Garlicky Herb Rubbed Lamb Chops, Waiting On Martha

As promised, I’m sharing two recipes that definitely deserve to grace your Easter Sunday table this year: Garlic & Herb Rubbed Lamb Chops and my favorite Spinach Salad with Mandarin Oranges, Sliced Almonds and Warm Bacon Vinaigrette.  They’re not only beautiful, tasty dishes that make the meal feel extra special, but they’re both incredibly easy to make too.  

But I know what you’re thinking; lamb chops don’t necessarily ever sound “easy.”  There’s a reason lamb chops are saved for special occasions—and restaurants—right?  But I think you’ll find that the quick preparation, fresh herb seasoning and the method of broiling on high heat are all pretty much no-brainer steps! These lamb chops are wonderfully crispy and downright delectable.  And at the end, you’ll be enjoying tasty, tender chops, each encrusted with an herb melody that will have you wondering why you haven’t made it sooner.  

As for the salad—it’s my mother’s favorite and one I grew up looking forward to finding on the dinner table.  Again, another looks harder than it is recipe, and one thats sure to impress.  The salad calls for fresh baby spinach, a can of organic mandarin oranges for a sweet citrus squeeze, raw sliced almonds for a subtle crunch and a homemade warm bacon vinaigrette that I could drink by itself…ha!  Find the full recipes below, and then tell me what you’ll be cooking up on Easter Sunday this year!  Truly, MKR

Garlic & Herb Rubbed Lamb Chops with Warm Spinach Salad with Bacon Vinaigrette

Ingredients

    For the lamb chops:
  • lamb chops
  • fresh herb mixture--recipe below
  • For the herb mixture:
  • bundle of parsley, finely chopped
  • 10 sprigs of fresh thyme, finely chopped
  • 3 sprigs of fresh oregano, finely chopped
  • 2-3 fresh sage leaves, finely chopped
  • 2-3 garlic cloves, finely chopped
  • + enough olive oil to create a paste, not a dressing
  • For the salad:
  • 1 bag baby spinach
  • 1 can mandarin oranges
  • 1/4 red onion, thinly sliced
  • 2 hard boiled eggs, crumbled or sliced
  • 1/4 cup sliced red almonds
  • For the dressing:
  • 1/2 package bacon, cooked - sprinkle any leftover as garnish
  • 1 shallot, minced
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon raw honey
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

    For the lamb chops:
  1. Clean and trim the fat from the chops.
  2. Lay the chops on a nonstick or sprayed sheet pan.
  3. Season each side with salt and pepper.
  4. Drizzle olive oil over the chops.
  5. Broil for 7 minutes.
  6. Flip them, then broil the other side for 7 minutes.
  7. While broiling, create your fresh herb mixture: Mix all chopped herbs, garlic and olive oil together in a bowl.
  8. Season with salt and pepper to taste.
  9. Finally, take lamb chops out of oven and spread herb mixture on each lamb chop, or provide it in dipping bowl for serving.

When I think spring, my mind automatically goes to Easter, one of my absolute favorite holidays to celebrate.  I love setting the table for an Easter dinner with family and friends, and find myself looking for ways to always incorporate those sweet pastel tones, floral anything-and-everything, and all around spring feels onto the table. 

Like any styled table, this year’s Easter tablescape leans on my secret trick of layering, layering, and more layering.  I don’t believe that you have to have a different place setting for each and every holiday or turn of the season.  I mean who has the space?! What I love doing is leaning on my everyday place settings and switching out the salad, appetizer, or soup bowls to match whatever we’re celebrating.  That’s where the fun pattern play always comes in; varieties in colors and designs of your dinnerware can create just the bright, joyous effect you’re hoping to achieve this time of year.  

For example, I started with my traditional, everyday blue and white Sophia dinnerware and serving pieces from Pottery Barn and mixed in these playful  holiday Bunny Bowls, and classic check napkins that can be used all year long.  Along with the place settings I added in plenty of Easter details like bunnies and baskets full of festive candies, and Majolica bird salt and pepper shakers and serving set.  

You’ll also spot some usual suspects on the table: gold flatware, festive drinking goblets, statement Sophia serving pieces and fresh blooms in the form of pink parrot tulips and green hydrangea.  I had fun incorporating the small Easter details too; I added egg cups and small baskets with speckled chocolate eggs to each place setting, and of course candies from Williams Sonoma around the table.  The end result, a home run look that didn’t cost me an arm and a leg.

And because it’s not quite Easter without sweet treats, I ordered these gorgeous, drool-worthy cakes from Sugaree’s Bakery.  Thanks to The Southern C Summit, I recently discovered this small batch bakery that’s based out of Albany, Mississippi, and I immediately fell for the classic, not fussy flavors (I will love strawberry cake forever and ever).  

While I know what you’re probably thinking; there’s no way these cakes could be shipped to me in Atlanta in one piece!  I mean who even takes the risk to get strawberry cake delivered?!  But alas, each cake arrived perfectly which even I’ll admit was a bit shocking.  Sugaree’s knows what they’re doing because while the cakes did arrive frozen, they don’t freeze them long; the flavors are fresh and vibrant and OH SO GOOD.  Not to gush or anything, but the cakes were so light, fluffy and moist that I couldn’t believe they came all the way from Mississippi.  While I was lucky enough to sample all of the flavors, I would have to say the coconut, strawberry and caramel were my favorite…all of them were so large, well priced, and absolutely divine.  So to answer the previous question, I say heck yes to  getting a caramel and strawberry cake delivered!

Along with the cakes, for the food I decided to try my hand at garlic garlic and herb rubbed lamb chops, fresh asparagus, baby potatoes, and my mother’s favorite spinach salad with mandarin oranges and warm bacon vinaigrette.  I’ll be sharing all the recipes tomorrow, but it was the perfect meal and table to welcome spring and celebrate Easter. Truly, MKR

I’m always intrigued by the latest-and-greatest beauty gadget like the rest.  Give me something that will address my laugh lines, hide those Crow’s Feet and give me that goddess glow and I’m all in.  So you can understand how excited I was to recently try the Conture Skin Toning System.  I was able to get a first peek at the system before it launches today on QVC, 10 pm EST on The Find.  Like all good things that launch on QVC, it will probably sell out quickly, plus with this package price, you’ll enjoy months of treatment rather than one trip to the med spa.

So what is it?  And what does it DO?!  The Conture Skin Toning System is a non-invasive (read: no harsh or scary procedures) device that helps fight signs of aging, while improving your skin’s texture and radiance.  And it didn’t take me long to realize that the magic behind Conture’s Kinetic Skin Toning System is definitely all in its low-frequency vibrations that it sends through your skin.  When I was using it, I could definitely feel it working…almost like a super soft suction all over my face and neck.  Think med-spa style; the Conture Skin Toning Device uses their gentle vacuum technology to first lift the skin, then release the vibrations to stimulate and tone.  

If you’re reading this and you’re as intrigued as I was when I learned about it, get this: Conture has clocked over 250,000 hours of clinical research that backs its claims of the increase in radiance, evenness and firmness.  I was completely hooked when I learned this, hence why I was so quick to give the device a whirl and gush about it on here.

But I think you’ll find that this device and product line is definitely worthy of adding to your skincare routine.  Since the goal is to improve and maintain your toned skin, you’ll get the best results by using a great day cream and night cream after using the device, and being consistent with actually using it all.  I’ve tried the Kinetic AM Ignition Lotion and Kinetic PM Recovery Crème which both feel great, but you can also use your own favorite lotion if you’ve got one that you love.
