I’ve never really been a salad person. Which is strange because I typically like everything that’s on a salad, just not a salad itself if that makes sense. It’s probably because the ratios are usually wrong to me. 

You see, I’m always looking for that perfect bite.  A bite that includes a little bit of warm, cold, crunchiness, softness, spice, and sweetness.  And that perfect bite is what I set out to create whenever I’m trying to transform any salad.

Today’s transformation is your classic cobb to the most flavorful shrimp cobb salad. I subbed out your standard (often bland) chicken for warm citrus grilled shrimp.  Chives for red onion and roquefort cheese for an herbed crumbled goat cheese. And lastly, instead of a red wine vinaigrette I played up the citrus from the shrimp with a cilantro and lime dressing.

Ingredients
  1. Mixed romaine and iceburg lettuce, chopped
  2. 6 pieces of bacon, cooked and broken into pieces
  3. 1 small red onion, finely diced
  4. 2 avocados, diced
  5. 1 pound shrimp, peeled and deveined, tails left on
  6. 1 pint cherry tomatoes, halved
  7. 1 cup crumbled herbed goat cheese
  8. 1 lime, juiced
  9. 1 lemon, juiced
  10. 2 tablespoons fresh cilantro finely chopped
  11. 1 tsp. olive oil
  12. 1/2 tsp. cayenne pepper
  13. salt and pepper to taste
  14. dressing of your choice (I suggest a light citrus dressing)
Instructions
  1. In a sauté pan heat olive oil over medium heat. Add shrimp, lemon and lime juice, cilantro, cayenne, and a pinch of salt and pepper. Cook until done; approximately 2-3 minutes each side. Once cooked, set aside.
  2. Build your salad: lettuce, avocado, bacon, onions, cheese, tomatoes, and shrimp.
  3. Serve with dressing and enjoy!

One of my favorite, easier than easy, sides to make is sheet pan brussel sprouts.  The problem, they can get a bit boring.  So recently while looking at all of my holiday meal prep ingredients I thought lets just give this combo a whirl; brussel sprouts, butternut squash, pecans, and cranberries.  And to my delight and surprise it turned out amazing.  

The caramelized brussel sprouts pair perfectly with the sweet, cinnamon and tumeric butternut squash.  While the cranberries give it just that right amount of tart, and the pecans the crunch I’m always looking for.  Plus you still have my favorite aspect of sheet pan brussel sprouts at play; the easy clean up.

Ingredients
  1. 1-2 bags of brussel sprouts, halved
  2. 2 cups of pecans
  3. 4 cups of butternut squash, cubed
  4. 4 cups of cranberries
  5. 4 tabelspoons sugar
  6. 1/4 cup orange juice
  7. 1 tabelspoon cinnamon
  8. 1 teaspoon tumeric
  9. 1 teaspoon cayenne pepper
  10. 1 teaspoon salt
  11. olive oil
Instructions
  1. Preheat the oven to 400 degrees
  2. Line a large sheet pan with parchment paper or spray down with non stick spray.
  3. Add brussels and squash to the sheet pan, lightly cover with olive oil, then sprinkle tumeric, cayenne, salt, and cinnamon. Mix together so everything is well seasoned and covered. Place in oven and cook/roast for 15 minutes.
  4. While the veggies are roasting add cranberries, sugar and OJ to a pan on high heat. Cook until a few cranberries begin to burst, but before it turns into a sauce. Cover and remove from heat.
  5. After 15 minutes, remove sheet pan from the oven, add pecans and mix lightly again. Re season if needed.
  6. Roast an additional 15 minutes or until squash is softened and brussels have begun to brown and properly caramlize. Once cooked, remove from oven and add in cranberry mixture and serve.

When I began eating meat again one of the first dishes I made was pork chops.  For me, there’s just something so nostalgic and comforting about pork chops. And while I always like a good chop, I find myself craving that classic apple-pork combo the second the temps drop.

It’s also an added bonus that pan fried pork chops are one of the simplest meats to make on your stovetop.  I feel a lot of people shy away from them because they tend to over cook pork and all the applesauce in the world won’t save an over-cooked chop.  The key is to get your skillet blazing hot with a little butter then sear each side to create that nice caramelized pan fry.  Once you’ve accomplished that turn your heat down to low or add the chops to the oven.  Pulling them out, or removing them from the heat, at about 150 degrees and letting them rest for a few minutes. The chops will continue to cook, but you won’t have to worry about them being over-done.

Anyway, now that we talked about why you should be cooking pork chops lets talk about today’s recipe; pan fried apple pork chops with root vegetables and potatoes.  Recently, when faced with a plethora of leftover apples from another recipe I thought why not mix up my classic pork chop recipe by pan frying the chops with the apples rather than using the apples as a topper or after thought. And oh my goodness…the flavor! The apples, garlic and onions completely infused my chops with the most delicious, tart yet sweet goodness. 

Combine the flavor of the pan fried apple pork chops with seasonal root vegetables plus potatoes all in one skillet and you have yourself an easy, one-skillet, weeknight meal you’ll be making over and over again.  Plus doesn’t it look impressive? Pan Fried Apple Pork Chops with Root Vegetables & Potatoes

Ingredients
  1. 4-6 bone in organic pork chops
  2. 6-8 smaller red potatoes, halved
  3. 2 red onions, quartered
  4. 6-8 cloves of garlic smashed
  5. 1 large granny smith apple sliced
  6. 6-10 orange & purple carrots, cleaned
  7. 6-8 turnips, halved
  8. 1 large celery root quartered
  9. 2-3 sprigs of fresh rosemary
  10. parsley for garnish (optional)
  11. olive oil
  12. 2-3 tablespoons butter
  13. 1 tablespoon apple cider vinegar
  14. salt & pepper to taste
Instructions
  1. Preheat the oven to 400. Salt and pepper pork chops, set aside.
  2. While the oven is preheating begin to heat a large cast iron skillet on the stovetop to high heat. Once hot, add 1 tablespoon butter, garlic, onion, and apple. Sauté 2-3 minutes.
  3. add another tablespoon of butter and add pork chops frying each side until brown, approximately 2-3 minutes each side. You're not cooking the pork chops through just browning the outside.
  4. Once browned remove from the skillet and set aside. Add all of the root vegetables, potatoes, and 2 sprigs of rosemary. Stir with onions, garlic and apples making sure nothing is sticking to the pan. If anything is add 1-2 tablespoons of olive oil and mix. Add salt and pepper and put skillet into the oven cooking vegetables until almost done, approximately 15-20 minutes.
  5. 5 minutes before vegetables are done remove the skillet from the oven. Shift the veggies around to make room for the pork chops. Once situated take one more tablespoon of butter and divide it amongst the pork chops putting a bit on each. Add the apple cider vinegar to the skillet.
  6. Return the skillet to the oven and cook until pork is fully cooked through.
  7. Garnish with parsley and serve.
