30 Minute Meals: My Vegan Everything Bowl

After talking to a few of my friends, we agreed how much we all needed some new, fast go-to recipes to add to our weeknight arsenal.  But so often we found, myself included, that “quick meals” tend to be unhealthy, processed, one-dimensional and really just plain boring.  So I set out to create a few one-pot, thirty minute or less meals that are as healthy as they are tasty.  First up my vegan “everything bowl.”

I’m a big fan of “everything-but-the-kitchen-sink one pot meals” because they’re incredibly easy to make because there’s only one pot to wash, and they usually bring the flavor with a large mix of ingredients, textures and spices.  I was inspired to make this specific vegan bowl by a recent meal I had delivered from Green Chef, but put my own twist on it by making it vegan and adding some heat and a few more veggies.

The sweet potatoes and chickpeas lend a heartiness to the bowl, and the Israeli couscous, corn and peppers, and peas, fresh or frozen, act as nice, healthy filler ingredients as well. And since you know I can’t go without heat and a little crunch, I especially enjoy the fresh jalapenos, green onions and unsalted cashews in the mix.  And the best news: this vegan bowl is beyond hearty, filling you up completely, and not leaving you hungry for more in an hour. 

While this recipe as a whole will clock you right about 30 minutes, if you pre-chop the main ingredients ahead of time, this recipe can easily be made in 20 minutes or less. Extra time saver: the green and red peppers, onions, and jalapeno can be perfectly chopped with this chopper, before combining with the sweet potatoes, chickpeas, corn and couscous in a deep, large saute pan or dutch oven

While time definitely makes this dish shine, the real beauty about this recipe is that you can feel good about all of the ingredients, even the “sour cream.” AND all of these flavors don’t even need to be drowned in sauces or condiments.  It’s just so simple, and so so so good.  Tell me, does this recipe sound like an easy dinner night for you, too?  Truly, MKR

5 Basic Tips to Help Clothes Last Longer

I had a conversation the other day with one of my friends about our closets.  She said she’s had some items in there that she purchased more than eight years ago, which I most certainly cannot say for my closet.  That dated me right back to my days of cheap polyester tops and trendy cuts that couldn’t make it through a season, never less almost a decade.  The difference, most certainly, was that she had purchased quality, “slow fashion” items, and had taken really good care of them along the way. 

In my recent efforts to invest in better pieces, build a sustainable wardrobe and say no to “fast fashion”, I’ve also thought a lot about how I’m treating my clothing in my closet.  I can admit that laziness and lack of caring has seen many a shirt or blouse get ruined in the laundry, so I have set out to make sure I’m covering the basics to help my clothes last longer (step 1: keep Woolite on hand, always). And yes, that can even mean simply hanging up my favorite soft tee instead of letting it wrinkle (and get thrown in the wash to take out said wrinkles) and ultimately lose its feel, shape and integrity…causing me to buy yet another one. You know those days that are just the. best. days? The ones when you stop to slow down and ones you know you’ll always cherish?  That was our recent afternoon spent with Carrie Morey, founder of Callie’s Hot Little Biscuit here in Atlanta and Callie’s Charleston Biscuits.  The team was lucky enough to get an insider’s peek into the magic that is Carrie’s homemade, hot little biscuits (and believe me, they were soooo good).  We were welcomed into the Callie’s Hot Little Biscuit kitchen to learn the secrets behind the tender, buttery, made-by-hand biscuits by Carrie’s mother, Callie, that have received press from Saveur, Food & Wine, Southern Living, The New York Times and Oprah (just to name a few). 

The team arrived ready to learn (and get their hands dirty), donned in our gorgeous new Waiting on Martha team aprons by Oatmeal Lace. We learned that baking the best homemade biscuits is really all about a few good, simple ingredients (apparently you shouldn’t even dream of making biscuits with any type of flour but White Lily), and of course patience for the steps that can only be taught by a loving hand. 

As we waited for our buttermilk and shortcake biscuits to bake, we chatted with Carrie and could see how biscuits, truly an iconic Southern staple, can be done SO many different ways. We happily taste-tested several unique (and irresistible) combinations from Callie’s Hot Little Biscuit menu, from warm grits in a sharp cheddar biscuit bowl to sweet shortcake biscuits with warm cinnamon butter and a homemade chocolate pecan poptart. We kept joking that she’d have to roll us out of there! Everything we tasted was just so good. 

A big thank you to Carrie and team for welcoming us into their kitchen for a little biscuit bootcamp and quality team bonding.  I know we’ll be talking about this bake sesh for years to come!  Truly, MKR
