There’s no denying that the platter of maple-bourbon glazed, smoked Easter ham will be a guaranteed hit of your Easter gathering.   But for me (someone who doesn’t actually eat meat) my favorite part of a meal is always the side dishes.  And with Easter side dishes like a vibrant, fresh sweet pea and herb salad plus classic deviled eggs on the most perfect bunny platter, how could one resist?

I’ve always considered sweet peas to be an unsung hero.  Besides the fact that they may be the easiest ingredient to prepare, and look absolutely amazing on my Country Estate dinnerware, they always offer a wonderfully sweet “pop” that I just love (you know I’m huge on texture).  In this particular “no cook” salad peas are the primary focus with additional ingredients that are fresh and incredibly simple. Topped with shaved radishes for a subtle crunch, pea shoots, fresh mint and basil for added layers of interest and flavor, as well as thin shavings of parmesan cheese.  Some recipes call for red onion or sweet onion, but I’ve found that I prefer the less overpowering flavor of radish for the zing, while relying on the fresh mint to play up the sweet peas’ sweetness. 

With the smoked ham and seasonal salad covered, no proper Easter tablescape can be without classic deviled eggs. I’ve played around with recipes for years, trying variations of mayonnaise, vinegar, mustard and paprik. While I always enjoy a funky play on a favorite dish like this with spices and seasonings, I knew I wanted to keep things classic this year.  I think the best part of this year’s batch is all due to the dusting of paprika and sprinkle of green onions atop the creamy, tangy (and vegan) filling. Monday sure doesn’t seem so bad when you have a great lunch in tow. And this is exactly the kind of recipe we’re looking forward to noshing on today: a great salad recipe from our friends at Homespun that’s just as vibrant as it is filling.

Chef Jason brings us an ancient grains salad with red winter wheat berries, brussels sprouts, pomegranate seeds, dried apricots, watercress and toasted almonds. I know that I’m always a fan of a salad that perfectly allocates goodness in each bite, and it’s safe to say that Chef Jason does just that with this ancient grains salad. A subtly sweet, yet tangy dressing of a little white balsamic, olive oil and agave nectar is the perfect finish to this new lunchtime favorite. Cheers, Kat

Classic Chicken Wings

What will I be making to watch the big game today?  Well that’s a no-brainer: classic chicken wings. And this was what got me to finally got me to pull out and use my air fryer. And Loves, I. Am. OBSESSED.

To get all sciencey on you, the air fryer “uses patented heat circulation technology to fry your favorite foods to crispy, golden brown perfection – using little or no oil.”  Can you believe it?  Because I almost couldn’t either…I mean no oil!  Since our household is committed to watching our daily calorie intake with hopes of not giving up the food we really love, it was a serious “ahhhh!” moment when we discovered the power of the air fryer.  

Whenever I’m making classic chicken wings, I simply season them with my favorite mixed bag of algean sea salt spices and pepper.  Because everyone has a personal preference on how they like their wings (hot, sweet, sweet and spicy, plain, etc.), I like to serve the seasoned wings along with various dipping sauces.  This way everyone can enjoy wings their way! 

I definitely won’t be stopping with just wings, either.  I’m thinking onion rings, potato chips, tortilla chips, fish, chicken…and doughnuts!!!  I’ve gone ahead and ordered The Air Fryer cookbook to help me with a few more ideas, which I’ll hopefully be sharing with you all once they’re taste tested and approved.  Has anyone else gone crazy over their air fryer at home? Truly, MKR
