and bake 15-18 minutes or until pies turn a golden brown.
  9. Let cool 5 minutes before devouring.
Notes
  1. If from scratch dough isn't your thing feel free to buy store bought!

Last week while Ms. Clark was out gallivanting all around South Africa I had the pleasure of taking over her blog, Lark & Linen, for the day to share my Peppermint Chocolate Chip Cookie recipe. And while these cookies aren’t really new-year-new-healthy-you approved I think you’ll agree they’re worth the splurge.  I mean SO worth the splurge.  Happy Monday Loves!  truly, MKR

P.S.  Do you love how my boots made it into one of the pics?  I thought I’d throw that in there for all of my blogging friends who do whatever it takes to get the shot.  Even if that means standing on your marble console table that is meant for coffee table books and foo dog lamps not cookies and duck boots.

Ingredients
  1. 2 1/4 cups all-purpose flour
  2. 1 teaspoon baking soda
  3. 1 teaspoon salt
  4. 1 cup (2 sticks) butter, softened
  5. 3/4 cup granulated sugar
  6. 3/4 cup packed brown sugar
  7. 1 teaspoon vanilla extract
  8. 1/2 teaspoon peppermint extract
  9. 2 large eggs
  10. 2 1/2 (or 3 if you like your cookies real gooey) cups Ghirardelli semi sweet chocolate chips
  11. 1 box of Trader Joe's "Candy Cane Joe Joe's"
  12. **If Peppermints not your thing simply leave the extract out and use traditional Oreo Cookies**
Instructions
  1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper of Silpat mats
  2. Combine flour, baking soda and salt, lightly mixing. Set aside.
  3. Beat softened butter, brown sugar, and sugar until fully combined and creamy. While beating on low add vanilla, peppermint, and eggs.
  4. Gradually beat in flour mixture. Once combined add chocolate chips.
  5. Take 1 Trade Joe's Jo Jo and with an ice cream scoop scoop out 2 scoops of cookie dough 6. and make a sandwich with the Jo Jo in the middle. Press lightly and work the cookie dough all around the Jo Jo so it encases the cookie completely. Smooth out the dough in your hands so the entire cookie forms the shape of a hockey puck, but slightly smaller. Place on cookie sheet and repeat.
  6. Bake cookies for 10-14 minutes, or until they slightly brown on the bottom and top. **Remember your cookie will continue to bake a minute or so after you take them out of the oven so don't overcook them!**
  7. Let cool for 15 minutes on a cookie rack and enjoy.

Today marks the last day of my chocolate peppermint baking journey (well maybe not the last last as I’ll be sharing another recipe over on Lark and Linen’s blog soon, but it’s the last day on my blog) so why not go with a bang.  Or rather a kiss.  I give you Chocolate Peppermint Kiss Cupcakes.

By adding a simple, and oh so delicious, Hershey Candy Cane Kiss, a little peppermint extract and crushed candy cane I’ve taken the best chocolate and buttercream frosted cupcake to a whole other festive level.  And the frosting.  I can’t even talk about the frosting.  Well actually if you’ve been following me on Twitter you’d know that I’ve been eating the chocolate buttercream frosting morning, noon and night for the past few days.  Hello holiday gluttony.  Happy Monday Loves…only two more sleeps till Christmas!  truly, MKR

Ingredients
  1. 3 cups sugar
  2. 3 cups all-purpose flour
  3. 1 1/2 cups unsweetened cocoa powder
  4. 1 tablespoon baking soda
  5. 1 1/2 teaspoons baking powder
  6. 1 1/2 teaspoons salt
  7. 1 1/2 cups buttermilk, room temperature
  8. 3/4 cup vegetable oil
  9. 3 large eggs
  10. 1 1/2 teaspoons pure vanilla extract
  11. 1/2 teaspoon peppermint extract
  12. 1 bag of Hershey Candy Cane Kisses
  13. CK Products Chocolate Buttercream Frosting
  14. crushed candy cane pieces
Instructions
  1. Preheat oven to 350 degrees.
  2. Line standard muffin pan with paper liners. Place 1 kiss in the center of each paper liner.
  3. In a large mixing bowl whisk together sugar, flour, cocoa powder, baking soda, baking powder, and salt.
  4. Add buttermilk, vegetable oil, and 1 1/2 cups warm water; whisk to combine.
  5. Add eggs, vanilla extract, and peppermint extract and whisk until smooth.
  6. Divide batter evenly among muffin cups (about 2/3 of the way full)
  7. Bake 18-22 minutes. **Normally I insert a toothpick in the center of the cupcake to check if cupcakes are done, but you don't want to hit the Hershey kiss so test by inserting just outside the center. The toothpick should come out clean with a few crumbs attached.**
  8. Transfer to wire rack and let completely cool.
  9. Frost with CK Products Chocolate Buttercream Frosting.

  1. I've tried numerous buttercream frosting recipes and brands, however CK Products Buttercream Frosting is by far the BEST I've ever tasted!
