I love a good caesar salad.  The sad thing is nothing on a classic caesar salad is relatively healthy.  So I tried to fuss with the standard recipe a bit to make it a more on the healthy side.  And this amped up jerk chicken caesar salad with cherry tomatoes, fresh avocado and croutons hits the spot. 

I’ve come to find that I really prefer my chicken, or any proteins on my salads to be warm.  That’s where the grilling comes in; you know I love grilling on our Big Green Egg.  But since I was making this salad for lunch, I simply used my Le Creuset cast iron griddle on my stovetop.  

When cooking or grilling chicken it can be tricky; you can’t have it pink and you don’t want it dry either.  So my trick here is to use a grill press like this one under $30 that applies pressure on the meat to help it cook evenly throughout.  I use my grill press for burgers, sausage links, bacon, you name it…and it always proves to be a great thing to have.  

For my jerk chicken caesar salad I season the chicken quite liberally with a jerk dry rub.  Then I get the griddle, sprayed with organic high heat non stick, to as hot as it can get.  I place the chicken on the griddle and use my grill press to press down.  I grill each side for about 3 minutes or until the grill marks are pressed in and the outside is just a tad on the crisp side.  Then I turn the heat down to a medium low or low, and continue to cook the chicken through.

Lastly, I rely on a meat thermometer that tells me when the chicken is five degrees under being done—at 160 degrees—and I pull it out to let it rest.  Like all meats, the chicken will continue to cook after it’s removed from the heat, so I give it a five degree window.

The rest of my jerk chicken caesar salad is easy breezy to pull together.  In this recipe, I use both iceberg lettuce and a romaine blend; I know iceberg doesn’t bring a whole lot of nutritional value to the table, but I do like the texture and the cold crunch that comes with it.  I roughly chop both types of lettuce, and combined them together to form the base of the salad.  Next, I add lines of fresh avocado, jerk seasoned chicken cut into thin strips, halved cherry tomatoes and garlicky croutons.  

My philosophy, when it comes to croutons, is that if you’re going to waste the calories then go big and get a great crouton. I love picking up the garlic and olive oil ones from Whole Foods if I’m tight on time, like I did here today, but if I ever have a French bread baguette in the house, I rough chop it and drizzle olive oil, garlic and salt on it then pop it in the toaster oven till it turns a golden brown.  Homemade croutons are surprisingly SO easy to make, and they last a really long time once they’re cooked and sealed in an airtight container. Jerk Chicken Caeser Salad with Cherry Tomatoes & Fresh Avocado

Ingredients

  • 2-3 chicken breasts
  • jerk chicken rub seasoning
  • 1 bag iceberg lettuce, roughly chopped
  • 1 bag romaine lettuce blend, roughly chopped
  • 1 pint cherry tomatoes, halved
  • 2 avocados, roughly chopped
  • Croutons, optional
  • Grated parmesan, optional

Instructions

  1. Cut chicken breasts in small strips.
  2. Season chicken with jerk seasoning/rub.
  3. Spray grill pan liberally with a high-heat spray.
  4. Heat grilling pan on high heat; getting it super hot.
  5. Put chicken on grill pan and and apply the grill press on top, about 2-3 minutes per side.
  6. Once a side is crispy, flip to the other side; grill each side twice.
  7. Turn down the heat to medium-low. Test the thickest part of the chicken with a meat thermometer; it should be around 160 degrees.
  8. Turn stovetop off, and let chicken rest. It will continue to cook for at 5 more degrees. No pink should be seen.
  9. Compile the rest of the ingredients in a salad bowl or on a platter.

It’s that time of year friends; I always find myself craving the hearty warmth of a bowl of chili come January.  But with the new year’s goals to refresh, recharge and renew, I’m leaning towards a healthy, vegetarian (and vegan) option to satisfy those cravings.  Enter my Vegetarian Chili Stuffed Sweet Potatoes…each bite is just as as comforting as it sounds. 

Like nachos (you know I love my nachos as seen here, here and here), stuffed sweet potatoes offer a plethora of options for loading and stacking and filling.  Here, I used a mixture of three types of beans (pinto, kidney and black beans) to make up the base of the chili.  Next, I added white onion, green onion, garlic, a few jalapenos and all the spices to give it enough heat, and just a bit of corn to give it that sweet.  See, I’m such a sucker for the culmination of the sweetness of the sweet potatoes with the spice of the cayenne, paprika and cumin.  It’s the perfect counterbalance that has me going back for more and more. And with plenty of protein and fiber packed in each bite, I can happily say it’s an incredibly filling and healthy dish.  Enjoy!  Truly, MKR

Ingredients
  1. 4 large sweet potatoes, baked
  2. 2 tablespoons olive oil
  3. 1 large white onion, diced
  4. 1 large red pepper, seeded and chopped
  5. 1 large green pepper, seeded and chopped
  6. 1 large jalapeno pepper, seeded and chopped
  7. 6 cloves garlic, crushed and chopped
  8. 2 cup vegetable broth
  9. 1 32- ounce can crushed tomatoes
  10. 1 tablespoon tomato paste
  11. 1 can black beans
  12. 1 can dark red kidney beans
  13. 1 can pinto beans
  14. 1 cup roasted corn
  15. 1 tablespoon ground cumin
  16. 2 tablespoons chili powder
  17. 1 tablespoon cayenne
  18. 1 teaspoon coarse salt
  19. Toppings: chopped green onion, white onion, cilantro, sour cream (optional)
Instructions
  1. Bake your sweet potatoes in the oven (400 degrees) until full cooked. 20-40 minutes depending on size. I like to wrap my sweet potatoes in tin foil and prick with a fork to allow for faster cooking.
  2. While sweet potatoes are cooking begin your chili. Over medium heat, add oil to a deep pot or dutch oven and add garlic, onion, peppers, and jalepeno. Saute 5 minutes to soften vegetables. Next add vegetable broth, tomatoes, black beans, red kidney beans, pinto beans, and corn; stirring to combine.
  3. Season chili with cumin, chili powder, cayenne, and salt. Thicken chili by stirring in tomato paste. Simmer over low heat about 10 minutes. Place sweet potatoes in a large casserole dish and split. Scoop chili over each potato and garnish with toppings. Enjoy!

{MUST Eat} Alon’s Bakery & Market

I think we’ve had this discussion before so excuse the repetitiveness, but the BEST thing about moving to a new city is discovering all of the new food!  And last week my journey continued when I had the pleasure of attending a tasting at Alon’s Bakery and Market in Dunwoody.

Alon’s has been an Atlanta staple for 20 years delighting customers with a plethora of sweet treats, baked goods, wine, foodie gifts and so much more.  But Alon just installed a wood burning pizza oven that cranks out 11 different pies from scratch.  So what better way to break it in than to throw a little party.

The pies were nothing short of fantastic.  With classics like Margherita combining crushed tomato, fresh mozzarella, basil, and basil infused olive oil to the unexpected like anchovies with fried capers.  There’s literally a pie to please every discerning (or not so discerning) taste bud.  Shockingly my two favorites couldn’t have been more opposite; the habenero olive oil with Italian tuna and the Taleggio with fig balsamic, truffled honey and marcona almonds.  The Taleggio would be perfection paired with some good wine.

So yes, Alon’s will be making it on to my Atlanta MUST Eat list, and Alon can plan on seeing a lot of me in the near future.  A lot.  On a side note, sorry to all of you loves that don’t live in Atlanta, but as a takeaway we can all appreciate to always try new things.  Had I not, I wouldn’t have found my 2 fav new pizzas!  xoxo
