You must be living under a rock if you haven’t heard about Nashville’s beloved hot chicken.  As I’m told by our own Nashvillian Kat, WOM’s Editorial Director, you cannot visit the city without getting a taste of this ultra hot chicken, and you can find different variations with a cult-like following around town at restaurants and food trucks alike.  It’s safe to say that it’s a Nashville specialty that’s quickly spreading around the entire South, too.  We’re even getting our very own Hattie B’s in Atlanta in 2018! 

What does Nashville Hot Chicken taste like?!  Heaven.  Nashville hot chicken is fried chicken, breaded and completely coated with cayenne and other spices.  It’s clasically served with white bread and pickles, as it’s sure to make your nose run and heart beat quicken…it’s that hot.  But it’s not like buffalo hot, or sriracha its a totally different hot.  

By now you know that  love getting creative with my nachos—some with sweet potatoes, some with jambalaya and some even for breakfast.  And these hot chicken-inspired nachos with pickles and purple cabbage slaw may be my favorite variation yet!  

Here, I was inspired to take the winning combination of flavors and put my own little spin on them by turning them into nacho form.  This is not the full fledged Nashville hot chicken as it’s not fried and breaded because I felt that with the chips the breading would be overkill, but it definitely hits the spot with the hot-and-cool-and-crunchy effect.

Nashville Hot Chicken Inspired Nachos

Ingredients
  1. 4 6oz chicken breast halves
  2. 1 cup Alabama White Sauce
  3. 1 cup Hot Buffalo Sauce
  4. 2 cups monterey jack cheese
  5. Tortilla chips
For the Dry Rub
  1. 2 1/2 tablespoons paprika
  2. 2 tablespoons garlic powder
  3. 1 tablespoon salt
  4. 1 tablespoon onion powder
  5. 1 tablespoon dried thyme
  6. 1 tablespoon ground cayenne pepper
  7. 1 tablespoon ground black pepper
  8. 1/2 head purple cabbage, cut into slices
Instructions
  1. Preheat oven to 450 degrees
  2. Mix together the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper.
  3. Place chicken breasts in a plastic bag with seasoning mixture for at least 20 minutes to marinate.
  4. Heat a large skillet over medium-high heat with cooking spray or oil.
  5. Add chicken to skillet, sprinkling with salt.
  6. Sauté 6 minutes on each side or until done.
  7. Brush buffalo sauce over chicken. Set aside.
  8. Pull apart chicken into strips or preferred pieces.
  9. While chicken is cooling, arrange tortilla chips onto sheet pan evenly.
  10. Add a layer of chicken, cheese, pickles, cabbage, and bake until cheese is melted. Remove and top with Alabama white sauce and serve.

5 Truths About Waiting On Martha

On Tuesday of this week I was tagged by the oh-so fabulous Mary of M.A.S. in her “5 Things” post.  The idea being to share 5 personal truths about yourself and then tag 5 others to do the same.  Here’s the thing, I never write personal posts on the blog.  Like never.  But I’m not one to turn down a challenge, so just for today we’re getting personal with 5 truths…

ONE || I believe there is no problem a good bottle of wine and your girlfriends can’t solve.  And I am so grateful to have the absolute best group of girlfriends to do just that with.  These ladies are my sisters (YA-YA)!  One I’ve known my whole life, one I suffered through two years of  law school just to meet, and the others I experienced college and so much after that with.  We’ve lived in the same house, the same high rise, across state lines, and even continents.  We’ve suffered broken hearts, celebrated marriages, had babies, dealt with loss, and anything else the universe could and will throw at us.  They know exactly who I am (and love me anyway), and I truly wouldn’t be me without them.  The photo above is from a trip some of us took to the Cape last fall and it makes my heart happy.

TWO || I’ve been hesitant about sharing my faith on my blog.  To be fair I very rarely share anything too personal on the blog, but I’ve been especially hesitant about sharing my faith, values, beliefs, etc, and it’s really been weighing on me.  Why not share?  Well for one people are mean and the internet seems to have bred what I think of as a brave-coward.  Someone who will post something awful on a blog or via social media, but would never actually say that same thing to your face.  And second religion is a very touchy, very personal subject.  A subject not everyone agrees on, one not everyone believes in.  But I had an “ah-ha” moment when emailing with Lara Casey this week; I can’t keep who I am out of my business.  And who I am first and foremost is a Christian.  I’m sure some people won’t agree and some people will roll their eyes every time I say blessed or if I quote scripture on Instagram but that’s their problem, not mine.  Faith and belief are the most powerful things we have as humans.  I don’t care if you believe in the Bible, the Torah, The Book of Morman or whatever , it’s not my place to judge.  Just believe in something.  In the words of the great country song by Aaron Tippin “you’ve got to stand for something or you’ll fall for anything.”

THREE ||  I hate getting ready.  Like hate times infinity.  When you see me on the blog I look like THIS .  But on an everyday basis I look nothing like that.  Nothing.  I work from home most days which means I don’t dry my hair, I don’t wear makeup, and practically live in black leggings and a sweatshirt.  Getting ready takes a lot of effort and a lot of time.  Who’s got time for all that?  Not this gal.

FOUR ||  If one more person asks me when we’re going to have children I might scream.  I know there is no ill will in the asking, but seriously  it never ends.  When you’re single it’s “why don’t you have a boyfriend”, then it’s “when are you going to get married”, and now it’s “when are you going to have children?”  Well the answer is…who knows!!??  I’m not worried about my “biological clock” (a word I also loathe), or “what-ifs”, and “you’re not getting any younger” statements.  I’m loving life right now and our perfect family of three (obviously the third is this little gem).  So that is that, and p.s. no one likes any of those questions ever, like ever.

FIVE ||  I married up.  Not “up” in the sense of wealth and power and all that jazz, but “up” in the sense of a person.  I’m not exactly the warm and fuzzy type.  In fact I’m sure his jaw is dropping at this very moment if he’s reading this and I will in turn deny that I ever wrote it.  And it’s not like the Mr. doesn’t have his faults, because trust me he does.  But the truth remains, my husband is a better person than I.  He is the most pure of heart individual I know and he makes me the best version of myself everyday.  Marriage is work.  It’s the best kind of work if you have the right partner, but nonetheless it’s work.  Anthony keeps me on my path and he keeps us pursuing our path together.  And man it’s been fun so far.  It also doesn’t hurt that he’s an excellent gift giver.

I’m sure you saw that we had quite the adventure in Louisiana a few weeks ago.  We teamed up with Atlanta Food & Wine Festival and Louisiana Travel on a 3-day road trip to get a taste of the best Louisiana food and drink.  Last week, we shared our recap of Baton Rouge and Lafayette and today we’re all hungry again reminiscing over our stop in New Orleans.  

We kicked off the 3-day trip with a bang in NOLA, hurricane in-hand the second we stepped off the plane.  First stop, NOLA Distillery. Opened just last month, we were lucky enough to get a little behind-the-scenes tour and tasting.  We all loved the craft vodka made from only Louisiana-grown sweet potatoes (the state is known to be the home of the best sweet potatoes, FYI).   We saw first-hand how NOLA’s vodka is distilled twice and filtered, giving it a hint of sweetness and a touch of earthy flavor.  The vodka went perfectly in what the team joked as their “Kale-Gate” cocktail (more on that backstory here) and their take on a Cosmopolitan.  

After we sipped a few cocktails and talked plans for the tasting room (opening soon) with the lovely NOLA team, we scooted over to St. James Cheese Company.  This local shop would definitely become my go-to for an easy lunch with the girls; think cheeses on cheeses, wines and drool-worthy sandwiches.  We were thrilled to have the queen of cheese herself, Liz Thorpe, with us to introduce us to some pretty fantastic pairings with our wine.  Liz published The Cheese Chronicles back in 2009, and her immense knowledge about the many variations of cheese was downright inspirational.  Her newest book, The Book of Cheese, breaks down cheese into nine “gateways” of flavor, rather than by country, milk type, etc.  Her take on enjoying cheese, finding flavors and kinds you love, and understanding the wide varieties in this unique way is refreshing.  It’s approachable.  And with over 400 pages in The Book of Cheese, there’s something for everyone.  Seriously cannot wait to get our hands on this “cheese bible”

We could have stopped there; bellies and hearts SO full.  But alas, we were in New Orleans, and there was more goodness to taste.  Next up: Willa Jean.  And oh, let me tell you: Willa Jean is an absolute MUST when you’re in NOLA.  This contemporary bakery was opened by Chef John Besh, Chef Kelly Fields and Chef Lisa White in the Central Business District, and it celebrates the best of the best Southern comfort food with fresh, local ingredients.  We loved chatting with Chef Kelly Fields; she was incredibly welcoming, hilarious and to say that she blew us away with her cornbread, frosé and homemade chocolate chip cookies (a recipe that includes 5 different kinds of chocolate and one she took two years perfecting!) is an understatement.  COME HERE with your girlfriends for a boozy brunch on your next trip; you won’t regret it. 

Next, (no we’re not done yet), we downed a quick dozen raw oysters with wine at Borgne, another gem by Chef John Besh and Chef Brian Landry.  Borgne is known to be one of the best spots for fresh seafood in the area, and it did not disappoint.  Its menu is a true celebration of Louisiana coastal fare, with everything from Oysters on the Half Shell to Pan Roasted Lemonfish with brown butter turnips and Shrimp Toast with pork belly and sweet chili sambal.  Its ultra cool, modern vibe in the bottom of the Hyatt makes it a hotspot (and easy locale in the Central Business District) for visitors and locals alike.  

It was a big day, but we (somehow?!?) left room for dinner at Balise.   Balise, manned by 2016 James Beard winner Chef Justin Devillier (also with La Petit Grocery), was named after the first French settlement at the mouth of the Mississippi River.  And the place is clearly steeped in its history; located in a 19th century Creole townhouse that’s expertly decorated, and irresistibly intimate in its ambiance. On our prix fixe menu, we enjoyed fare like Fried smoked oysters, chilled Roasted Beets with Lemon, Mint and Brown Butter, Roasted Lamb Shoulder, Pan Roasted Gulf Shrimp and Chicken & Ricotta Dumplings…I mean my mouth is watering just recounting it here now.  And to top it all off, Walnut Cake, Apple Crisp and Sticky Toffee Pudding (the table’s favorite).  

Lastly, we (somehow) made it to Cane & Table because who could say no to Hurricanes.  Located in the heart of The French Quarter, Cane & Table is a gem of a restaurant and bar where Chef & Mixologist Nick Detrich mixes up the best hurricanes I’ve ever had.  Truthfully, when I looked at our itinerary and hurricanes where on the menu I wasn’t impressed, but that’s because I was used to the cheesy spring break, overally sugared hurricanes in neon plastic cups.  Chef Nick sticks to the original recipe; refreshing, crisp, and goes down like water Hurricane. Cane & Table deservedly tops the list for where to drink in town, being featured on Vogue and The New York Times.  The vibe here was second-to-none (string lights out back, drippy candles and palms), and the company was even better.  Nick was the warmest guy, welcoming us into his tiki-inspired world and teaching us a bit of history along the way. 

After that whirlwind of the day I rolled myself into bed and woke up the next morning still full from one of the best days I’ve had in awhile.  A big thank you to all of the chefs for welcoming us into their worlds, and make sure to check out the entire photo gallery below!  Truly, MKR
